ITALIAN SAUSAGE AND SPINACH CRESCENT CASSEROLE

Looking for something easy and impressive to serve at your next brunch? This Italian spin on a traditional strata, packed with sausage, spinach and Parmesan cheese, will certainly fit the bill.

2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
1 lb bulk mild Italian sausage
1 medium onion, chopped (1 cup)
2 cloves garlic, finely chopped
1/2 teaspoon crushed red pepper flakes
1 bag (5 oz) baby spinach
6 eggs
1 cup heavy whipping cream
3/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 375°F. Bake crescent rolls as directed on cans. Remove from cookie sheets to cooling rack. Cool completely, at least 30 minutes.
  • Meanwhile, in 12-inch nonstick skillet, cook sausage over medium-high heat 7 to 9 minutes or until no longer pink; drain. Reduce heat to medium. Add onion, garlic and pepper flakes; cook 3 to 5 minutes, stirring occasionally, until onions are softened. Add half of the spinach; cook and stir 1 to 2 minutes or until spinach has wilted. Repeat with remaining half of spinach.
  • Spray 13x9-inch (3-quart) baking dish with cooking spray. Cut or tear each cooled crescent roll into 3 pieces, and place in baking dish. Arrange sausage mixture over crescent pieces in baking dish.
  • In medium bowl, beat eggs, whipping cream, 1/2 cup of the Parmesan cheese, the salt and pepper. Pour over crescent pieces and sausage mixture in dish; carefully stir to distribute mixture and coat with egg mixture.
  • Sprinkle remaining 1/4 cup Parmesan cheese over top. Bake 25 to 30 minutes or until golden brown and knife inserted in center comes out clean. Let stand 10 minutes before serving.

1/4 pound bulk pork sausage
1/2 cup chopped onion
1/2 cup chopped celery
1 package (10 ounces) frozen chopped spinach, thawed and drained
1 egg, beaten
1/2 cup dry bread crumbs
1/4 cup shredded cheddar cheese
1/4 teaspoon salt
1 tablespoon grated Parmesan cheese

Steps:

  • In a small skillet, cook the sausage, onion and celery over medium heat until meat is no longer pink and vegetables are tender. Drain; remove from the heat. , Stir in the spinach, egg, crumbs, cheddar cheese and salt. Transfer to a greased shallow 1-qt. baking dish. Sprinkle with Parmesan cheese. Cover and bake at 350° for 20 minutes or until heated through.

1 pound Italian sausage
1 (8 ounce) can tomato sauce
2 (10 ounce) packages frozen chopped spinach, thawed and drained
2 cups cottage cheese
½ cup grated Parmesan cheese
1 egg, beaten
2 cups shredded mozzarella cheese

Steps:

  • Brown sausage in skillet over medium high heat. Drain fat from skillet and stir in tomato sauce. Set mixture aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the spinach, cottage cheese, Parmesan cheese and egg. Mix well and spread mixture in the bottom of a 9x13 inch baking dish. Spoon sausage mixture over spinach mixture and top with mozzarella cheese.
  • Bake in preheated oven for 40 minutes.

1 lb hot Italian turkey sausage
1 (9 ounce) box frozen spinach, cooked and drained
1/2 cup reduced-fat parmesan cheese
1/2 cup diced onion
1 minced garlic clove
1 (8 ounce) can refrigerated reduced-fat crescent rolls

Steps:

  • Heat oven to 375°F
  • In skillet, remove sausage from casings, mush down to little cubes, cook sausage over medium heat until entirely cooked, drain.
  • In large bowl, mix spinach, parmesan cheese, onions and garlic.
  • Add cooked sausage to mixture and stir.
  • Unroll dough into 1 large rectangle on greased cooking dish.
  • Spoon sausage mixture in 4-inch-wide strip lengthwise down center of rectangle.

1 pound bulk pork sausage
2 cups sliced fresh mushrooms
1 medium onion, chopped
2 garlic cloves, minced
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup shredded part-skim mozzarella cheese
4 ounces cream cheese, softened
1 cup half-and-half cream
1 tube (8 ounces) refrigerated crescent rolls

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage, mushrooms, onion and garlic over medium heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Drain., Add spinach, mozzarella cheese, cream cheese and cream to sausage mixture; cook and stir until blended. Transfer to a greased 13x9-in. baking dish., Unroll crescent dough into 1 long rectangle; press perforations to seal. Place over sausage mixture. Bake, covered, 10 minutes. This makes a wonderful weekend brunch! Although I have 4 cups listed for the hash browns, you can really use any amount you wish, just make certain that it covers the bottom of the baking dish, when I make this dish, 4 cups seems to be the right amount, but you can increase it to 5 or 6 six cups, and also you can use as much sausage meat as you want, for this casserole the exact amounts do not really matter, but do use only one can crescent rolls for a 13x9-inch dish. If you are using Italian sausages in place of breakfast sausages, remove the meat from the casings first before browning.

10 large eggs
1/3 cup half-and-half or 1/3 cup full-fat milk
salt and pepper
1 (8 ounce) can refrigerated crescent dinner rolls
1/4 cup grated parmesan cheese (or to taste)
1 lb small pork sausage (you can use more if desired, and Italian sausages can be replaced for the breakfast sausages)
4 cups frozen hash browns (can use more)
5 green onions, chopped (can use more)
1 small green bell pepper, seeded and chopped
1 small red bell pepper, seeded and chopped
3 cups grated cheddar cheese (or to taste)
1/2 teaspoon paprika (or to taste)
grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a skillet brown the pork sausages breaking up with a fork until browned and cooked; drain any fat and set aside.
  • In the same skillet add in some butter and fry the hashbrowns with green onions and both bell peppers until tender.
  • In a bowl whisk the eggs with 1/3 cup half and half, salt and pepper.
  • Unroll the crescent rolls (do not separate at the perforations).
  • Line the bottom of the baking dish with the crescent rolls stretching to fit at corners if necessary.
  • Sprinkle with about 1/4 cup Parmesan cheese on top of the dough.
  • Layer the cooked sausage over the dough.
  • Sprinkle the potato/green onion mixture on top of the sausage meat.
  • Then sprinkle the cheese over the potato/onion mixture.
  • Pour the eggs over top.
  • Lightly sprinkle paprika over the eggs.
  • Then sprinkle Parmesan cheese over the top.
  • Bake for about 45 minutes.
  • Delicious!
