SAUSAGE AND PEPPER SALAD



Sausage and Pepper Salad image

Sweet and spicy peppers mingle with fennel, shallots, and garlicky crostini for a hearty, satisfying salad.

Number Of Ingredients 13

2 hot Italian sausage links, meat removed from casings
4 sweet Italian sausage links, meat removed from casings
1 yellow pepper, cut in 1/2-inch strips
1 large shallot or 2 small, sliced crosswise
1/4 cup dry white wine
2 tablespoons extra-virgin olive oil
4 garlic cloves, smashed and peeled
5 slices ciabatta bread
1 head romaine lettuce, washed, well dried, and crisped in refrigerator, and chopped into 1 1/2-inch pieces
1 small fennel bulb, very thinly sliced
1 tablespoon white-wine vinegar
Salt and freshly ground black pepper
1/4 cup shaved Parmesan

Steps:

  • In large skillet, saute sausage meat. Using a metal spatula to break the pieces up, cook until it is golden brown and with some crispy bits, about 10 minutes. Remove from the pan to a paper towel-lined plate.
  • Add the peppers and shallots to the same pan. Saute to soften, about 5 minutes. Deglaze with the wine, cooking to reduce it to a slight glaze on the peppers. Place the pepper mixture on the plate on top of the sausage.
  • Add 1 tablespoon olive oil and the garlic to the pan. Let the garlic sizzle, and remove before it is brown. Add bread and cook to golden on one side, about 2 minutes. Drizzle the remaining olive oil over the up side of the bread, turn, and continue cooking until crisp.
  • Place the lettuce and fennel in a large bowl; add the sausage and pepper mixture. Drizzle over the vinegar, sprinkle with salt and a generous grind of black pepper. Toss well and serve in a large salad bowl topped with the shaved Parmesan and a crostini.

GRILLED SAUSAGE WITH PEPPERS, ONIONS, CORN AND TOMATO SALAD



Grilled Sausage with Peppers, Onions, Corn and Tomato Salad image

12 Italian sausage (medium hot)
3 large red peppers (cut in half and seeded)
2 medium onions (cut into 1/2 inch slices)
3 ears of corn
2 beefsteak tomatoes (cut into 1/2 inch pieces)
12 large basil leaves (chiffonade)
1/3 cup and 4 tablespoons extra virgin olive oil
Kosher salt to taste
Freshly ground black pepper to taste
4 tablespoons balsamic vinegar
1 large clove of garlic (chopped)
Crusty Italian bread, for serving

Steps:

  • Prepare a medium fire and place the grill 6 inches above the coals. Place the 4 tablespoons of oil in a bowl and mix in the chopped garlic. Brush the peppers, onions, and corn with oil and season with salt and pepper. Place the peppers on the grill (cut side down) and cook for about 4-5 minutes. Turn on the grill for an additional 2 minutes. Be careful the skin does not become too charred. Remove the peppers and julienne. Place the onions on the grill and cook for 3 minutes on each side. Remove from the grill and chop into 1/2 inch pieces. Place the corn on the grill and cook for 1 minute. Rotate the corn and continue to grill (it should take about 3 minutes to cook on all sides). Remove from the grill and remove the kernels from the cob with a knife. Place the sausage on the grill and cook for about 4 minutes on each side. Sausages should cook in about 6-8 minutes. Place the julienne peppers, chopped onions, corn kernels, and chopped tomatoes in a bowl. Add basil, remaining olive oil and vinegar and toss. Season with salt and pepper. Divide salad into six plates and place two sausages on each plate. Serve with crusty Italian bread.

3 tablespoons extra-virgin olive oil
1 1/2 pounds sausages (spicy Italian, mild Italian, plant-based, etc.)
2 orange bell peppers, seeded and sliced
2 red bell peppers, seeded and sliced
2 yellow bell peppers, seeded and sliced
2 white onions, halved and sliced
Kosher salt and freshly ground black pepper
4 cloves garlic, sliced
1 tablespoon apple cider vinegar
2 tablespoons chopped fresh basil

Steps:

  • Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
  • Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they're very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they're getting too browned too quickly, add a splash of water to deglaze.
  • Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
  • Garnish with the basil and serve immediately.

12 fresh Italian sausages, hot or sweet (about 1- 3/4 to 2 pounds)
1 large Spanish onion, cut in halved, and cut into 1/4 inch slices
1 tablespoon tomato paste
2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 large yellow peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 poblano peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
4 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
6 crusty sandwich rolls, toasted

Steps:

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.

1 1/4 pounds lean Italian turkey sausage
2 tablespoons extra-virgin olive oil
3 assorted bell peppers, thinly sliced
1 bulb fennel, trimmed and chopped
1 large onion, cut into wedges
Kosher salt
3 cloves garlic, minced
1 teaspoon chopped fresh rosemary
1/2 teaspoon red pepper flakes
1/2 teaspoon fennel seeds (optional)
1 15-ounce can no-salt-added diced tomatoes
12 basil leaves, chopped, plus more for topping

Steps:

  • Preheat the broiler. Pierce the sausages all over with a fork, arrange on a baking sheet and broil, turning halfway through, until golden brown, about 8 minutes (they will not be fully cooked). Transfer to a cutting board and cut in half on the diagonal.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, fennel and onion and cook, stirring, until they soften slightly, 3 minutes. Add 1/2 teaspoon salt, the garlic, rosemary, red pepper flakes and fennel seeds. Cook, stirring, 1 more minute.
  • Stir in 1/2 cup water, the tomatoes and basil. Reduce the heat to medium; cover and cook until the vegetables are tender, 5 minutes. Uncover; add the sausages and cook through, 3 to 4 minutes. (Add a splash of water if the sauce gets too thick.) Top with more basil.

1 -2 lb sausage (about 8 links, we prefer sweet, you may use hot)
1 large sweet onion, sliced and chopped
1 large red pepper, sliced and chopped (or any other sweet pepper)
olive oil
salt
pepper
1 loaf Italian bread

Steps:

  • Heat approximately 1 tablespoon of olive oil in a large frying pan.
  • Brown the sausage in the oil until you get a nice color on the outside and you no longer see any"pink".
  • Remove the sausage and drain on a paper towel.
  • Keep the heat going on the pan and add onions and peppers (do not add any additional oil).
  • Cook the onions and peppers approximately 5 minutes or until onions start to become translucent.
  • During this time, slice the sausage down the middle, do not cut all the way through, just enough so you can open the sausage and"fan" them out.
  • Add salt and pepper over the onion/pepper mixture and turn heat down to simmer.
  • Place sausage on top of onions and peppers and cover.
  • Simmer for approximately 15 minutes or until sausage is cooked through.
  • Serve on Italian Bread.

2 cups mayonnaise
50 g cheese sauce mix
1/2 teaspoon cayenne pepper
water
salt and pepper
olive oil, for sauteeing
2 links Hungarian sausage with cheese
2 links frankfurters
1 large red bell pepper
1 large green bell pepper
2 cups iceberg lettuce, shredded
1 teaspoon fresh coarse ground black pepper

Steps:

  • In a bowl, combine mayonnaise, cheese powder, and cayenne pepper.Mix thoroughly.Adjust consistensy by adding water gradually.Season with salt and pepper and set aside.
  • Halve the sausages lengthwise and slice each half about 1/4 inch thick.Set aside.
  • Halve the bell peppers, remove the seeds and cut into 1/2 inch dice.
  • In a pan, heat olive oil.Saute the sliced sausages and bell peppers.Don't overcook the peppers;it should be crunchy yet tender. Remove from heat.
  • On a serving plate, arrange shredded lettuce and top with the sausages and peppers.Drizzle the dressing over and sprinkle fresh, coarse ground black pepper.Serve at once.
  • Tips: You can also use other sausage varieties like German Bratwurst, garlic sausages, Blood Sausage, or whatever variety you like the most.
