3 cups potato, peeled, diced
2 cups breakfast sausage, cooked
1 green bell pepper, diced
½ white onion, chopped
2 cups spinach
12 eggs
2 teaspoons garlic powder
salt, to taste
pepper, to taste
1 cup milk, or milk alternative
1 cup shredded cheddar cheese
salsa, to serve

Steps:

  • Layer the potatoes on the bottom of a greased slow cooker.
  • Add the sausage, green bell peppers, onion, and spinach.
  • In a large bowl or measuring cup whisk together the eggs, garlic powder, salt, pepper, and milk.
  • Pour egg mixture over the potatoes, sausage, and vegetables. Top with cheddar cheese.
  • Cover and cook on low for 6-8 hours
  • Carefully remove lid and serve filling on a tortilla and add salsa.
  • Enjoy!

Sausage and Egg Breakfast Tacos are a fun and easy breakfast recipe. These breakfast tacos are made in Old El Paso tortilla bowls and loaded with eggs, maple breakfast sausage, cheddar cheese, sweet bell peppers and bacon.

1 small yellow onion, diced
9 oz maple breakfast sausage precooked
8 eggs, large
1/2 tsp salt
1/2 tsp pepper
1 tsp onion powder
8 Old El Paso Tortilla Bowls
2 cups medium cheddar cheese, shredded
3/4 cups sweet bell pepper, diced
1/2 cup real bacon bits

Steps:

  • Preheat oven to 400F.
  • Heat a large frying pan on the stove over medium-high heat and add a dab of butter or margarine to the pan.
  • Chop the precooked sausages into bite size pieces.
  • Pour the diced onions and chopped sausages into the heat frying pan. Cook until the onions start to brown then reduce heat to medium.
  • Crack the eggs into a small mixing bowl and use a fork to beat them well.
  • Pour the beaten eggs into the frying pan and cook the egg stirring frequently and gently scraping the bottom of the pan.
  • While the eggs are cooking season them with the salt, pepper and onion powder.
  • Once the eggs are completely cooked, remove the pan from the heat.
  • Place the taco bowls on a greased baking sheet.
  • Spoon the egg and sausage mixture into the taco bowls.
  • Take one cup of the shredded cheese and sprinkle it over the eggs.
  • Sprinkle the diced bell peppers and bacon bits on top of the cheese.
  • Sprinkle the remaining cup of cheese over the peppers and bacon.
  • Place the baking sheet in the oven and bake the tacos until the shells start to brown. 8-10 minutes.
  • Serve and enjoy!

6 ounces chorizo sausage
8 (6 inch) corn tortillas
6 eggs
¼ cup milk
½ teaspoon pepper
½ teaspoon salt
1 cup shredded Monterey Jack cheese
1 dash hot pepper sauce (e.g. Tabasco™), or to taste
½ cup salsa

Steps:

  • Crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly brown. Set aside.
  • Heat one skillet over medium heat, and heat another skillet over high heat. The skillet over high heat is for warming tortillas. In a medium bowl, whisk together the eggs, milk, salt and pepper. Spray the medium heat skillet with some cooking spray, and pour in the eggs. Cook and stir until almost firm. Add the sausage, and continue cooking and stirring until firm.
  • Meanwhile, warm tortillas for about 45 seconds per side in the other skillet, so they are hot and crispy on the edges, but still pliable.
  • Sprinkle a little shredded cheese onto each tortilla while it is still hot. Top with some of the scrambled egg and sausage, then add hot pepper sauce and salsa to your liking.

2 12 oz sausage rolls, (Jimmy Dean™ hot)
12 eggs, (whisked)
1/2 cup onions, (chopped)
4 potatoes, (peeled, diced small)
1 tsp garlic salt
1 tsp pepper
1 cup Jack cheese, (grated)
1 cup Pepper Jack cheese, (grated)
12-18 corn tortillas
Vegetable oil
Optional: sour cream, diced avocados, chopped tomatoes

Steps:

  • In a large frying pan, cook sausage until there is no pink and cooked thoroughly. Drain grease and add sausage to a medium oven safe bowl. Place in 170° oven to keep warm.
  • In another frying pan, add about 1/4" of oil in bottom of pan. Heat over medium flame and once oil is hot, gently place potatoes and onions into pan. Sprinkle with garlic salt and pepper. Cook until potatoes are done and golden brown.
  • Fry up the corn tortillas and place on a plate lined with paper towels and place in the oven until ready to fill.
  • In the frying pan the sausage was cooked in, add eggs and scramble until done.
  • To assemble the breakfast tacos, add a spoonful of potatoes in the bottom of the tortilla, followed by sausage, Jack cheese, scrambled eggs, Pepper Jack cheese then top with sour cream, avocados and tomatoes.
  • Enjoy!

Keep your cream cheese cold so that it can be cut into small cubes. The exact amounts don't really matter for this recipe, you can adjust to taste. This is REALLY GOOD!!!!

1 small jalapeno pepper (seeded and finely chopped, or to taste)
2 green onions, finely chopped
1/4 cup whipping cream (or use 1/4 cup 18% table cream)

2 -3 tablespoons butter
4 ounces cream cheese (cut into small cubes)
6 (8 inch) flour tortillas
3 cups shredded old cheddar cheese (can use more or less)
1 lb pork sausage (casings removed, can use more or less)
2 green onions, chopped
sour cream (any amount desired)
prepared salsa (any amount desired)

Steps:

  • Cook the sausage meat with green onions in a skillet until browned; drain fat and transfer to a bowl; set aside.
  • In a bowl mix/whisk together the eggs with jalapeno pepper, whipping cream, salt and pepper.
  • Melt the butter in the same skillet over medium heat; add in the egg mixture; cook without stirring until the eggs begin to set on the bottom.
  • When the eggs start to set sprinkle the cream cheese cubes over the egg mixture.
  • Place a spatula across the bottom of the skillet to lift the eggs so that the uncooked will flow underneath; cook until eggs are set but not overcooked.
  • Divide and sprinkle about HALF of the shredded cheddar cheese onto each tortilla.
  • Divide and top with the egg mixture, then cooked sausage meat.
  • Then sprinkle with the remaining half of the grated cheddar cheese.
  • Fold tortillas over the filling.
  • If desired you can place the tortillas on a baking sheet, cover loosley with foil, then warm slightly in oven.
  • Serve with sour cream and salsa.
