SAUCY WINTER CASSEROLE

This is a recipe my Mom gave me years ago and have not really seen anything else like it. It uses a lot of ingredients one normally has on hand and have not met anybody who did not like. Fantastic for Potlucks - always gone - always better the second day! We usually eat in the summer so don't let the "Winter" part make you wait until the cold!

1/2 lb bacon, diced
1 medium onion, chopped
4 tablespoons Worcestershire sauce
1 cup dark corn syrup (recommend Karo)
3/4 teaspoon salt
1/4 teaspoon paprika
1/2 cup lemon juice
3/4 cup water
2 (14 1/4 ounce) cans chili (or use your own recipe, recommend with beans)
1 lb hot dog
1 tablespoon cornstarch
2 tablespoons water
1/2 lb shellroni pasta, cooked in salt water and drained

Steps:

  • In a large skillet, combine bacon and onion and fry until bacon is almost crisp and onion is soft. Drain excess fat- throw out or pour over your dog's dry food (made sure it has cooled before giving to your pet).
  • Stir in syrup, lemon juice, paprika, salt,Worcestershire sauce chili and water. Bring to a boil, reduce heat, cover and simmer for about 10 minutes.
  • Cut up hotdogs into bite size pieces, add to mixture and cook until hot and cooked through.
  • Add corn starch to 2 tablespoons water and immediately add to mixture. Boil one minute or until somewhat thickened.
  • Add shellroni, heat through - this should finish thickening - just make sure not too thick as it will continue to thicken upon standing.
  • Can eat immediately, or wait a day. Easily dived and frozen up to 3 months.

1 1/2 cups heavy cream
One 8-ounce container mascarpone
1/2 small onion, thinly sliced
2 cloves garlic, thinly sliced
Pinch freshly grated nutmeg
1 teaspoon smoked paprika
Zest of 1 lemon
Pinch kosher salt
Pinch freshly ground black pepper
2 bunches Tuscan kale, stemmed and torn into large pieces
2 small or 1 large bunch regular kale, stemmed and torn into large pieces
3 cups grated Gruyere
1/2 cup panko breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large Dutch oven, combine the cream, mascarpone, onion, garlic, nutmeg, smoked paprika, lemon zest, salt and pepper, then bring to a simmer over a medium-low heat, stirring as you go. Simmer gently until the onions and garlic are very soft, about 10 minutes.
  • Add all of the kale to the cream mixture, then cover and allow to wilt, about 3 minutes. Stir and cook until the greens are just wilted and coated in the cream mixture.
  • Transfer the greens mixture to a 10-inch cast-iron skillet and spread evenly. Top with the Gruyere and panko breadcrumbs. Place the skillet on a baking sheet and bake until bubbly and the cheese is melted, about 30 minutes.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 cups sour cream
3/4 cup dry white wine or chicken broth
1/2 medium onion, chopped
1 cup sliced fresh mushrooms
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 teaspoon pepper
6 boneless skinless chicken breast halves
Cooked noodles or rice
Minced fresh parsley

Steps:

  • In a 13x9-in. baking dish, combine the soups, sour cream, wine, onion, mushrooms and seasoning. Arrange chicken over top. , Bake, uncovered, at 350° for 1 hour or until chicken juices run clear. Serve over noodles or rice. Garnish with parsley.
