TUNA AND TOMATO SAUCE

- Cook 1 sliced shallot in 3 tablespoons olive oil in a large skillet over medium heat until softened, 4 minutes. Add 3 tablespoons capers; cook 1 minute. Add one 14-ounce can cherry tomatoes; cook, stirring, until the tomatoes burst, 5 minutes. Smash with a spatula, then stir in one 7-ounce can Italian oil-packed tuna, breaking it into chunks. Toss with 12 ounces cooked spaghetti and 3 tablespoons olive oil, adding up to 3/4 cup pasta-cooking water to loosen the sauce; season with salt and pepper.
SUNNY'S FRIED TUNA STICKS WITH WASABI MAYO SAUCE

- For the sauce: In a medium bowl, mix together the mayonnaise, honey, soy sauce, lemon zest and juice and wasabi. Taste--it should be salty, sweet and a bit tangy. Balance the seasoning if needed. Refrigerate.
- For the tuna: In a large bowl, mix together the tempura batter, cold seltzer and soy sauce. You want the batter to have a pancake-like consistency; you may not need all the seltzer. Set aside in the refrigerator.
- Slice the tuna against the grain into 3/4- to 1-inch-thick sticks. You should be able to make 4 to 5 sticks from each tuna steak. If using skewers (not needed), push one down the center of each. Dust each tuna stick all over with salt and pepper, then some flour. Transfer to a baking sheet lined with parchment paper and freeze for 30 minutes.
- Meanwhile, add enough oil to a pot to deep-fry the fish sticks and heat to 375 degrees F.
- When ready to fry, remove the batter from the refrigerator and the floured tuna from the freezer. Check all sides to make sure the flour is still dusty and not soaked in; sprinkle with flour again if needed, then dip into the batter and fry until golden, about 2 1/2 minutes. Remove and season immediately with everything bagel seasoning or a pinch of salt. Serve with the dipping sauce.
TUNA IN WHITE SAUCE
Canned Tuna or Chicken in a white sauce with peas, can be ladled over boiled or mashed potatoes, or served as a thick soup. The measurements are all guestimations, as I make it by eye.

- Put half the butter in sauce pan, and saute the celery and onion.
- Put in the potatoes, salt, peas and enough water to cover.
- Boil till potatoes are tender and liquid has reduced by 1/3rd.
- Drain tuna or chicken and add.
- When hot add enough milk to make a soup like consistency.
- Add pepper, and the last of the butter.
- Make a slurry by mixing the cornstarch and water. Pour slowly in and bring the heat up till nice and thick.
- You can mash some of the potatoes to make a thick soup, or serve like it is with toasted bread.

- Pour olive oil in a pre heated pan under low heat. Saute garlic, bell pepper, and tomatoes.
- Pour in the brine from the canned tuna. Simmer for 5 mins until tomatoes are very soft.
- Add the onion rings and simmer again for 5mins.
- Add the tuna then simmer for 3more minutes.
- Add salt to taste.

My Tuna Casserole recipe below is only one way to use this great "Creamy Sauce" recipe. It's simple to alter the ingredients just a little and create a great ham, or chicken casserole as well....

Steps:
- In a sauce pan combine cream of mushroom soup, milk, Velveeta, frozen peas, onion, and spices.
- Stir several times over medium/low heat until the cheese is melted.
- In a bowl combine tuna, mayonnaise, pasta and only 1/2 the sauce, then pour into a 9x13 lightly greased glass baking dish.
- Set the remaining 1/2 sauce aside covered with a lid.
- Quickly mix the melted butter and crackers and sprinkle evenly across the casserole.
- A sprinkle of Parmesan cheese on top is nice.
- Bake at 375°F for 20-30 minutes or until the topping is light toasty brown.
- Note: The extra sauce will be served re-heated in a separate bowl and used like a gravy spooned over the casserole servings.
- Serve with a nice green salad and enjoy.
