THIN-CUT CATFISH WITH SPILLWAY SAUCE



Thin-Cut Catfish with Spillway Sauce image

Oil, for frying
Three 6-ounce boneless, skinless catfish fillets
1 cup cornmeal
1 cup corn flour
1 tablespoon Cajun seasoning
2 large eggs
2 dashes hot sauce
Kosher salt and freshly ground black pepper
Spillway Sauce, recipe follows, for serving
1 cup mayonnaise
1/2 cup ketchup
1 tablespoon Cajun seasoning
1 1/2 teaspoons Worcestershire sauce

Steps:

  • Fill a large Dutch oven fitted with a deep-frying thermometer halfway with oil and heat to 360 degrees F. Line a sheet tray with paper towels and fit with a wire rack.
  • Unwrap the catfish and place on a parchment-lined quarter sheet tray. Place in the freezer for 15 minutes to chill and firm up.
  • Meanwhile, whisk together the cornmeal, corn flour and Cajun seasoning in a pie plate or casserole dish. In a second pie plate, beat together the eggs, hot sauce, some salt and pepper and 1/2 cup water.
  • Remove the fish from the freezer and use a boning knife to very carefully cut each fillet into thin pieces. (You should be able to get 4 to 5 pieces from each fillet.)
  • In batches, dredge the fish through the egg mixture and then through the cornmeal mixture, then add to the hot oil, being careful not to overcrowd. Fry, turning as needed, until crisp and golden brown, 2 to 3 minutes. Remove to the prepared wire rack. Repeat with the remaining catfish.
  • Serve the catfish with the Spillway Sauce on the side.
  • Mix together the mayonnaise, ketchup, Cajun seasoning and Worcestershire in a small bowl.

This spicy sauce goes nicely with the crispy fish which has a hint of curry (Indian influence). You will not be disappointed! If Fresh Lemongrass is not available use dried or fresh lemon juice.

4 farm-raised catfish fillets
2 tablespoons vegetable oil, to cover bottom of pan
1/2 tablespoon curry powder
1/2 tablespoon garlic powder
1/2 tablespoon crushed coriander seed
2 teaspoons salt
1/3 cup cornmeal
1/4 cup flour
2 teaspoons canola oil
3 ounces diced onions (1/2 cup)
1 piece fresh ginger, minced
2 cloves garlic, minced
1 stalk fresh lemongrass, finely sliced
5 teaspoons red curry paste, to taste
1 tablespoon brown sugar
1 tablespoon fish sauce (nam pla)
1 (14 ounce) can unsweetened coconut milk
3 basil leaves
1 lime, juice of
1/2 cup cashews

Steps:

  • Combine spices, salt, cornmeal, flour
  • Coat catfish with mixture
  • Let sit while making sauce
  • In a saucepan heat 2 teaspoons oil add and saute onions, ginger, garlic and lemon grass until soft
  • Add red curry paste and cook add brown sugar, fish sauce, coconut milk, basil and lime juice
  • Stir mixture
  • Place 1 cup of sauce mixture in a blender with cashews blending (carefully hot) well add back to pot
  • Cook over medium heat until thick about 5 minutes
  • Heat 2 tablespoons oil shaking off excess breading
  • Add catfish and fry until golden brown, about 3-4 minutes on each side depending on size
  • Remove and drain on paper towels
  • Salt fish
  • Serve with white rice
  • Placing the fish over the rice and topping with coconut sauce

2 (7 to 8-ounce) catfish fillets
2 ounces butter
4 ounces Worcestershire sauce
1/2 teaspoon finely chopped garlic
1/2 teaspoon jerk seasoning
1 teaspoon Dijon mustard
3/4 cup catsup
1 tablespoon balsamic vinegar
Salt and pepper to taste
1 tablespoon chopped parsley (for garnish)

Steps:

  • Season fish with salt and pepper. Place fish in an oval casserole dish. Melt butter in small saucepan. Add remaining ingredients and simmer about three minutes. Spoon sauce over fish and cook fish in 375 degree oven for about 10 to 12 minutes (or until done). Sprinkle with chopped parsley.

2 teaspoons salt
1/2 cup ketchup
1/2 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1/4 cup brown sugar
2 teaspoons apple cider vinegar
1/2 cup unsalted butter, room temperature
1/2 cup chopped sweet onion
1 lemon, sliced

Steps:

  • Preheat the oven to 300 degrees F.
  • Line a 9 by 13 by 2-inch casserole dish with aluminum foil.
  • Sprinkle the catfish with salt and arrange the fillets in the casserole dish.
  • Make the basting sauce by mixing the ketchup, mayonnaise, mustard, Worcestershire sauce, brown sugar, vinegar, butter, and onion.
  • Pour the sauce over the bass and bake until the fish flakes easily with a fork, about 20 to 25 minutes.
  • Baste the fish, with the sauce in the pan, every 10 minutes as it bakes. Remove the fish from the oven and using pancake turners, carefully transfer the fish to a serving platter. Garnish with lemon slices and serve.

2 ounces hot pepper sauce
1 1/2 cups strawberry preserves
1/2 cup red wine vinegar
1 tablespoon soy sauce
1/4 cup seafood cocktail sauce
2 cloves garlic, minced (or more to taste)
2 teaspoons horseradish
3/4 cup cornmeal
3/4 cup flour
1/2 cup safflower oil, or other vegetable oil
fresh strawberries, sliced
1 sprig parsley (or a bit of chopped basil)

Steps:

  • Place fillets in large shallow dish.
  • Season fish with salt, black pepper and hot pepper sauce; cover and refrigerate 1 hour to marinate.
  • When ready to cook the dish: in a small saucepan over low heat, combine the preserves, vinegar, soy sauce, cocktail sauce, garlic and horseradish; let simmer, stirring occasionally.
  • In a shallow dish, combine the cornmeal and flour.
  • Drain catfish and dredge in cornmeal mixture, coating on all sides.
  • In a heavy skillet over medium high temperature, heat the oil; when it is hot, add the dredged catfish fillets and fry, browning both sides. Drain the cooked fillets well on paper towels; keep warm.
  • Prepare to serve: get out the individual serving plates, then spoon 1/4 cup sauce on each and top with the catfish fillets.
  • Garnish with sliced strawberries and parsley (or a bit of chopped basil). Serve and enjoy!

1/2 teaspoon salt
1/2 teaspoon cajun seasoning
2/3 cup all-purpose flour
1 large egg
1/4 cup milk
1 3/4 lbs catfish fillets, cut in 1 1/2-inch pieces
1 1/2 cups Japanese-style bread crumbs (panko)
3/4 cup mayonnaise
1/4 cup spicy seafood cocktail sauce
2 teaspoons lemon juice
1/4 teaspoon ground red pepper
1/2 teaspoon Old Bay Seasoning (to taste)

Steps:

  • Combine the salt, Cajun seasoning and flour in a bowl.
  • In another bowl, whisk together the eggs and milk.
  • First dredge the fish in the flour, then dip in the eggs and finally dredge in the breadcrumbs.
  • Fry the catfish pieces in about 1/2" of oil heated to 375 degrees.
  • Fry about 2-3 minutes on each side, or until golden brown.
  • Drain and serve with the Spicy Dipping Sauce.
  • Spicy Dipping Sauce: Combine the mayonnaise, cocktail sauce, lemon juice, red pepper and Old Bay in a bowl.
  • Chill, covered, until ready to serve with the poppers.

I'm not real sure how I came about this recipe, but I think I was watching the Food Network and someone there was visiting BB King's place in Memphis, TN. I had to listen really hard and this is what I came up with. This sauce is to die for! We make it everytime I fry catfish and there is never any left over. We even use this recipe for our fish tacos. Serve with a nice cole slaw. YUM!

1 cup buttermilk
1 teaspoon paprika
1/2-1 teaspoon cayenne
1 teaspoon onion powder

1 cup yellow cornmeal
1/2 cup ranch dressing
1 tablespoon hot sauce
1 teaspoon chili powder
1 tablespoon lime juice

Steps:

  • Cut the catfish fillets into finger or nuggets.
  • Mix together the buttermilk, paprika, cayenne, onion, and garlic powder.
  • Mix together the flour and yellow cornmeal.
  • Dip the catfish into the buttermilk mixture and then dredge in the flour/cornmeal mixture.
  • Deep fry until golden.
  • Mix all Sauce ingredients (ranch dressing through lime juice) together and refrigerate. This sauce double very easy.

2 eggs
1 dash Worcestershire sauce
1 dash hot sauce
2 1/2 cups milk
1 cup yellow cornmeal
1/3 cup all-purpose flour

2 quarts peanut oil
3/4 cup Miracle Whip
1/2 cup mayonnaise
1/4 cup sweet pickle relish
1/4 cup green onion (finely chpped)

Steps:

  • Combine the eggs, Worcestershire, hot sauce, and milk together in a large bowl and beat it until frothy.
  • In a shallow dish large enough to contain the fish, whisk together the cornmeal, flour, salt, pepper, and lemon pepper.
  • With a small knife, score both sides of the catfish four times across, deeply, about 11/2 inches apart.
  • Dip the catfish into the egg wash, then dredge it completely with the cornmeal mixture, evenly coating the fish; set it aside.
  • In a large pot or deep fryer, heat the oil to 325 degrees. Add the fish-one at a time for whole fish (if using fillets, two at a time)-and cook 7-8 minutes, or until golden brown and crisp. Remove and place on paper towels to drain. Serve with scallions and Dickey sauce.
  • DICKEY SAUCE DIRECTIONS:.
  • In a medium bowl, fold together the Miracle Whip, mayonnaise, relish, onion, and lemon juice. Cover and refrigerate it until ready to use.
