I found this recipe years ago and immediately served it for a company dinner. It's easy and fun and takes only minutes to cook, but it makes a fancy entree for special occasions. The peanut butter and soy sauce lend a nice Asian flavor. -Lisa Mahon Fluegeman, Cincinnati, Ohio

4-1/2 teaspoons red wine vinegar
4-1/2 teaspoons reduced-sodium soy sauce
1 tablespoon sugar
1 tablespoon creamy peanut butter
1/4 teaspoon ground ginger
1/2 pound turkey breast tenderloins

Steps:

  • In a small bowl, whisk the first 5 ingredients; set aside 1 tablespoon for basting. Cut turkey into long strips (about 1-1/2 in. wide by 1/4 in. thick). Add to soy sauce mixture in bowl; toss to coat., Weave turkey strips accordion-style onto 2 metal or soaked wooden skewers. Broil 3-4 in. from the heat until turkey is no longer pink, 2-3 minutes on each side, basting with reserved soy sauce mixture.

6 turkey chops
2 tablespoons olive oil
2 tablespoons ground pepper
2 tablespoons onion powder
2 tablespoons garlic salt
2 tablespoons chili powder
1 teaspoon parsley, seasoning
1 tablespoon paprika
1 tablespoon salt
1 pinch cayenne pepper
1 teaspoon celery salt

Steps:

  • Pour all spices into a bowl and mix together.
  • Preheat saute pan and coat with olive oil.
  • Rinse turkey chops.
  • Season with seasoning mixture.
  • Place chops into hot pan with olive oil.
  • Sear for 4 minutes on each side or until golden brown.
  • Remove chops from pan. Lay on paper towel to soak up excess oil.

Today was a cold, rainy late October day. I bought a few mini pumpkins and gourds and things to decorate my house with and was feeling 'autumn inspired'. Longing for the flavors of fall, I wanted something with cinnamon, nutmeg and maybe even cloves. I had some turkey 'chops' and decided to throw these things together. I have nothing for leftovers now! The whole family loved it! (Even the super picky 3 and 5 year old!)

4 -6 turkey chops (or fillets)
2 apples (I used Gala and Granny Smith)
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon cayenne
1/4 teaspoon white pepper
3 tablespoons bragg's liquid amino acid (can sub for Soy Sauce or Worcestershire)
2 -4 tablespoons butter (to taste)

Steps:

  • Mix dry seasoning in a small bowl and blend well.
  • Slice apples and arrange in a 9x13 casserole dish. I alternated the types in the pan and included a photo to illustrate. I used a Gala and Granny Smith apple, but I'm not sure how much the kind of apple matters.
  • Lay chops on top of apples. Dust evenly w/ seasoning until all gone.
  • Top w/ butter to taste and sprinkle Bragg's Liquid Amino Acids over the top.
  • Cover with foil and bake at 350°F for 30-40 minutes.
  • P.S. The leftover apples doubled as dessert for my kids!

1 stalk lemongrass
1 small brown onion, chopped
1 tablespoon ground coriander
2 teaspoons ground turmeric
2 teaspoons sugar
2 tablespoons lime juice
1 tablespoon vegetable oil
salt and pepper, to taste
1 kg turkey thighs, chops
lettuce, to serve
lime wedge, to serve
170 g beer nuts
1 -2 cup crunchy peanut butter
1 -2 cup light sour cream
2 tablespoons sweet chili sauce
1 -4 cup ketjap manis (sweet soy sauce)
1 -3 cup water

Steps:

  • Using only the white part of lemon grass, cut finely and place in a food processor. Add onion, coriander, turmeric, sugar, juice and oil. Process until mixture forms a smooth paste. Season with salt and pepper. Combine paste and turkey in a large bowl. Cover and refrigerate 30 minutes.
  • To make satay sauce, process nuts until finely chopped. Add nuts and remaining ingredients in a pan. Stir over low heat until smooth.
  • Cook turkey in heated, oiled grill pan for about 2 minutes on each side, or until browned and cooked through. Remove and cover with foil. Stand for 2 minutes.
  • Serve turkey with warm satay sauce, salad and lime wedges.
