Santa Rosalia Style Hot Dogs Food

Ingredients

8 large hot dogs, preferably 6 to 1s (6 hot dogs to a pound)
8 thin slices bacon, such as Oscar Mayer
4 tablespoons salted butter, at room temperature
8 fresh bolillo rolls, each sliced into a "pocket" to catch all the fillings (see Cook's Note)
1 cup refried beans, warmed
2 avocados, diced
2 firm, ripe Roma tomatoes, diced
1 small red onion, diced
1 cup pickled jalapenos, drained
Zesty Mayo, recipe follows
Fresh cilantro leaves, for garnish
Hot sauce, for serving
1/2 cup finely chopped fresh cilantro
1/4 cup mayonnaise
1 tablespoon hot sauce
Zest and juice of 1 lime
Kosher salt and freshly ground black pepper

Steps:

Wrap each dog evenly in 1 slice of bacon. Secure with a toothpick at both ends and refrigerate for at least 30 minutes to firm up the bacon and help it adhere.
Heat a grill or grill pan for medium heat. Grill each side of the hot dogs until the bacon is extra crispy but not burnt. It is import to control the heat to insure the hot dogs get properly warmed through and the bacon does not burn or undercook. Set aside.
Butter the outsides of the "pocketed" rolls and gently griddle them until just golden brown.
Layer a schmear of warm refried beans on the bottom of each roll followed by a bacon-wrapped dog. Top with the avocados, tomatoes, onions, jalapenos and a squiggly drizzle of Zesty Mayo. Garnish with some cilantro leaves and serve with your favorite hot sauce.
Combine the cilantro, mayonnaise, hot sauce, lime zest and juice and some salt and pepper in a bowl and whisk until well blended.

Santa Rosalia is a small Mexican mining town located on the coast of the Sea of Cortez (Baja Side). Their claim to fame is a church built by Gustave Eiffel and their hot dogs! At dusk every night, a street cart parks across from the church and sets up for business. Their hot dogs are wrapped in bacon and served on a slightly sweet bun, with a 'sea' of condiments to choose from. They are, by far, the best hot dogs I've ever eaten! NOTE: So far I've not been successful in replicating their buns, but this recipe is still wonderful with a high quality store bought buns (such as Sara Lee Soft and Smooth Buns) or Recipe #318739 ! UPDATE: I've been making them on a griddle on the stove top and it works great.

4 hot dogs
4 hot dog buns, Hamburger or Hot Dog Buns
4 slices bacon
1 large tomatoes, chopped
1 small onion, chopped
1 jalapeno, seeded and diced (optional)
1 tablespoon cilantro, chopped
ketchup (optional)
mustard (optional)
mayonnaise (optional)
relish (optional)
cheese sauce (optional)
lettuce, shredded (optional)

Steps:

Mix together chopped tomato, onion, cilantro and jalapeno and set aside.
Preheat grill to medium/high.
Wrap hot dogs with bacon, securing with a tooth pick.
Warm hot dog buns and wrap in foil.
Grill dogs to desired crispness, turning often.
Serve on buns with assorted condiments.

Steps:

Whisk 1/4 cup mayonnaise, 1/2 cup chopped cilantro, 1 tablespoon hot sauce and the zest and juice of 1 lime in a bowl; season with salt and pepper.
Wrap 8 hot dogs in 1 slice of bacon each; secure with toothpicks and refrigerate 30 minutes. Grill over medium heat, turning, until crispy, 12 to 15 minutes. Split open 8 bolillo or hoagie rolls, spread with butter and grill until toasted.
Spread a schmear of warm refried beans in each roll, then add a bacon-wrapped hot dog. Top with diced avocados, plum tomatoes and red onion, sliced pickled jalapenos and a squiggly drizzle of the zesty mayo. Add cilantro and more hot sauce.
