Caramel Apple Poke Cake is super simple to make. The caramel drizzle and toffee bits make it irresistible. So perfect for fall!

1 box vanilla cake mix
1 tablespoon apple pie spice
1/2 cup water
1/3 cup vegetable oil
3 large eggs
2 teaspoons vanilla extract
1 20-ounce can apple pie filling, coarsely chopped
1 cup caramel sauce, room temperature or slightly warmed
1 8-ounce container frozen whipped topping, thawed
2/3 cup toffee bits

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch pan with nonstick cooking spray.
  • In a large bowl with an electric mixer, beat the cake mix, apple pie spice, water, oil, eggs and vanilla on medium speed for 2 minutes.
  • Use a rubber spatula to fold in the apple pie filing.
  • Pour batter into prepared pan.
  • Bake in preheated oven for 28-33 minutes.
  • Remove cake to a wire rack and cool for 10 minutes.
  • Poke warm cake every inch or so with a straw, halfway into cake. Drizzle 3/4 cup caramel sauce over the cake, allowing it to fill in holes. Cool cake completely.
  • Top cake with whipped topping, toffee bits and remaining 1/4 cup caramel sauce.
  • Cover and refrigerate leftover Caramel Apple Poke cake for up to 3 days.

1 box Betty Crocker™ Super Moist™ white cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1 can (20 oz) apple pie filling
1/2 cup caramel sauce
1 teaspoon sea salt
1 container (8 oz) frozen whipped topping, thawed
1/3 cup butterscotch chips

Steps:

  • Heat oven to 350° F (325° F for dark or nonstick pan). Grease or lightly spray bottom only of 13 x 9-inch pan.
  • In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 2 minutes. Add apple pie filling; beat 1 minute longer. Pour into pan.
  • Bake as directed on box for 13 x 9-inch pan. Cool in pan on cooling rack 20 minutes.
  • Meanwhile, in small bowl, mix 1/4 cup of the caramel sauce and the sea salt. Poke warm cake every inch with a straw or handle of wooden spoon, halfway into cake. Pour caramel-salt mixture over cake, allowing it to fill in holes.
  • Spread cake with whipped topping. Drizzle with remaining 1/4 cup caramel sauce; top with butterscotch chips.

2 1/2 cups sugar
3 eggs
1 1/2 cups vegetable oil
3 cups all-purpose flour
2 teaspoons vanilla
1 cup chopped walnuts
2 1/2 cups diced apples (canned or fresh)
3/4 cup butter
2 cups brown sugar
1/4 cup milk

Steps:

  • Lightly grease and flour 13 x 9-inch baking dish; Preheat oven to 350°F Cream together sugar, eggs, and oil; Add flour; mix together until well blended; Add vanilla, nuts, and diced apples.
  • Spread into pan; bake for 45 to 60 minutes; Cake is done when toothpick inserted in center comes out clean.
  • When cake is done, punch holes in it with a knife and pour topping over.
  • Topping: Heat all ingredients together over medium heat; Bring to boil, stirring constantly; Let boil for about 2 minutes; Pour over warm cake.

1 1/3 cups milk
1/2 cup vegetable oil
4 eggs
3 cups chopped peeled baking apples (3 medium)
1 cup thick caramel topping
1/3 cup chopped pecans, toasted
1/2 teaspoon coarse sea salt

Steps:

  • Heat oven to 350°F. Grease 10-inch angel food (tube) cake pan with shortening; lightly flour.
  • In large bowl, stir muffin mix, streusel (from muffin mix box), milk, oil and eggs just until blended (batter will be lumpy). Spoon half of the batter into pan. Sprinkle with half of the apples. Repeat with remaining batter and apples.
  • Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 15 minutes; remove from pan to serving plate.
  • Pour caramel topping over cake. Sprinkle with pecans and salt. Serve warm or cool.

1 ¾ cups white sugar
1 cup vegetable oil
2 eggs
3 cups chopped Winesap apples
2 ½ cups sifted self-rising flour
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 cup lightly packed brown sugar
½ cup butter
½ cup heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a 9x13-inch baking pan.
  • Combine white sugar, oil, and eggs in a large bowl; beat with an electric mixer until smooth. Add apples, flour, 1 teaspoon vanilla extract, and cinnamon; beat until a thick batter forms. Spread batter in the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Poke holes in the hot cake with a fork.
  • Combine brown sugar, butter, heavy cream, and 1 teaspoon vanilla extract in a small saucepan over medium heat. Bring to a boil; cook for 2 1/2 minutes. Pour immediately over the warm cake. Let cake sit for 3 hours to soak up the glaze.

  • Mix cinnamon, ginger, cloves, and nutmeg together in a large bowl. Remove 1/2 teaspoon for the frosting (“Reserved Spices”). To the large bowl, mix in flour, baking powder, baking soda and salt. Set aside.
  • With a stand or hand mixer, beat butter and sugar over medium high speed for a full 4 minutes until very light and fluffy, scraping down sides as needed.
