PORT TODDY

Steps:

• In a mug or heatproof glass, stir the port, sugar and juices together with the cinnamon stick, leaving the cinnamon in the vessel. Add hot water to fill, and garnish with the clove-studded orange peel.

UNCLE BILL'S HOT RUM TODDY

Steps:

• To a large heavy duty cup or glass, add rum, honey, lemon juice, 1/2 lemon rind, and nutmeg. Stand cinnamon stick in the cup.
• Pour the boiling water and stir well to blend.
• Adjust honey to suit your sweetness and adjust lemon juice to suit your taste.
• Sip slowly and enjoy.

RUBY TODDY

Steps:

• Warm a brandy snifter by filling it halfway with hot water.
• Place grapefruit in mixing tin and muddle lightly.
• Add agave and whiskey.
• Strain into snifter and add hot water.
• Add cinnamon stick and Grapefruit peel.
• Combine ingredients in a steaming jug or mixing tin and steam with a wand from espresso machine.

MODERN HOT TODDY

Steps:

• Bring a kettle of water to a boil. Fill a 6-ounce heatproof mug or glass with boiling water and set aside, 1 minute.
• Pour out the water, then add a tea bag or strainer and sugar to the warmed glass. Top with 4 ounces boiling water.
• As the tea steeps, set another small heatproof mug or glass in a small saucepan or baking dish. Pour more boiling water around it, so the water comes halfway up the sides. Add the rum and amaro to the mug, and allow to sit and warm through.
• Once the tea has steeped for 3 to 5 minutes, remove the tea bag or strainer, add the now-warmed rum and amaro mixture, stirring to ensure the sugar is dissolved. Stir in the lemon juice and finish with a lemon slice. Serve immediately.
