My Grandma's BEST Potato Salad Recipe image

This easy, classic potato salad recipe is THE BEST! It was handed down from my grandma to my mom and then to me and includes their secret tips that makes it the very best potato salad recipe every single time.

6 medium white potatoes or Yukon golds ( , about 2 1/2 to 3 pounds, skin on and quartered)
3 tablespoons white vinegar
2 celery stalks (ribs) (, diced)
6 green onions (, diced)
5 hard boiled eggs (, peeled)
1 1/2 cups Miracle Whip or mayonnaise
1 tablespoon yellow mustard
1 1/2 teaspoons celery seed
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
paprika for garnish

Steps:

  • Add the potatoes to a large pot of cold water and bring to a boil. Reduce the heat to a lightly rolling boil over medium heat and add 1 teaspoon of kosher salt. Cook for 20-25 minutes or until the potatoes are easily pierced with a fork or paring knife. Drain and set aside until cool enough to handle.
  • Peel the skins from the potatoes and cut into 1/2" to 3/4" square pieces. Transfer the warm potatoes to a large mixing bowl and sprinkle with the white vinegar. Toss the potatoes with the vinegar and set the potatoes aside to cool, about 15-20 minutes.
  • Add the celery and the green onions to the potato mixture. Chop 4 of the hard boiled eggs and add to the potato mixture.
  • In a medium bowl, mix the Miracle Whip or mayonnaise, yellow mustard, celery seed and salt and pepper. Fold into the potato mixture and season with more salt and pepper to taste. Slice the last egg into thin slices and place the slices on top of the salad. Sprinkle with paprika if desired. Chill for at least 1 hour or overnight before serving.

4 pounds Idaho potatoes
4 jumbo eggs, hard boiled
2 1/2 cups mayonnaise
4 green onions, finely chopped
3 stalks celery, finely chopped
1 tablespoon yellow mustard
1/2 teaspoon freshly ground white pepper
1 teaspoon kosher salt

Steps:

  • In a large pot, add potatoes and water to cover. Bring to a boil and cook until fork tender. Drain and cool. Peel cooked potatoes and cut into small chunks. Put in a very large serving bowl or container. Peel and finely chop hard boiled eggs and add to bowl. Add mayonnaise, green onions, celery, mustard, white pepper and salt. Mix until just combined. Cover and chill in the refrigerator for 3 hours before serving.

2 teaspoons apple cider vinegar
1 tablespoon white sugar

1/3 cup onion, chopped
1/3 cup bread & butter pickle, chopped
2 tablespoons bread & butter pickle juice

Steps:

  • chop potatoes and put in large bowl.
  • mix miracle whip, vinegar, sugar and mustard and add to potatoes.
  • add chopped onion.
  • add pickles and pickle juice.
  • salt to taste.
  • best if prepared a day in advance.

3 -4 lbs baby potatoes
2 cups corn (frozen or canned)
1/2 red onion, medium dice
3 -5 garlic cloves, lightly smashed
1/2 lb bacon, crumbled
1/4-1/3 cup parmesan cheese
1/3 cup sour cream
1/3 cup mayonnaise
1 teaspoon horseradish
2 tablespoons lemon juice
1 tablespoon dill
salt
fresh pepper
olive oil

Steps:

  • Preheat oven to 425.
  • Dice potatoes in salad size pieces. Put them in a single layer on a cookie sheet.
  • Spread corn evenly over potatoes.
  • Spread chopped onions over potatoes.
  • Lightly smash garlic distribute cloves evenly through potatoes.
  • Drizzle liberally with olive oil and salt and pepper.
  • Toss to combine.
  • Roast until potatoes are cooked and crisp.
  • Cook and chop or crumble bacon, put aside.
  • Combine mayonnaise, sour cream, horseradish, lemon juice, dill, Parmesan cheese and salt (keep in mind bacon will add salt and potatoes have been seasoned) and pepper to taste.
  • After roasting with the potatoes remove garlic cloves. Mash them into a paste and add to dressing.
  • Toss roast potatoes, corn, bacon and dressing together. Serve warm. Leftovers are delicious cold!

1kg baby new potato , halved if large
1 tbsp rapeseed oil
150ml soured cream
1 tbsp Dijon mustard
½ pack tarragon , chopped
½ small pack parsley , chopped
zest and juice ½ lemon
1 tbsp small caper , rinsed

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the potatoes in a large pan of water, cover and bring to the boil, then cook for 5 mins until tender. Drain well. Tip the potatoes onto a baking tray, toss in the oil, add some seasoning and cook for 45 mins until golden. Remove from the oven and leave to cool.
  • Mix the dressing ingredients together in a large bowl. Add the potatoes and toss together to coat. Chill for up to 24 hrs or eat straight away.

4 medium beets with greens
2 large potatoes
4 garlic cloves
2 tablespoons olive oil
1 lemon, juice of
salt and pepper, to taste

Steps:

  • Note: You can cook all three of the main ingredients in separate pots, but I hate doing dishes, so here's how I do it.
  • Remove the beet greens, clean and cut into 1 inch slices. Boil till wilted and tender, scoop out with a slotted spoon, drain and set aside.
  • In the same boiling water, cook the two potatoes until tender. Scoop out and set aside to cool.
  • Then boil the washed beets until tender. Rinse, let cool, then slip off the roots and skins.
  • Peel potatoes and cut into bite size chunks. Add to a mixing bowl with the beet greens. Cut the beets into similarly sized chunks, add to the bowl.
  • Mince or press the four SMALL cloves of garlic and mix whisk together with olive oil and lemon juice. NOTE: taste the dressing and adjust the olive oil/lemon juice ratio to your own taste. Also, feel free to cut back on the garlic if you aren't dating a vampire.
  • Pour the dressing over the salad and toss together. Season with salt and pepper and serve immediately.

3 shallots, finely chopped
1 tbsp small capers (optional)
2 tbsp cornichons, finely chopped (optional)
3 tbsp mayonnaise, or to taste
3 tbsp extra-virgin olive oil
1 tbsp white wine vinegar
small handful parsley leaves, roughly chopped

Steps:

  • Boil the potatoes in salted water for 20 mins until just cooked, drain, then cool.
  • Cut the potatoes into chunks, then throw into a bowl with the shallots, capers and cornichons, if using. Add enough mayonnaise to bind, then mix together the olive oil and vinegar and add just enough to give a little sharpness to the salad. Stir in the finely chopped parsley and serve.

8 large potatoes, of your choice peeled,boiled and cooled
5 stalks celery hearts, with leaves
4 hardboiled egg, chopped
4 medium sweet gherkins, chopped
1 cup mayonnaise
1/2 cup Miracle Whip
1/2 cup ranch dressing (the sour cream type for dipping veggies)
1 teaspoon smoked sweet paprika
salt and pepper

Steps:

  • place chilled,chopped potatoes,celery,eggs,pickles in a large mixing bowl.
  • mix mayo,and salad dressings,in medium mixing bowl.
  • add paprika to dressing mix and blend.
  • adjust seasonings to dressing---salt,pepper,paprika.
  • pour over potatoes and veggies and mix well.
  • if salad looks too dry add the dressing of your choice!
