ROSEMARY AND TOASTED ONION BREAD (BREAD MACHINE DOUGH)
This rustic olive oil loaf is so delicious! The herbs and onion are so aromatic and make your house smell wonderful. Made with rosemary, garlic and toasted dry onions, it's a household favorite because it works great sliced for sandwiches as well as a lovely presentation on your dinner table. I use my bread machine to make the dough, then bake in the oven.

Steps:
- Add wet ingredients, then dry ingredients to bread machine (or in the order that your bread machine instructs). I add water and oil first, then flour, sugar, salt, rosemary, onion and garlic. I then create a small well in my flour, and add the yeast, ensuring the yeast does not make contact with the wet ingredients).
- Place your bread machine on the dough setting and start. Check regularly at the beginning to ensure your dough is sticky to the touch but holding it's shape. Adjust accordingly (more water or flour as needed to get correct consistency).
- When bread machine is done, turn the dough onto a floured surface and punch down the dough to remove air bubbles.
- On a cookie sheet lined with parchment paper, form dough into desired shape. I prefer an oblong loaf so it can be cut into bread for sandwiches.
- Cover dough and let rise for 30-60 minutes. It should double in size.
- Preheat oven to 375 while dough is rising.
- After is has risen, remove cover and brush dough with egg wash and sprinkle coarse sea salt. I use approximately 1 tbsp, but you can adjust to your liking. Some rosemary or additional dried onion can substitute the salt topping if you have sodium concerns.
- Bake for 30 minutes until the bread is golden brown.
- Allow to cool before cutting.
- Enjoy!
ROSEMARY BREAD
A "partial" bread-machine recipe. Start in your machine, and finish in the oven, or use a mixer fitted with a dough hook, if you prefer.

Steps:
- Place ingredients (except the rosemary and egg used for topping) in the bread machine in the order given.
- Use manual cycle to knead bread only.
- Turn dough out into an oiled loaf pan (be sure to remove hook), then punch down and spread dough to fill pan.
- Allow dough to rise in a warm area until doubled in size, approx 1 hour.
- Brush dough with beaten egg, sprinkle with chopped rosemary, and allow to rise again for about 10 more minutes.
- Bake bread at 375 degrees F for 25-30 minutes, or until nicely browned.
- Remove from oven and cool on a wire rack.
ROSEMARY BREAD (BREAD MACHINE)
This is an easy bread machine recipe that I came up with after tweaking a few other recipes, mixing and matching and finding what works for me. My family likes to eat this while still warm, and we usually dip it in olive oil, with a few drops of balsamic vinegar and coarsely ground pepper. I have listed ingredients by the way I add them to MY bread machine, so be sure to check that your particular bread machine doesn't require another way of adding ingredients. If so, follow your bread machines instructions for the order in which to add ingredients.

ALMOST-FAMOUS ROSEMARY BREAD

- Stir the yeast, sugar and 1/4 cup warm water in a large bowl (or in the bowl of a stand mixer). Let sit until foamy, about 5 minutes.
- Add 1 tablespoon olive oil, the flour, 1 1/2 tablespoons rosemary, the fine salt and 3/4 cup warm water; stir with a wooden spoon (or with the dough hook if using a mixer) until a dough forms.
- Turn the dough out onto a lightly floured surface and knead, dusting lightly with flour if necessary, until smooth and elastic, about 10 minutes. (Or knead with the dough hook on medium-high speed, adding a little flour if the dough sticks to the bowl, about 8 minutes.)
- Brush a large bowl with olive oil. Add the dough, cover with plastic wrap and let stand at room temperature until more than doubled, about 2 hours.
- Brush 2 baking sheets with olive oil. Generously flour a work surface; turn the dough out onto the flour and divide into 4 pieces. Working with one piece at a time, sprinkle some flour on the dough, then fold the top and bottom portions into the middle. Fold in the sides to make a free-form square. Use a spatula to turn the dough over, then tuck the corners under to form a ball. Place seam-side down on a prepared baking sheet. Repeat with the remaining dough, putting 2 balls on each baking sheet. Let stand, uncovered, until more than doubled, about 2 hours.
- Preheat the oven to 400 degrees F. Bake the loaves 10 minutes; brush with the remaining 1 tablespoon olive oil and sprinkle with the kosher salt and the remaining 1/2 tablespoon rosemary. ROSEMARY BREAD - STARTED IN THE BREAD MAKER - BAKED IN THE OVEN
I love the ease of the bread maker but the consistency of the bread is too soft and fluffy for my taste. So, I experimented with different recipes, which I could start in the bread machine and then bake the old fashioned way. This is the version that worked best, the bread has great texture, it has a wonderful crust and the inside has a good bite but is not too dense. I used a french loaf pan, if you don't have one, form 2 round boule style loafs and bake them on an oiled cookie sheet or on a pizza stone.

- Set bread machine on "Dough"cycle, depending on machine, choose either small or medium loaf size.
- Add all ingredients except 1 tsp rosemary.
- Make sure the water is only luke warm otherwise it will kill the yeast.
- Start the bread machine and let it run until the dough cycle is completed and the machine turns itself off.
- Remove dough to a floured board, cut into 2 portions and shape 2 loafs.
- Spray pan or cookie sheet with butter or oil spray and put the dough loafs on.
- If using the french baguette pan, form oblong loafs, otherwise make round boule style loafs.
- with a sharp knife, cut one long slit in the oblong loafs or a tic-tac-toe pattern in the boule style loafs.
- Sprinkle rosemary and coarse salt, if desired, on top and press lightly on, let rest for another 10 - 15 minutes.
- Preheat oven to 400°F or 200°C.
- Put a pan with hot water on the bottom when you turn the oven on.
- Bake in the lower half of the oven, ca. 50 - 60 minutes or until golden brown.
- the bread should sound hollow on the bottom when tapped.
- Remove from oven and let cool.

- Stir together yeast and the warm water in the bowl of an electric mixer. Let stand until foamy, about 7 minutes.
- Add 3/4 cup water, the olive oil, sugar, salt, chopped rosemary, 1 1/2 cups all-purpose flour, and the whole-wheat flour to bowl. Fit mixer with the dough hook; mix on low speed until dough comes together, about 1 minute. Raise speed to medium-high; mix until dough is smooth and elastic, 8 to 10 minutes.
- Lightly oil a large bowl. Shape dough into a ball, and transfer to oiled bowl. Loosely cover with plastic wrap. Let dough rise in a warm, draft-free spot until doubled in bulk, about 1 hour.
