1/2 cup chopped green onion
3 tablespoons soy sauce (look for a gluten free brand)
1 teaspoon sesame oil
1 teaspoon chili garlic sauce
1 tablespoon sesame seeds

Steps:

  • Pat the Ahi tuna dry, then neatly cut it into small 1/2-inch cubes. Place in a bowl.
  • Add the shallots, green onion, soy sauce, sesame oil, chili garlic sauce, and sesame seeds.
  • Gently toss. Serve immediately or cover and refrigerate.

1 1/2 pounds ahi tuna, sushi or sashimi grade (3 steaks, 6 to 8 ounces each)
1/4 cup minced sweet yellow onion
2 green onions, thinly sliced
3 tablespoons soy sauce
1 tablespoon sesame oil (not toasted)
1 small garlic clove, grated
1/2 teaspoon ginger, grated
1/4 teaspoon kosher salt
Small squeeze sriracha

Steps:

  • Slice the tuna into 1-inch cubes. Mince the onion. Thinly slice the green onions. Mix them in a bowl with the soy sauce, sesame oil, garlic, ginger, kosher salt and Sriracha.
  • Serve immediately, but for most authentic flavor marinate in refrigerator for 15 minutes to 1 hour. Taste and add a sprinkle of salt before serving.* (Get this in the fridge while the rice boils and you prep the veggies, and you can eat when it's all done.)

2 lbs fresh ahi tuna
1 small round onion, julienne cut (Maui Onions preferred)
3 green onions, diced
1/2 teaspoon freshly grated fresh ginger
3 finely diced garlic cloves
1/2 cup soy sauce
1 teaspoon sesame oil
1/2 teaspoon crushed red pepper flakes
1 teaspoon Chinese chili sauce (Rooster Brand)
1 teaspoon hawaiian sea salt or 1 teaspoon kosher salt

Steps:

  • Cut Ahi into at least 1/2" cubes - set aside & refrigerate.
  • Combine all other ingredients in a large glass bowl & refrigerate for at least 30 minutes.
  • When ready to serve toss Ahi and other ingredients together.
  • Serve on chilled platter with chopsticks or toothpicks.

3-4 cups white or brown rice, cooked ((preferably warm))
1 pound sushi-grade ahi tuna, diced
3 green onions, sliced
2 avocados, diced
1 cup diced cucumber
1 cup diced mango
1 cup shelled edamame, steamed
1 jalapeno pepper, sliced
Cilantro leaves
2-3 tablespoons sesame seeds
1/2 cup macadamia nuts, chopped (optional)
1 tablespoon toasted sesame oil (optional)
Furikake (optional)
1/2 cup soy sauce (or gluten free tamari)
1/4 cup orange juice, freshly squeezed
2 tablespoons lime or lemon juice
1 tablespoon mirin (sweet rice wine) or rice vinegar
1/4 cup mayonnaise
1-2 tablespoons tablespoons sriracha
Splash of lemon or lime juice

Steps:

  • Add mayonnaise, sriracha and lemon juice to a small mixing bowl. Mix to combine. Season with salt and pepper to taste, if needed.
  • In a bowl, add the soy sauce, orange juice, lime juice and mirin. Whisk well to combine.
  • Place the tuna in a medium mixing bowl with the green onions (reserve a little bit of the green onions to sprinkle on top of the bowls at the end).
  • Add some of the ponzu to your taste. You can reserve some to pour over the rest of the ingredients. Add sesame seeds. Mix gently to combine. Cover and refrigerate for 30 minutes to an hour. If you let the fish sit for longer time, the citrus in the ponzu will slowly cook the fish.
  • Pile it up! Put rice into serving bowls and top with your desired toppings. Add extra ponzu if desired and drizzle a bit of toasted sesame oil (optional). Add the chilled tuna. Top with macadamia nuts (optional), and drizzle with the creamy Sriracha sauce.

1 teaspoon sesame oil
3 scallions, white and green parts separated, sliced thinly on the bias
2 cloves garlic, smashed and finely chopped
One 1/2-inch piece ginger, peeled and grated
1/2 white onion, such as Maui onion, julienned
1 pound ahi tuna, cut into 1/2-inch chunks
2 tablespoons chopped dry-roasted macadamia nuts

Steps:

  • Combine the soy sauce, sambal, sesame oil, scallion whites, garlic, ginger and onions in a medium bowl. Toss in the tuna and let sit in the fridge for 30 minutes.
  • Stir in the macadamia nuts. Plate as desired and garnish with the scallion greens.

1/2 Cup chopped green onion
3 Tbsp soy sauce
1 Tsp sesame oil
1 Tbsp. sweet chili sauce
1 Tbsp grated ginger
1 Tbsp sesame seeds

Steps:

  • 1. Pat ahi dry and cut into 1/2 inch cubes. 2. Combine all other ingredients in bowl. 3. Add a bit of dressing in at a time and taste it until you have just enough to enhance the flavour of the fish. 4. It can be served immediately. If waiting to eat it, it must be refrigerated.

Poke (pronounced POH-kay), is a Hawaiian raw-fish salad made with marlin and ahi (yellowfin) or aku (skipjack) tuna. I make my own version of poke now, here where I live in Oregon, when the weather is good and hot. I drive over to my local fish market, and pick up some fresh kajiki marlin, which I cut into cubes. I buy my seaweed pickled in a bottle from an Asian food market, and I chop a small bunch with half a white onion, toss the garnish onto the cubed marlin in a stainless-steel bowl, squeeze a teaspoon or two of fresh wasabi onto it and mix in splashes of tamari sauce.
