3 acorn squash, unpeeled, halved through the stem, and seeded
3 tablespoons unsalted butter, diced
3 tablespoons pure maple syrup, plus extra for serving
Good olive oil
Kosher salt and freshly ground black pepper
Flaked sea salt, such as Maldon, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the squash, cut sides up, on a sheet pan. Place 1/2 tablespoon butter and 1/2 tablespoon maple syrup in the cavity of each squash. Brush the cut sides with olive oil and sprinkle the squash with 3 teaspoons kosher salt and 1 teaspoon pepper. Roast for 40 to 60 minutes, depending on the size of the squash, until tender when pierced with a small knife.
  • Place the squash on a serving platter. If the halves are too large for one serving, cut each piece in half through the stem. Drizzle lightly with extra maple syrup, sprinkle with sea salt, and serve hot.

1 pound butternut squash (peeled, seeded and cut into ½-inch cubes)
1 tablespoons olive oil
1/2 teaspoon Kosher salt
Freshly ground black pepper
1 pound Brussels sprouts (trimmed and quartered)
2 center cut strips of bacon (chopped)
2 tablespoons pure maple syrup
2 tablespoons reduced sodium soy sauce

Steps:

  • Preheat oven to 400 degrees F. Spray a sheet pan with cooking spray.
  • In a large bowl, combine the squash, 1/2 tablespoon oil, 1/4 teaspoon salt and pepper, to taste. Toss to coat. In another large bowl, combine the Brussels sprouts, remaining tablespoon of oil, 1/4 teaspoon of salt and pepper, to taste.
  • Spread the vegetables in an even layer on 1 sheet pan. Top with bacon. Roast for 20 minutes, with a spatula, toss veggies and roast an additional 15 minutes.
  • Meanwhile, in a small sauce pot, combine the syrup and soy sauce. Over medium low heat, simmer sauce for 5 minutes, or until it begins to thicken slightly. Set aside.
  • When vegetables are done roasting, transfer to a serving dish. Add maple soy sauce and toss to coat.

This roasted butternut squash recipe is crazy easy to make. 3 ingredients never tasted so good -- just thick cut bacon, butternut squash cubes, and fresh thyme. The perfect paleo side dish or weeknight sheet pan meal, TOTAL winner!

5 pieces of thick cut bacon, baked & chopped
1 medium butternut squash, about 5-7 cups peeled & cubed
2-3 tablespoons rendered bacon fat
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon fresh thyme

Steps:

  • Preheat the oven to 400 degrees. Bake 5 slices of bacon according to the instructions here for about 20 minutes. Reserve the rendered bacon fat in a glass jar, and wipe any excess grease off the baking sheet with a paper towel. Chop the cooked bacon and set aside.
  • While the bacon is baking, peel and cube a medium butternut squash. Toss the cubes with 2-3 tablespoons of the rendered bacon fat, salt, and pepper. Spread the cubed squash out on the baking sheet used previously, leaving ample room between each piece to allow the squash to caramelize. Use a second baking sheet if necessary.
  • Increase the oven temperature to 425 degrees and roast for 25 minutes or until the squash is tender and starting to caramelize.
  • Stir in the chopped bacon and fresh thyme, and then place the baking sheet(s) back in the oven for an additional 5 minutes.
  • Season with additional salt, pepper, and fresh thyme, as desired. Serve warm.

I did not, get this from any one ! This is a hand-me down recipe, my Mom, Grandma, her Mom Ect.... Like it love, "tweek" it to your own taste. I have never been told YUCK just where did you get this recipe? Simple, tasty, smokey and loved !

2 acorn squash
8 slices bacon, use your favorite
8 tablespoons butter
4 teaspoons cinnamon
salt & pepper
after much time i have looked at this recipe and realize my Mistake
there is no sweeteners add about 2 tablespoons per 1/2 brown sugar
use honey or syrup, at your discretion

Steps:

  • I like to buy the squash a month or two ahead of time to let it ripen, so that the squash turns yellow all the way around, not just on the bottom. That is when they are ripe. But if you didn't, don't let it stop you from making this recipe !
  • Cut squash in 1/2 with the grooves.
  • Remove the pulp with the seeds, and cut thin slice off back half, so the half lays steady-flat with out tipping, but try do not cut through the center.
  • Place squash in greased oven proof pan.
  • Place butter around edges of squash, and some in center, of each half.
  • You will use 1 tablespoon for each half, more or less. This depends on how buttery you want it.
  • Sprinkle with cinnamon, salt and pepper to taste, and then place bacon around edges of squash.
  • Cover entire dish with foil, bake at 350 degrees, 45 minutes, or until done.
  • To test for doneness, be careful when removing foil,steam will come out, fork test squash for tenderness, when done it will be soft all the way through, to skin.

A small amount of bacon adds a lot of smoky flavor to sweet maple-roasted vegetables and glazed tofu. It's a colorful, cozy sheet-pan meal for tofu lovers who also eat meat, or bacon eaters who are trying to eat less meat. To make this dish vegan, skip the bacon, and add 1/2 teaspoon smoked paprika to the maple syrup mixture. Dicing the squash into small cubes helps it roast at the same rate as the brussels sprouts, so be sure to keep the pieces around 1/2 inch in size.

1 (14- to 16-ounce) package extra-firm tofu, drained and patted dry
1/4 cup maple syrup
2 teaspoons peeled and grated fresh ginger
1/4 teaspoon red-pepper flakes
1/4 cup extra-virgin olive oil, plus more for drizzling
12 ounces butternut squash (1 small to medium squash), peeled, trimmed, seeded and cut into 1/2-inch cubes
1 pound brussels sprouts, trimmed, small ones left whole, large ones halved
1 medium red onion, cut into 1/2-inch wedges
Kosher salt and freshly ground black pepper
3/4 teaspoon ground coriander
1 tablespoon finely chopped fresh sage leaves
2 ounces bacon, diced into 1-inch pieces
1 1/2 tablespoons soy sauce
3 teaspoons fresh lime juice, plus more for drizzling
1 teaspoon Asian fish sauce
1/2 cup sliced scallions (white and green parts), for garnish

Steps:

  • Heat oven to 400 degrees. Slice tofu into 1-inch-thick slabs. Pat them dry with paper towels and arrange in single layer on a plate. Cover tofu slabs with more paper towels and set aside.
  • In a small saucepan, combine maple syrup, ginger and red-pepper flakes. Simmer until syrup thickens slightly, about 1 minute, then stir in 1/4 cup olive oil.
  • Place squash, brussels sprouts and onion in a bowl. Toss with salt, pepper, coriander, sage and half of the maple syrup mixture. Spread vegetables in an even layer on a rimmed baking sheet and sprinkle bacon on top.
  • Add soy sauce and 2 teaspoons lime juice to remaining maple mixture.
  • Remove paper towels from over tofu, and sprinkle salt on tofu slabs. Tuck tofu onto the baking sheet with squash and brush half of the soy-maple mixture over the slabs. Roast for 40 minutes, tossing the vegetables occasionally. Halfway through roasting, flip the tofu slabs, and brush with remaining soy-maple mixture. Turn oven off and heat broiler.
  • Broil tofu and vegetables for 1 to 2 minutes to crisp up the bacon and the edges of the tofu. When vegetables are still hot, toss with remaining 1 teaspoon lime juice and the fish sauce. Garnish with sliced scallions and drizzle with more olive oil and a little more lime juice if you like.

3 tbsp Maple Syrup
6 Strips Thick-Cut Bacon
1 tsp Italian Seasoning
1/2 tsp Sea Salt
1/2 tsp Ground Black Pepper
2 Jalapeños (optional)

Steps:

  • Preheat the oven to 400°F.
  • Trim the steam of the Brussels Sprouts and cut them in half. Cut the Butternut Squash into bite-sized cubes. Cut the bacon into ~1-inch slices. If adding jalapenos, slice the jalapenos into small dials.
  • Place all the ingredients, except the bacon, in a single layer on a baking sheet. Drizzle with olive oil, maple syrup, salt, pepper, and Italian seasoning. Mix the ingredients together to fully coat the sprouts and butternut squash. Add the bacon to the sheet pan.
  • Roast in the oven until the Brussels sprouts are caramelized and crispy on the outside and the bacon is crispy, about 40 minutes. Make sure to stir the ingredients halfway through.
  • Remove the Brussels Sprouts from the oven, drizzle with maple syrup (optional), and sprinkle with fresh ground pepper. Enjoy!
