ROASTED SEAFOOD-STUFFED PINEAPPLE
This delicious recipe for roasted seafood-stuffed pineapple is courtesy of Roberto Santibanez and can be found in his cookbook, "Rosa's New Mexican Table."

Steps:
- Cut pineapple in half lengthwise. Using a small paring knife, make a cut about 1/2-inch from the pineapple skin, all the way around the pineapple. Remove core and discard. Using a large spoon, remove the pineapple flesh from its skin, making sure to leave about 1/2-inch of flesh all around each pineapple half. Set pineapple shells aside and coarsely chop pineapple flesh.
- Melt butter in a medium skillet over medium heat. Add onion and garlic. Cook, stirring occasionally, until onion is translucent, about 5 minutes. Add chopped pineapple, bay leaves, sugar, chile powder, and 1/4 teaspoon pimiento arabe. Cook, stirring often, about 15 minutes. Season with salt and set aside to cool. This can be made up to a day in advance; refrigerate until needed and discard bay leaves before using.
- Position rack in center of the oven and preheat to 400 degrees. Line a baking sheet with parchment paper and set aside.
- Place adobo sauce in a medium saucepan and bring to a simmer over medium heat, adding water if sauce seems too thick. Place fish and shrimp in a large bowl; season with 1 teaspoon salt and remaining 1/4 teaspoon pimienta arabe and toss to combine.
- Brush the inside of each pineapple shell with adobo sauce. Divide seafood mixture evenly between each pineapple shell; sprinkle with cilantro. Spread pineapple mixture over seafood, and pour over any remaining adobo sauce. Wrap crowns of pineapple with foil and transfer pineapples to prepared baking sheets. Bake for 20 minutes.
- Tuck 4 clams into the stuffing of each pineapple; sprinkle cheese over each. Return pineapples to oven and continue baking until clams have opened, filling is bubbling, and cheese is lightly browned, about 20 minutes. Let stand several minutes before serving.
PINEAPPLE BOAT SHRIMP WITH FRUIT SALSA
Steps:
- In a resealable plastic bag, add the shrimp, 3 tablespoons soy sauce, the lemongrass, 1 tablespoon of ginger and the cornstarch and combine well. Refrigerate for 30 minutes.
- In a large saute pan over high heat, heat the peanut oil and add half the shrimp mixture. Saute for 3 to 4 minutes and remove. Repeat for second batch of shrimp, adding additional oil, if necessary.
- Add in the red bell peppers and the onions and saute for 3 minutes, then add the jalapeno, garlic, and the remaining 1 tablespoon of ginger. Stir in the remaining soy sauce and add the shrimp back into the saute pan. Heat until warmed through. Transfer to a serving platter and serve with the Fruit Salsa.
- In a glass bowl, combine the mint, serrano pepper, ginger, rice vinegar and red pepper flakes. Stir in the pineapple, the onions, red bell pepper and apricots. Cover and refrigerate for at least 30 minutes before serving.
PINEAPPLE SEAFOOD BOWLS
Steps:
- Set up the grill for direct cooking over medium heat and oil the grates.
- Skewer the shrimp, scallops, and cod on separate skewers and grill until just cooked through, about 3 to 5 minutes. Set aside.
- Cut the pineapples in half. Scoop the flesh from each pineapple to create a bowl, leaving the bottom portion in each pineapple bowl to hold the coconut milk mixture. Reserve the removed pineapple flesh. Wrap bottoms of the pineapple bowl with a double layer of heavy-duty foil.
- Cut the reserved pineapple into bite-size pieces, discarding the hard core. In a medium bowl, combine pineapple, coconut milk, cilantro, and Thai seasoning. Fill each pineapple bowl halfway full of coconut milk mixture.
- Place pineapple bowls on the grill and close the lid. Cook for 15 to 20 minutes or until the coconut milk mixture begins to simmer.
- Remove the pineapple bowls from the grill and carefully remove the aluminum foil. Evenly divide the grilled shrimp, scallops, and cod between the pineapple soup bowls. Garnish with fresh cilantro and serve hot.
SHRIMP WITH FRESH PINEAPPLE AND CORN
Steps:
- Cook the shrimp on medium-high heat until fully pink, seasoning with blackened seasoning while you stir, about 5 minutes. Add pineapple and allow to cook for 5 to 7 minutes. Mix in corn and cook for 5 to 7 minutes.
- Serve warm on a bed of spinach.

PINEAPPLE SHRIMP FRIED RICE

Steps:
- Cook brown rice according to package directions and set aside to cool.
- If making pineapple bowls, cut each pineapple in half and hollow out both halves to make 4 bowls.
- Cut a piece off the bottom of the pineapple halves to create a flat base.
- Cut the pineapple into small pieces and set aside.
- Heat a nonstick wok on high heat; when hot add oil.
- Add shrimp and cook a few minutes until just opaque, 3 to 5 minutes; set aside.
- Add the scallions, chili and garlic to the wok. Saute about 1 minute, then add the rice, shrimp and pineapple and stir a few times.
- Add soy sauce and fish sauce, stir to mix all the ingredients and cook another 30 seconds.
- Divide and transfer into the hollowed out pineapples and garnish with cilantro.

- Bring salted water to a boil in a small kettle, add the shrimp, and cook for 90 seconds to 3 minutes, immediately remove the shrimp and submerge in an ice bath. Do not overcook the shrimp or they will taste rubbery. Cooking time will depend on the exact size of the shrimp but unless you are using truly jumbo shrimp such as U12 (expensive and not easy to always find) 3 minutes is the maximum boiling time I recommend; I cooked mine for 2 minutes.
- While the shrimp are resting and cooling in an ice bath, chop all remaining ingredients and add them to a medium bowl.
- Add the shrimp, stir well, and taste for seasoning balance, making adjustments as necessary. I recommend serving with tortilla chips or seasoned tortilla chips.

- Prep all veggies, chop and measure everything, and set to the side. Note: When making a stir fry it’s best to have everything ready to go. You’ll be cooking at high heat and to avoid burning your ingredients make sure you have everything at an arms distance.
- In a wok or large deep skillet, heat canola oil over medium-high heat. Season shrimp and cook shrimp for about 4 min. Try not to overcook as they will become tough and chewy. Then remove and set to the side.
- Add a little more oil to your skillet, increase heat to high and saute the veggies, start with the items that take a little longer, carrot, onion and broccoli. Season lightly with salt. Once veggies are soft to your liking add the rice and sauce mixture. Reduce heat to medium and quickly stir and get everything combined. Cook while stirring continuously until the rice is warmed through. Taste and if additional heat or salt is needed added in more chili garlic sauce and/or soy sauce.

- Using a large sharp knife, slice the pineapple in half with leaves intact. To do this, place the pineapple on a cutting board with the bottom facing you.
