BAKED CHICKEN CACCIATORE
All the traditional ingredients of everybody's favorite Italian chicken dish--but this easier version is baked instead of simmered on top of the stove. Serve with spaghetti, rice, mashed potatoes or crusty bread for mopping up the sauce. From Ladie's Home Journal.

Steps:
- Heat oven to 400°F
- Remove skin from all chicken pieces except wings; trim any visible fat.
- Cut chicken breasts crosswise in half.
- Heat oil in large roasting pan in oven 2 minutes.
- Combine flour, 1 teaspoon salt, oregano and pepper in large resealable plastic bag; add chicken pieces, tossing to coat well with flour mixture.
- Arrange chicken in hot oil in roasting pan; roast 20 minutes.
- Stir mushrooms, red pepper and onions into roasting pan with chicken; roast 15 minutes more, stirring once.
- Add tomatoes with their liquid, wine and remaining 1/4 teaspoon salt, breaking up tomatoes with spoon.
- Roast 10 minutes longer until chicken is cooked through.
- Sprinkle with chopped parsley.

CHICKEN-LEG CACCIATORE WITH SWEET PEPPERS, FENNEL, AND GREEN OLIVES

Steps:
- Place chicken legs and thighs in a large bowl; add brine and toss to coat. Transfer to refrigerator for 30 minutes. Remove chicken from brine and pat dry.
- Preheat broiler and preheat oven to 375 degrees.
- Season chicken with 1 teaspoon salt, 1/2 teaspoon pepper, oregano, and 1 tablespoon olive oil. Place chicken on a broiler pan on the middle rack and broil until skin begins to crisp, about 2 1/2 minutes. Rotate pan and continue cooking until skin is crisp, about 2 1/2 minutes more.
- Transfer chicken to oven and bake until juices run clear, about 15 minutes.
- Meanwhile, in a large saucepan, heat remaining 2 tablespoons olive oil. Add sausage and cook until fat is rendered, about 2 minutes. Add onion, fennel, and remaining salt. Cover pan and let cook until vegetables are just softened, about 3 minutes.
- Uncover and stir in garlic; cook for 1 minute. Add wine and cook until evaporated, about 30 seconds. Add roasted peppers and tomatoes; cook until tomatoes are broken down, vegetables have softened, and mixture is thickened, about 20 minutes.
- Add olives and cook, stirring, for 1 minute. Remove pan from heat and add basil, parsley, and chicken; stir to coat. Serve immediately with generous portions of sauce poured over the chicken.
ROASTED PEPPERS FOR CHICKEN LEG CACCIATORE

- Preheat broiler with a rack set in the center of the oven.
- Place peppers in a large bowl and add olive oil; toss to coat and season with salt and pepper. Place peppers, skin side up, on a baking sheet. Transfer to oven and broil for 5 minutes. Rotate baking sheet and continue to broil until skin is black and blistery, about 5 minutes more.
- Transfer peppers to a large bowl and cover with plastic wrap; let peppers steam for 20 minutes. Using your fingers, peel off blackened skin. Cut peppers as desired and place in an airtight container, along with their liquids.
ROASTED CHICKEN CACCIATORE
This a mash-up of several recipes I had from various sources. The roasting and the balsamic give it such a deep taste, it was the best. I just had to share it! Traditional Chicken Cacciatore uses bone in chicken but I find that boneless skinless thighs stay nice and moist and make it easier to eat. No knife needed to cut the thighs, that's how tender they get. And don't worry about the garlic, it mellows into a sweet dream with the roasting. I've tried this recipe with both dry white and dry red, and I prefer the white, but it's a personal preference.

- Preheat oven to 500°F
- Prepare all roasting vegetables (tomatoes, mushrooms, pepper, garlic, onions) as indicated above. To simplify garlic peeling, smack the garlic clove with the flat side of the knife, the peel will just come right off.
- In a large bowl combine chopped plum tomatoes, quartered mushrooms, chopped green pepper, garlic cloves, and chopped onion. Add 2 T Balsamic vinegar and 2 T olive oil and toss to combine well.
- Place vegetables into a large roasting pan, sprinkle with salt and pepper, and into the oven. Roast, stirring occasionally, until the onions and garlic are golden brown and nearly all the liquid from the mushrooms and tomatoes has evaporated, about 40-50 mins, could be longer depending on the size of the pan.
- Reduce oven temperature to 325°F.
- Sprinkle chicken with salt and pepper and 1 T rosemary.
- In a large skillet add remaining 3 T oil and heat on medium heat until oil is hot. Add one thigh at a time, making sure not to crowd them. I do them in a couple batches.
- Brown both sides of the thighs until a golden brown, putting chicken into bowl as they are done.
- Add wine and chicken broth to skillet and simmer until reduced by 1/2 scraping up any browned chicken bits that stuck to the bottom. Add canned tomatoes with liquid and combine thoroughly.
- Remove roasting pan from oven. Nestle chicken in roasted vegetables and pour wine mixture over the top. Sprinkle remaining 1 T rosemary, marjoram and 1/2 of capers. Stir gently, incorporating any brown bits that may have stuck to the sides of the roasting pan.
- Return roasting pan to oven and bake for 15 - 20 mins, or until chicken is done and juices run clear. Top with remaining capers.
- Serve over pasta or polenta.
CHICKEN CACCIATORE
I have given this dish to a friend when she came home from giving birth. Put it with fresh packaged pasta, a salad and the chicken with reheating directions and it will be appreciated.

Steps:
- Melt butter and brown chicken in a heavy 11" skillet.
- Remove chicken; lightly brown onion, green pepper, garlic and mushrooms.
- Remove garlic.
- Place chicken back in skillet, spooning onion, green pepper and mushrooms over.
- Stir together in a medium bowl undrained tomatoes, tomato sauce w/mushrooms, salt, pepper, thyme, bay leaves and cayenne pepper. Pour over chicken. Bring to a boil. Reduce heat and simmer uncovered 30-40 minutes or until chicken is fork tender.
- Remove bay leaves. Transfer chicken to warm platter. skim off any extra fat from sauce, spoon some sauce over chicken. Thicken remaining sauce slightly and stir into pre-cooked spaghetti, adding additional 8 oz can of tomato sauce w/mushrooms in necessary to make enough liquid.

CHICKEN CACCIATORE
This appeared on the label of the canola oil that I always buy. Although the recipe calls for specific brands of ingredients, which I will put below, you can use any other brand. Also, since this recipe does not have any pork products or cheese in it, some one can always make this kosher by using kosher products. The recipe won't let me put this in the list of ingredients but you can also have chicken legs to the recipe. It's an and/or kind of thing.

- Preheat the oven to 350F (180C).
- In a plasitc bag, combine All-Purpose flour and 1/2 tsp salt.
- Add chicken a few pieces at a time and shake to coat.
- In a frying pan heat oil. Add chicken and brown on all sides. Remove chicken and place in 13 x 9 x 2 inch (3.5L) baking dish.
- Combine diced tomatoes, tomato sauce, mushrooms, onion, green pepper, 3/4 tsp salt, crushe basil, crushed rosemary and garlic powder. Por over chicken.
- Cover and bake until chicken is tender, 45 to 50 minutes. Skim off fat, if necassary.
