ROASTED DELICATA SQUASH
You don't have to peel delicata squash to make these roasted squash slices. Serve warm as a side dish, or at room temp as a snack with a spicy aioli dipping sauce.

Steps:
- Place squash halves cut side down on a cutting board. Slice into 3/8-inch slices. Transfer slices to a bowl. Drizzle with olive oil; add salt and cayenne pepper. Toss to coat squash with oil.
- Preheat oven to 450 degrees F. Line a rimmed baking sheet with parchment paper or a silicone mat.
- Arrange squash pieces in a single layer on prepared baking sheet. Place in preheated oven until bottom of slices is browned and squash is tender, 12 to 18 minutes.

ROASTED DELICATA SQUASH
Thick rings of Roasted Delicata Squash will be an impressive side dish on your Thanksgiving table. There is a rich, delicious crust of caramelized goodness on every slice that tastes just amazing. Roasting the squash in a hot oven brings out the sugar in the flesh and caramelizes the slices. The firmer texture of the skin compliments the sweet, velvety texture of the squash.

Steps:
- Preheat oven to 450°F.
- Lightly spray 2 large nonstick baking sheets with oil.
- Wash the squash under the cold water tap to remove any soil particles, pat dry.
- With a sharp knife, trim 1/4-inch off the ends of each squash and cut across into 1-inch slices/rings.
- Using a serrated knife, grapefruit spoon or paring knife scrape around the inside of each ring, removing the seeds and membranes.
- Add the slices to a large bowl or a closable plastic bag and drizzle olive oil over them making sure each slice is coated with the oil.
- Lay the slices flat on the prepared baking sheets and bake in the center of the oven until you see light caramelizing around the bottom edges, about 15-18 minutes, flip the slices and roast another 5-6 minutes.
- Remove from the oven and transfer to a serving plate, garnish with the salt flakes, chopped parsley and rosemary sprigs.

SPICY ROASTED DELICATA SQUASH
Steps:
- Preheat the oven to 425 degrees F.
- Cut the squash in half lengthwise and scoop out and reserve the seeds in a small bowl. Cut the squash into 1-inch half-moons and place into a large bowl.
- Thinly slice 1 of the jalapenos and place in a small bowl with the white balsamic, making sure the vinegar covers the peppers completely. Set aside to pickle while the squash cooks.
- Meanwhile, thinly slice the remaining jalapeno and transfer to a small skillet with 1/4 cup of the olive oil and 1 teaspoon of the harissa. Cook over medium-high heat, stirring frequently, until the peppers are shimmering and starting to lighten in color in the center and the seeds are turning golden brown, about 5 minutes. Strain the oil into the large bowl with the squash and add the remaining 2 teaspoons harissa, 1 teaspoon salt and a generous amount of freshly ground black pepper. Use tongs (the oil will be hot) to toss everything together. Transfer to a baking sheet and bake until a butter knife can be inserted easily into the squash and removed, about 30 minutes.
- While the squash is cooking, toss the seeds with the pumpkin pie spice, cayenne pepper, remaining 1/2 teaspoon olive oil, 1/4 teaspoon salt and a few grinds of black pepper. Transfer to a baking sheet and bake until light golden and crispy, 7 to 8 minutes.
- Transfer the squash to a serving platter. Drain the jalapenos and sprinkle over top along with the feta cheese and roasted seeds.

This is the first time I have ever seeen or cooked and eaten this delicious squash! Even the skin can be eaten. This is just one of 6 different squashe I bought up at GreenBluff, WA. ...right from the farmers that sell produce that they grow. I only bought 2, so I will make another trip.. for more. - 1. Pre-heat oven to 425F Wash & slice squash, into 1/2 to 3/4 inch slices. Cut out center with the seeds.
- 2. Put slices on a cookie sheet, (I line mine with foil) Do not let them touch each other.
- 3. Brush on the mixed, olive oil & butter. Turn and brush again. Salt & pepper, and thyme...if wanted. Bake for 20 minutes. Turn once after 10 minutes. When ready to serve stack up onto a plate....like a leaning tower !...The skin on delicata can be eaten.
GRILLED DELICATA SQUASH
Delicata squash is actually named for its delicate, edible skin. It's so easy to prepare--just cut open and take out the seeds. Half-inch slices grill up quickly, and the lovely caramelization enhances the flavor.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Wash and dry each squash and place on a cutting board. With a sharp knife, slice off the stem end and slice each squash in half, lengthwise. Using a spoon, remove the seeds and membranes. Slice across each squash half to create 1/2-inch pieces and place in a mixing bowl.
- Combine melted butter, salt, cinnamon, and nutmeg in a small bowl. Stir to combine, and pour over squash pieces. Stir squash in the butter mixture until coated.
- Place squash pieces directly on the preheated grill grates and grill 4 to 5 minutes, per side. Move squash away from flare-ups. When grill marks appear and squash is fork-tender, remove from heat and place in a mixing bowl.
- Pour maple syrup over the squash pieces and stir to coat. Place on a serving dish and garnish with feta cheese crumbles, if desired.
