Steps:
- Preheat the oven to 400*F.
- Line a large baking sheet with tin foil, and spray with cooking spray. Set aside.
- Cut sausage into rounds. Chop the onions and potatoes the same size. This helps with cooking time.
- Add the sausage rounds, onions, and potatoes into a large bowl. Drizzle with a tablespoon of olive oil and season with salt, pepper, and paprika. Toss together with your hands until everything is evenly distributed. Pour this out onto the sheet pan and spread out the sausage and potatoes.
- Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven.
- Makes 8 servings, divide into 8 equal servings

- Preheat the oven to 425 degrees.
- Mix the potato chunks in a bowl with half the olive oil, half the parsley, and a generous amount of salt and pepper.
- Toss to coat well, then spread over the bottom of a large roasting pan large enough to hold all the potatoes in one layer.
- In the same bowl, mix the chicken parts with the remaining oil and parsley and more salt and pepper, again stirring to coat well.

- In a large bowl, combine the chicken with the sofrito. Cover and refrigerate for 12-24 hours.
- Preheat oven to 400 degrees F.
- In a large skillet, over medium heat, cook the bacon until golden brown, about 8 minutes. Add the butter and cook until melted. Then, add the white wine and cook, scraping the browned bits from the bottom, until the wine is reduced by half. Reserve this mixture.
- Remove the chicken from the marinade and arrange, skin side up, in a deep baking dish.
- Add the baby potatoes to the chicken marinade, mixing well so they get coated. Transfer the potatoes and marinade to the baking dish, with the chicken.
- Arrange the sausages and onions around the chicken.
- Pour the wine mixture with the bacon over the chicken, sausage and potatoes.
- Cover with foil and roast in the preheated oven for 1 hour. Then, remove the foil, turn the sausages so they cook evenly, and continue roasting for 30 minutes, basting at least once with the juices, or until golden brown. You can also broil for a couple of minutes if you want a deeper golden brown color.
- Garnish with chopped parsley and serve!

- In a large Dutch oven or heavy pot, heat oil over medium-high. Add sausage and cook, stirring occasionally, until brown all over, about 4 minutes. With a slotted spoon, transfer sausage to a dish. - Melt 6 tablespoons of the butter in a large, heavy bottomed stockpot over medium heat. Just before the butter begins to brown, add the chicken. Season with a little salt and pepper and cook until browned on all sides, about 8 minutes. Add the andouille and cook 2 more minutes. Remove the meat to a large dish and set aside.
- Melt the remaining butter in the same pot. Add the onion, garlic, carrot, fennel, thyme and bay leaves and cook over medium heat until the onion turns translucent, about 20 minutes.
- As the vegetables cook, pour the chicken stock into a large saucepan. Place over medium heat and bring to a simmer. Reduce heat to low.
- When the vegetable mixture is ready, add the orange zest to the pot along with the reserved meat and any juices. Mix well. Add the flour and stir to coat the vegetables and meat. Cook 2 minutes. Add the wine and stir. The mixture will thicken immediately. Add the warm chicken stock to the pot 1 cup at a time, stirring as the stock is added. - Preheat oven to 450 degrees F (230 degrees C).
- Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.

- Cook sausage in a large skillet over medium heat, stirring often, 7 minutes or until browned. Remove sausage; drain and pat dry with paper towels.
- Heat oil in a stainless-steel Dutch oven over medium heat; gradually whisk in flour, and cook, whisking constantly, 18 to 20 minutes or until flour is caramel-colored. (Do not burn mixture.) Reduce heat to low, and cook, whisking constantly, until mixture is milk chocolate-colored and texture is smooth (about 2 minutes).
- Increase heat to medium. Stir in onion, next 4 ingredients, and, if desired, ground red pepper. Cook, stirring constantly, 3 minutes. Gradually stir in chicken broth; add chicken and sausage. Increase heat to medium-high, and bring to a boil. Reduce heat to low, and simmer, stirring occasionally, 1 hour and 30 minutes to 1 hour and 40 minutes or until chicken is done. Shred chicken into large pieces using 2 forks.
- Place Roasted Potatoes in serving bowls. Spoon gumbo over potatoes. Serve immediately with desired toppings.

- Start out by pre-heating the oven to 450 degrees. Chop up the red potatoes into small pieces and place on a flat pan lined with foil. Coat the foil with olive oil (or avocado oil – I like that stuff) so the potatoes will not stick to the foil. Place in the oven for 20 – 30 minutes or until slightly browned. In the meantime, start dicing up the zucchini, yellow squash and onion. Place to the side.
- When you have about 10 minutes left for the potatoes, start cooking the chicken sausages on medium heat. I like to use the pre-cooked chicken sausages as they are easier to work with for this dish. Let the chicken sausages cook for about 10 minutes.
- The roasted chicken sausages and the potatoes should finish cooking around the same time. Remove the chicken sausages from the frying pan and cut them into smaller pieces. Place the cooked red potatoes and the chicken sausages together in the large frying pan, adding in the zucchini, yellow squash and onion. Now it’s time to add the spices. Like I said above, use your own discretion on this. Add too much and you’ll be choking ( I wouldn’t know from experience or anything), add too little and you might not be able to taste it. Start out with 1/4 tsp and do a little taste test after a few minutes to see if you need more. The Simply Organics chicken seasoning should still be 1 tbsp as it adds a nice earthy flavor to the dish. Keep the dish cooking for about 10 minutes, stirring frequently to prevent anything from getting too burnt.
- Let everything sit for a few minutes after your finished cooking because trust me with all of the spices, it’s going to be hot enough.
