1 can (5 ounces) evaporated milk
1/4 cup ketchup
1/2 cup crushed saltines
2 tablespoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef
4 small onions, quartered
4 small potatoes, peeled and quartered
4 medium carrots, quartered
1 large green pepper, cut into strips
2 tablespoons minced fresh parsley

Steps:

  • In a large bowl, combine milk, ketchup, cracker crumbs, Worcestershire sauce, salt and pepper. Add ground beef. Shape meat mixture into an 8x4-in. oval; place in a 13x9-in. baking dish. Place the onions, potatoes, carrots and green pepper around the loaf. , Cover and bake at 350° for 1-1/4 hours. Uncover; bake 15 minutes longer or until a thermometer inserted in meat loaf reads 160°. Garnish vegetables with parsley., Freeze option: Securely wrap and freeze cooled meat loaf in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf and place in a greased shallow baking pan. Reheat meat loaf in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°. Let stand 10 minutes before slicing.

1 large zucchini, finely diced
1 red bell pepper, finely diced
1 yellow pepper, finely diced
5 cloves garlic, smashed to a paste with coarse salt
1/2 teaspoon red pepper flakes, divided

2 large eggs, lightly beaten
1 tablespoon finely chopped fresh thyme leaves
1/4 cup chopped fresh parsley leaves, plus more for garnish
1/2 pound ground pork
1/2 pound ground veal
1 pound ground beef chuck
1 cup panko (Japanese) bread crumbs
1/2 cup freshly grated Romano or Parmesan
1 cup ketchup, divided
1/4 cup plus 2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 425 degrees F.
  • Heat the oil in a large saute pan over high heat. Add the zucchini, peppers, garlic paste, 1/4 teaspoon red pepper flakes, and salt and pepper, to taste, and cook until almost soft, 5 minutes. Set aside to cool.
  • Whisk together the eggs and herbs in a large bowl. Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup, 2 tablespoons of the balsamic vinegar, and the cooled vegetables and mix until just combined.
  • Mold the meatloaf on a baking sheet lined with parchment paper. Whisk together the remaining ketchup, balsamic vinegar, and red pepper flakes in a small bowl. Brush the mixture over the entire loaf. Bake the meatloaf for 1 to 1 1/4 hours. Remove from the oven and let rest for 10 minutes before slicing.

1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

1/3 cup milk
3 tablespoons Worcestershire sauce

Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
  • Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
  • Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
  • Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt

2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.

1 lb ground beef
1 egg
3/4 cup breadcrumbs
salt and pepper (to taste)
2 tablespoons onions
2 tablespoons green onions
2 tablespoons Worcestershire sauce
3 potatoes
3 onions
3 carrots

Steps:

  • Combine first eight ingredients.
  • Shape into loaf in the center of a 13x9-inch pan.
  • Place potatoes, onions and carrots in layers around meat. Be sure to season veggies well with your favorite seasonings.
  • Cover tightly with foil.
  • Bake at 375°F for 1 hour.
  • Uncover then bake 10 minutes more.
  • I like to brush meat and veggies with a teriyaki glaze before and during baking.

1/2 cup quick-cooking oats
1/2 cup milk

1/2 cup catsup or 1/2 cup chili sauce
1 tablespoon parsley, Snipped
2 tablespoons brown sugar, Packed

Steps:

  • Heat the oven to 350 degrees F.
  • Mix all the ingredients except the catsup and brown sugar together.
  • Press the mixture firmly in an ungreased loaf pan 8 1/2 X 4 1/2 X 2 1/2-inches.
  • Loosen the edge with a spatula and unmold the loaf in an ungreased baking pan 13 X 9 X 2-inches.
  • Mix the catsup and sugar then spoon onto the loaf.
  • Bake uncovered for about 1 to 1 1/4 hours.
  • Remove the meat loaf to a plate and let stand for 10 minutes.
  • Then slice and serve on a heated platter.
  • NOTE: If you don't have a pan this size, just form the mixture into a loaf in the large baking pan.
  • VARIATION: Roast Meat Loaf Ring: Press the meat mixture firmly into an ungreased 5 to 6 cup ring mold.
  • Unmold in the baking pan by rapping mold against the bottom of the larger pan.
  • Brush with the catsup mixture.
  • Bake for about 50 minutes.
  • If you desire, the hole in the ring can be filled with hot potato salad or creamed peas.

Grated nutmeg
8 ounces chicken livers
1 pound each ground beef, ground pork, ground veal
1 pound sausage meat
1 large onion, grated
3 fat cloves garlic, crushed to a paste
10 juniper berries, crushed
1 teaspoon ground allspice
Fresh thyme sprigs
1 to 2 eggs
8 ounces unsmoked bacon
Bay leaves
Branches of fresh rosemary
Tomato sauce, for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • Saute the mushrooms in butter until the juices run, then season with salt and pepper and nutmeg. Reserve.
  • Remove the sinews from the livers and slice. In a large bowl combine all the ground meats, sausage, livers, onion, garlic, and juniper berries. Add the allspice and thyme leaves. Season with salt and pepper. Beat the eggs and add to the mixture together with the mushrooms. Mix with your hands thoroughly.
  • Oil a roasting pan and place all the mixture in it, molding it into an oval shape. Adorn with the bacon slices, criss-crossed, tucking the ends under the meat. Strew some bay leaves and branches of rosemary on the top and sides. Cook in the preheated oven for 15 minutes, then lower the heat to 350 degrees and cook for 1 1/2 hours.
  • When cooked, there will be lots of lovely juices in the bottom of the pan. Save them to flavor soup, stocks, or eggs. Remove the loaf and place on a serving dish. Serve hot or cold with a tomato sauce.
  • For children, you might like to turn it into a hedgehog by pressing almonds into the meat to create prickles and placing 3 olives to form eyes and a nose. This should be done before the meat goes into the oven.

1 1/2 lbs ground beef (beef, pork and veal mix)
2 slices white bread, crusts removed
1 carrot, peeled and sliced
1/4 medium onion
1 garlic clove
1/4 cup fresh parsley
1/4 cup grated parmesan cheese
2 eggs, beaten
1 teaspoon salt
1 teaspoon black pepper
3 russet potatoes, peeled and chunked 1 inch thick
3 carrots, sliced 1 inch thick
1 small onion, sliced
olive oil

2 teaspoons olive oil
1/2 cup chopped sweet onion
1/3 cup chopped celery
1/2 cup shredded carrots
3 garlic cloves, minced
2 large eggs, lightly beaten, room temperature
1/3 cup crushed saltines (about 10 crackers)
1/3 cup crushed Ritz crackers (about 10 crackers)
2 tablespoons Italian seasoning
1 tablespoon dried parsley flakes
1 teaspoon salt
1 teaspoon pepper
1-1/2 pounds lean ground beef (90% lean)
1 carton (12 ounces) refrigerated pimiento cheese
Hot mashed red potatoes
Optional: shredded sharp cheddar cheese and sliced jalapeno pepper

Steps:

  • Preheat oven to 350°. In a large skillet, heat oil over medium-high heat. Add onion and celery; cook and stir until crisp-tender, 4-5 minutes. Add carrots and garlic; cook and stir until tender, 1-2 minutes longer. Transfer vegetable mixture to a large bowl. Add eggs, crackers and seasonings. Add beef; mix lightly but thoroughly, Shape into an 8x4-in. loaf in a greased 11x7-in. baking dish. Bake, covered, for 45 minutes. Uncover and bake until a thermometer reads 160°, 15-20 minutes longer. Let stand 10 minutes. Cut into slices; spread with pimento cheese. Serve with potatoes and if desired, shredded cheese and jalapeno.

1/2 cup whole milk
3 slices whole wheat or white bread, cubed
1 large egg, beaten
1 medium onion, chopped
2 tablespoons chili sauce
2 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
2 to 5 drops hot pepper sauce
2 pounds lean ground beef

Steps:

  • In a large bowl, pour milk over bread. Add egg, onion, chili sauce, Worcestershire sauce, salt, pepper and hot pepper sauce; mix thoroughly. Add ground beef; mix well. Shape meat mixture into an 8x4-in. oval. , Bake in a shallow pan at 350° for 1-1/4 hours or until no pink remains. Drain.
