SPINACH-RICOTTA QUICHE

Steps:
- Melt butter in a skillet over medium heat; add onion and cook for 1 minute. Add spinach and cook, stirring occasionally, until starting to wilt, about 1 minute. Cover skillet and cook for 1 minute more, allowing condensation to build inside the skillet. Remove from heat, uncover, and stir.
- Preheat the oven to 375 degrees F (190 degrees C). Press pie pastry into a 9 1/2-inch deep-dish pie pan. Prick bottom and sides with a fork.
- Bake crust in the preheated oven for 10 minutes. Remove from oven and set aside.
- Combine eggs, ricotta cheese, cream, Parmigiano Reggiano cheese, basil, salt, and pepper in a blender or food processor. Blend until smooth.
- Spread spinach and onion mixture evenly over the crust. Pour egg mixture on top.
- Bake in the preheated oven until center of quiche is set and the top is lightly browned, about 40 minutes. Allow to stand for 10 minutes before serving.

Ina Garten's quiche is made with a buttery, crispy and flaky pie crust along with a rich egg filling and some delicious mix-ins including bacon and herbs. It's perfect for weekends and holidays and you can add whatever you want to it like Feta cheese, ham, white cheddar cheese, crab meat, or spinach.

Steps:
- Pulse the flour and 1/2 tsp salt in a food processor until combined. Add the butter and pulse until the flour looks like cornmeal.
- Next, sprinkle in 3 tbsp of ice water and start pulsing until your dough begins to come together.
- Now, pinch the dough with your fingers to make sure it holds together. If it doesn't, add up to 2 tbsp of ice water, 1 tbsp at a time, and pulse the mixture again.
- Transfer the dough to a sheet of plastic wrap and pat it into a disc before wrapping it tightly and placing it in the fridge until firm. Allow it to sit for at least 1 hour or preferably overnight.
- Roll the dough into an 11-inch round, about 1/8-inch thick, on a lightly floured working surface.
- Line a 9-inch fluted tart pan with a removable bottom with the dough, leaving an even overhang of dough all around.
- Press the dough into the edges of the pan and the fluted sides. Then, roll a rolling pin over the top to cut off the excess dough. Discard the excess dough.
- Prick the bottom all over with the use of a fork, and let it chill for about 30 minutes.
- Meanwhile, position an oven rack in the lower third of your oven and preheat the oven to 375 F.
- Press a piece of parchment over your chilled crust and then fill the crust with either pie weights, raw beans, or rice. Put the pan on a baking sheet.
- Bake the crust for about 40 minutes until it turns golden around the edges.
- When it's done, carefully remove the parchment and weights; return the crust to the oven to bake for another 15 minutes until the crust is dry and slightly golden.
- Allow the crust to cool completely for about 30 minutes.
- In a medium skillet, combine the butter with the onion, 1/2 tsp salt, and 1/2 cup water.
- Cook over medium-low heat for about 30 minutes while stirring occasionally, until the onions are completely softened and all the water has evaporated.
- Meanwhile, cook the bacon in a separate medium skillet set over medium-low heat for about 10-15 minutes, stirring occasionally, until the fat has rendered and the bacon is crisp.
- When the onion is cooked, add the bacon to it using a slotted spoon. Then, stir in 1 tsp thyme and 1/2 tsp pepper.
- Now, you spread the onion mixture on the bottom of the crust and sprinkle the top with the Gruyere.
- Next, in a medium bowl, whisk the cream with the eggs and 1/2 tsp salt until well combined.
- Pour the cream mixture over the filling in the crust and top it with the remaining 1 tsp thyme.
- Bake the quiche on the baking sheet until set and golden, about 30 minutes.
- Make sure to let the quiche cool for at least 30 minutes before serving.

- To make the pastry:.
- Combine the flour, salt, and sugar in a large mixing bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs.
- Beat the egg yolk and ice water in a small bowl to blend, add it to the pastry. Work it in to bind the dough until it holds together without being too wet or sticky.
- Squeeze a small amount together, if it is crumbly, add more ice water, 1 tablespoon at a time.
- Form the dough into a disk and wrap in plastic wrap; refrigerate for at least 30 minutes.
- Sprinkle the counter and a rolling pin lightly with flour.
- Roll the dough out into a 14-inch circle about 1/4-inch thick.
- Carefully roll the dough up onto the pin (this may take a little practice) and lay it inside a 9-inch springform pan.
- Press the dough firmly into the bottom and sides so it fits tightly; trim the excess dough around the rim.
- Place the pan on a sturdy cookie sheet so it will be easier to move in and out of the oven, this quiche is pretty heavy.
- Preheat the oven to 375 degrees F.
- To make the filling:.
- Heat a skillet over medium-low heat, coat the pan with oil, and add the onions.
- Slowly cook the onions, stirring, until they caramelize and release their natural sugars.
- Add a couple of tablespoons of water to help the onions break down, if needed.
- Toss in the ham, cook, stirring, for about 10 minutes to get some color on it.
- Remove from heat.
- In a large bowl, beat the eggs until frothy, pour in the cream; season with salt and pepper.
- Arrange the caramelized onions and ham over the bottom of the crust and carefully pour in the cream and egg mixture; the filling should be about 1-inch from the top of the pan.
- Cover loosely with foil and bake for 1 hour and 30 minutes.
- Remove the foil and continue to bake for 15 minutes or until the quiche is set, puffy, and jiggles slightly.
- Remove to a wire rack and let cool for 30 minutes.
- In the meantime make the asparagus salad.
- To make the asparagus salad:.
- In a large pot of boiling salted water, blanch the asparagus for 4 minutes, or until they are just crisp-tender.
- Drain the asparagus, transfer to a bowl of ice water to stop the cooking, and drain well.
- Slice the asparagus into 1/2-inch pieces and put them in a mixing bowl.
- Add the Parmesan and herbs, drizzle the herb and asparagus salad with olive oil, a squeeze of lemon juice, season with salt and pepper.
- Toss gently to combine.
- Loosen the quiche from the sides of the pan by running a thin metal spatula around the inside rim.
- Carefully unmold the ring, and transfer the quiche (with the bottom base) to a serving plate.
- Cut it into wedges, drizzle with a little olive oil, and a few turns of freshly ground black pepper.
- Garnish with the asparagus salad on top.
- NOTE: As hand sizes vary, I have indicated the approximate amount of each per 'my handful' -- adjust accordingly.

- Melt the butter in a pan until foaming, then stir in the flour to make a paste. Cook for 2 mins. Remove from the heat and gradually whisk in the milk. Add the bay leaf, return to the heat, and bring to a simmer. Cook for 4-5 mins, whisking continuously until thickened. Remove from the heat and whisk in 50g parmesan, the mustard and cayenne pepper. Season to taste.
- Put the spinach in a large pan with 50ml boiling water, cover and leave for 2-3 mins to wilt. Drain and leave to cool. Put the spinach in a clean tea towel and squeeze out any excess water. Transfer to a food processor and pulse to roughly chop, then add the ricotta and pulse again to combine. Grate in some nutmeg, then season.
- Heat the oven to 200C/180C fan/gas 6. Remove the bay leaf from the sauce, then spoon a quarter into the bottom of a 24 x 28cm baking dish. Top with a third of the ricotta and spinach mixture, a third of the ham, then 4 lasagne sheets (overlap them slightly if needed). Repeat with the remaining ingredients, finishing with a layer of sauce. Top with the remaining parmesan and the mozzarella. Bake for 45-50 mins or until golden, covering halfway through if it's starting to brown.
