Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 12

1 quart whole milk
3/4 cup arborio rice
1 teaspoon ground cinnamon
1/2 teaspoon coarse salt
1 vanilla bean, split lengthwise
1 1/4 cups granulated sugar
Unsalted butter, for pan
All-purpose flour, for pan
3 pounds fresh ricotta cheese, drained 3 hours or preferably overnight
3 large whole eggs plus 3 large egg yolks, lightly beaten
Confectioners' sugar, for dusting
Strawberry Sauce for Pastiera

Steps:

  • Bring milk to a boil in a large saucepan over medium-high heat. Stir in rice, cinnamon, salt, and vanilla bean. Reduce heat to medium-low; cook, stirring occasionally with a wooden spoon, until rice is very tender and has absorbed all liquid, about 30 minutes.
  • Remove pan from heat. Stir in 3/4 cup granulated sugar. Cover; let cool, stirring occasionally. Discard vanilla bean.
  • Preheat oven to 350 degrees. Butter and flour an 8-inch-round, 3-inch-deep springform pan. In a large bowl, combine the rice mixture, ricotta, whole eggs and egg yolks, and remaining 1/2 cup sugar. Pour into prepared pan. Bake until golden on top and almost set in the center, 65 to 70 minutes; cover with foil if starting to brown too much. Transfer pan to a cooling rack.
  • When cake has completely cooled, run a knife around edge to loosen. Gentlyremove ring; transfer cake to a serving platter. Sprinkle with confectioners' sugar, and serve with sauce.

Yield Makes 8 servings

Number Of Ingredients 9

1/2 cup organic butter
1/2 cup clear honey (preferably unheated)
Finely grated zest of 3 organic lemons
1/2 teaspoon ground vanilla powder or vanilla extract
4 eggs, separated
1 1/4 cups almond flour (or 1 1/4 cups almonds, blitzed into flour)
1 cup fine, organic GMO-free polenta
Generous 1 cup ricotta
1/2 cup flaked (slivered) almonds

Steps:

  • Preheat the oven to 325°F. Line the base of an 8-inch springform tin with baking parchment and set aside.
  • Place the butter, half of the honey, the lemon zest and vanilla in a bowl and use an electric mixer to beat everything until creamy. Add the egg yolks and continue to beat for a further minute. Add the almond flour, polenta and ricotta and fold everything together.
  • Whisk the egg whites in a separate bowl until softly peaking in a separate bowl. Add the remaining honey and continue whisking until peaking again and well blended.
  • Slowly fold the egg whites into the cake mixture. Turn the mixture into the prepared cake tin and sprinkle the flaked almonds evenly over the top. Bake for 40 to 50 minutes or until a toothpick inserted in the center comes out clean. The center of the cake might look slightly wobbly at first, but it will firm up when the cake cools down. Leave to cool completely before removing it from the tin.

SICILIAN CASSATA: RICOTTA CAKE

Sicilian Cassata: Ricotta Cake image

Provided by Food Network

Categories     dessert

Time 39m

Yield 10 servings as dessert

Number Of Ingredients 8

2 pounds fresh, whole milk ricotta
2 cups powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/2 cup chocolate chips
1 cup candied fruit with citron and angelica if possible
1 (10-inch) pre-baked sponge cake (homemade or store bought, pound cake may be used)
Optional: green marzipan for covering the finished cassata

Steps:

  • Place the ricotta into a fine mesh sieve and nestle this over a bowl, place into the refrigerator overnight to allow the excess moisture to drain out before proceeding with the cassata recipe.
  • Place the ricotta into the bowl of a mixer and beat with the paddle attachment until the curds smooth out. Mix the drained and beaten ricotta with 1 cup powdered sugar, vanilla extract, cinnamon, chocolate chips and half the candied fruit. Set aside.
  • Lightly oil a 10-inch springform pan with canola oil. Slice the sponge cake very thinly so that the springform may be lined with it in an even layer. Line the sides and bottom of the pan with the sponge cake. Pour the ricotta filling into the cake-lined pan. Place a final layer of cake over the ricotta filling; this now creates the bottom to the cassata. Before serving, the cassata will be inverted onto this cake bottom. Refrigerate the cassata overnight to firm the filling.
  • Invert the springform pan on a wide platter. Open the hinge and remove the springform sides and bottom.
  • The cassata may now be finished by either covering with a heavy coating of the remaining powdered sugar or may be coated with a thin layer of green marzipan. Either way, the remaining candied fruits should be used to decorate the finished cassata. Slice thinly and serve.

An old family recipe. I use this recipe as the base for my Italian cheesecake.

Provided by Buon Appetito

Categories     World Cuisine Recipes     European     Italian

Time 14h30m

Yield 40

Number Of Ingredients 26

¾ cup wheat berries
2 cups whole milk, or as needed to cover
¾ cup confectioners' sugar
1 orange, zested
1 teaspoon vanilla extract
1 pinch salt
2 ½ cups all-purpose flour
¾ cup confectioners' sugar
1 ½ teaspoons baking powder
1 pinch salt
½ cup unsalted butter at room temperature
3 large eggs, beaten
1 tablespoon vanilla extract
1 tablespoon anisette liqueur
4 8x8-inch disposable aluminum cake pans
3 pounds ricotta cheese at room temperature
12 large eggs at room temperature
1 (12 ounce) jar pineapple preserves
1 ½ cups confectioners' sugar
1 cup heavy whipping cream at room temperature
1 cup chopped dried mixed fruit
¾ cup white sugar
¼ cup anisette liqueur, or more to taste
1 tablespoon vanilla extract
1 pinch salt
2 tablespoons confectioners' sugar for dusting, or to taste

Steps:

  • Place wheat berries into a bowl, cover with water, and soak for 3 days, changing water 2 or 3 times per day. Drain and place wheat berries into a saucepan; pour in milk to cover. Stir 3/4 cup confectioners' sugar, orange zest, 1 teaspoon vanilla extract, and a pinch of salt into wheat and milk. Bring to a boil, reduce heat to low, and simmer until wheat berries are tender, about 1 hour. Refrigerate.
  • Sift flour, 3/4 cup confectioners' sugar, baking powder, and 1 pinch of salt together in a bowl; cut butter into flour mixture, using a pastry cutter, until butter forms small lumps. Make a well in flour mixture and pour 3 beaten eggs into the well; add 1 tablespoon vanilla extract and 1 tablespoon anisette liqueur to eggs. Stir together to make a smooth dough. Refrigerate at least 1 hour.
  • Move a rack into low position in oven and preheat oven to 350 degrees F (175 degrees C). Generously grease and flour the 8x8-inch cake pans.
  • Divide dough into fourths; roll each piece out onto a floured work surface to make a thin 12x12-inch dough square. Fit dough into a prepared cake pan. Repeat with remaining dough to make 4 crusts.
  • Beat ricotta cheese with 12 eggs in a large bowl until mixture is smooth and creamy. Add 1 cup of soaked wheat berries, pineapple preserves, 1 1/2 cup confectioners' sugar, heavy cream, dried mixed fruit, white sugar, 1/4 cup anisette liqueur, 1 tablespoon vanilla extract, and 1 pinch of salt. Stir to combine thoroughly and divide ricotta filling into each crust.
  • Bake cakes on the bottom rack of the preheated oven for 15 minutes; reduce heat to 225 degrees F (105 degrees C) and bake for 1 hour and 15 minutes. Turn off heat and let cakes cool in the oven with the door open, about 30 minutes. Let cakes cool to room temperature, then chill at least 2 hours (up to overnight). Sprinkle each cake with about 1 1/2 teaspoon confectioners' sugar, or to taste, before slicing.

  • In a mixing bowl, beat together the ricotta cheese, orange zest, granulated sugar, vanilla extract and 1 tablespoon of the triple sec. Once mixed, place one-third of the mixture in a small bowl, cover and refrigerate until you are ready to serve.
  • Add the candied citrus peel to the remaining ricotta mixture in the mixing bowl and stir to combine. Set aside.
  • Line the bottom of a 5-cup loaf pan with a piece of parchment paper that has been cut to fit the bottom of the pan. Arrange 4 of the cake slices side by side in the bottom of the pan – tearing the cake into smaller pieces if necessary to create a solid layer of cake. Evenly drizzle 1 tablespoon of the triple sec and 1 tablespoon of orange juice over the cake layer – allowing it to soak in. Spoon about 1/3 of the ricotta and candied citrus mixture over the cake, evenly spreading over the cake.

  • Classic Carrot-Coconut Cake. Can't decide between coconut cake or carrot? You don't have to. Powdered ginger and cinnamon add warming spice to this mash-up of the two classic Easter desserts.
  • Banana Pudding Cheesecake Bars. Another mash-up to keep on your radar: These easy bars start with a Nilla wafer crust. The second layer is a silky banana cheesecake, and the top is a sour cream whip.
  • Mochi Cake, Any Way You Want It. Coconut seems to go hand-in-hand with Easter desserts. But, if you want to get really creative, this recipe was made for improvisation.
  • Easter Egg Cake with Strawberry Frosting. The springy pink frosting on this Easter cake tastes like a strawberry malt. Need more convincing? The center is filled with juicy strawberries and the top is decorated to look like a nest complete with chocolate-malt eggs.
  • Grated Shortbread Bars With Rose Jam. This delicate-but-chewy shortbread recipe calls for rose jam, but raspberry, apricot, or whatever tastes like spring to you would work just as well.
  • Swirl Spice Cake. This might look like a relative of everyday coffee cake, but don’t be fooled. The layer of streusel in this marbled loaf gets a complex punch of flavor from a coffee spice blend that includes dried orange peel, cardamom, and fennel seeds.
  • Cadbury Egg Tart. This is classic Easter kitsch in the form of a decadent tart. Watch everyone's eyes light up when you cut a slice to reveal the gooey yellow center.
  • Italian Easter Bread. This version of Italian Easter bread, or colomba di Pasqua, is flavored with vanilla, almond, and candied orange peels. The traditional dove-shaped loaves take about 18 hours to make, but we’ve broken the process into several easy steps with an option for baking in springform pans.
  • Mini Strawberry Eton Mess. Looking for an easy-to-assemble Easter dessert? This classic British combo layers whipped cream with fresh strawberries and store-bought meringues for a super fresh, playful dessert that's full of fun texture.
  • Frozen Avocado Cake. The crust of this cake is reminiscent of the cookie center of a Twix bar. Meanwhile, sweetened condensed milk accentuates the buttery quality of ripe avocados in the cheesecake filling.

Place about 1 ½ cups of the raspberries into a small mixing bowl and dust the berries with cornstarch.
