- In a medium saucepan, combine the sugar, cocoa, and 1/2 cup of milk.
- Stir constantly over medium heat until the hot chocolate mixture comes to a boil. Cook, stirring constantly for 2 minutes.
- Add the remaining milk and heat, do not boil. Remove from heat and stir in vanilla if desired.
- Serve hot with mini marshmallows. Makes six servings.

Stir until melted (though there will still be lovely particles of chocolate throughout). If it's too chocolaty for you, splash in a little more milk. Add a splash of vanilla extract. If it's not quite sweet enough for you, add 1 teaspoon or so of sugar. Serve in mugs with whipped cream.

- Measure water into a 2-quart sauce pan. Add sugar, cocoa and salt. Heat water over medium heat. Stir mixture until cocoa dissolves completely. Gently bring mixture to a boil. Reduce the heat to a fast simmer and simmer it for about 5 minutes. Finally add the evaporated milk and stir to blend. Reheat briefly, but don't boil. Pour the hot chocolate into small mugs.
- This recipe makes 4 6-ounce size servings.
- I added a spoonful of whipped topping on the top of each filled mug. It was delicious!

- Put water in small pot to boil.
- Once boiling, add cocoa mix and stir with whisk until well blended. When bubbly, continue to stir for another 2-3 minutes.
