Steps:
- Generously butter the bottom and sides of a 9x13 pan and set aside.
- In a large pot over medium-low heat melt the butter.
- Once the butter just begins to bubble, add the marshmallows to the pot. Continue to melt the marshmallows over medium-low heat, stirring often, until they are completely melted and combined with the butter.
- Add the vanilla and stir to evenly combine.
- Next, pour 1 1/2 cups of semi-sweet mini chocolate chips into the pot. Melt over medium-low heat while stirring constantly and scraping the bottom of the pot with your spoon. It's important to stir constantly as chocolate burns easily. Once the chocolate chips are completely melted and incorporated remove the pot from the heat.
- Pour the rice cereal into the pot and gently fold into the chocolate-marshmallow mixture until the cereal is coated.
- Transfer the marshmallow cereal mixture to the buttered pan. Gently press the mixture into the pan so that it's even, but take care not to over press your Rice Krispies as they will become too dense and hard. For the final touch, sprinkle with 1/2 C of mini chocolate chips. Allow the Chocolate Rice Krispies Treats to rest for 1 hour before serving. Store covered and at room temperature for up to 5 days.

GOOEY RICE KRISPIE TREATS COVERED IN CHOCOLATE
These are very gooey, thick and rich treats with a dark chocolate layer on the top to put you over the edge! When I made this, the flavor and texture was spot-on but the bars were a little thin. I doubled all of the ingredients (not including the choco layer) here for a thicker bar. Choose whichever way works best for you.

DECADENT CHOCOLATE COVERED RICE KRISPIE TREATS
The smooth, creamy chocolate just melts in your mouth. Corn syrup gives these treats an inviting glossy look, toasted coconut marshmallows add a rich flavor, and you can top these with any color candy, or even omit them. These went fast at our last Christmas party. We couldn't stop eating them!

Steps:
- For The Rice Krispie Treats: Grease a 13x9x2 pan and set aside. In a large saucepan, melt the butter or margerine over low heat, then add the marshmallows and stir until melted.
- Remove from heat, and using a buttered spatula stir in the cereal until all of it is coated with the marshmallows.
- Press cereal into the greased pan with the spatula. Let cool.
- To Make The Ganache: Using a double boiler, melt the dark chocolate, butter, and salt together, stirring often. Add the milk slowly, using more as necessary to reach a creamy consistency.
- Add the corn syrup slowly while stirring, until you see the chocolate turn glossy.
- Pour chocolate over Rice Krispie Treats and allow to cool for 5 minutes before dotting with candies (I made 5 rows of 10 pieces of candy, which made it easy to cut 50 squares of treats).
- Cool at room temperature, cut into squares, and enjoy!
- *NOTE: You can substitute 4 cups of mini marshmallows for all the marshmallows in the recipe if you prefer.

Steps:
- Grease, or line a slice pan or square cake pan with non-stick baking paper.
- In a sauce pan add Butter, Sugar, Cocoa, Honey, and water, and heat on a medium setting until Butter is melted, and sugar has dissolved let it simmer for 3-4 minutes stirring occasionally ( I use a large sauce pan for this step, One that will fit the 5 Cups of rice bubbles so it is less messy and only one pot to clean).
- Take the sauce pan off the heat and add the Rice bubbles straight into the saucepan with the chocolate mixture, mix together until all is well combined
- transfer the rice bubble mixture into the prepared tin and press in very firmly.
- Put in the Fridge for 30-45 minutes or until the mixture is set, cut into preferred sizes and enjoy.
