This is a fast, easy, and healthy quiche crust that only takes minutes. It can be used with any quiche and may give you more creative ways in which to use rice.

1 cup water
1 cup instant rice
1 tablespoon butter
1 pinch salt
cooking spray

Steps:

  • Bring water to a boil in a small saucepan. Stir in rice, cover pan, and remove from heat. Allow to stand until water is absorbed, about 5 minutes. Stir in butter and salt, if desired.
  • Spray a 9 inch pie pan with nonstick cooking spray. Spoon cooked rice into pan. Use the back of a spoon to firmly press rice along the bottom and sides of the pan to create a crust. Use crust with quiche fillings of choice, and bake as directed for quiche.

Recipe video above. This is a recipe for quiche and pie crusts, both of which are made using shortcrust pastry. This is a great, EASY classic quiche crust. Quiche crusts are just made with shortcrust pastry. Made using a food processor, very slightly adapted from this recipe by Emeril Lagasse.Inactive chill time: 1 hour. This is the recipe I've been using for years and years, and it has never failed me! Makes pastry for 1 x 23cm / 9" pie dish or tart tin (serves 8 - 12 people).

1 1/4 cups (185g / 5.6 oz) plain white flour ((all purpose flour))
1/2 tsp salt
100g / 7 tbsp unsalted butter, cold, cut into 1cm/ 1/3" cubes
3 tbsp ice cold water (+ more as required)

Steps:

  • Place flour, salt and butter in a food processor.
  • Pulse 10 times or until it looks like breadcrumbs.
  • With the motor running on low, pour 2.5 tbsp of water into the tube feeder.
  • Turn up to high and blitz for 30 seconds or until it turns into a ball of dough. Initially it will look like breadcrumbs, then it will turn into a ball of soft dough - some random escaped bits is fine. If it doesn't look like its coming together at 20 seconds, add another 1/2 tbsp of water. Don't blitz longer than 30 seconds at most.
  • Form a disc, wrap in cling wrap. If there are escaped crumble bits, that's fine - just press them in. Refrigerate for 1 - 3 hours.
  • Preheat oven to 200C/390F (standard) or 180C/350F (fan forced)
  • Sprinkle work surface with flour, unwrap dough and place on the flour. Sprinkle top with flour, then roll out into a 27cm/11" round.
  • Gently roll the pastry so it wraps around the rolling pin.
  • Unroll it over the quiche pan or pie dish - 23cm / 9".
  • Press the pastry into the edges of the quiche pan, patching up edges if required (if pastry doesn't quite reach top of rim).
  • Roll the rolling pin across the top to cut off the excess pastry.
  • Optional extra "safe measure" refrigeration - 15 minutes. See (Note 2).
  • Place a large piece of parchment paper over the pastry, then fill with baking beads or lots of rice or dried beans to weigh it down. (Note 3)
  • Bake for 20 minutes, then remove from oven.
  • Turn oven DOWN to 180C/350F (or 160C/320F fan).
  • Use excess paper to CAREFULLY remove hot beads, then return to oven for 10 minutes or until base is light golden.
  • Remove from oven and fill with chosen Quiche Filling. Quiche Lorraine, Salmon Quiche, Italian Sausage or your other filling of choice.
  • The pastry will not be 100% cooked, it finishes cooking with the filling. It's cooked enough so the crust will not go soggy.

2 cups cooked brown rice, cooled (you'll need about 2⁄3 cup uncooked brown rice to yield 2 cups cooked).
1¼ cups cheddar cheese, finely grated
¼ cup Parmesan cheese, finely grated
5 large eggs
½ teaspoon herbes de Provence
1 pinch nutmeg
To taste salt and pepper
2 cups broccoli florets, blanched
6 ounces cremini mushrooms, chopped
4 scallions, sliced

Steps:

  • 1 Preheat the oven to 450°F. 2 Combine the rice, ¼ cup of the cheddar cheese, the Parmesan cheese, and 1 egg. 3 Press the mixture into the bottom and up the sides of a 9-inch pie pan to ¼-inch thickness. 4 Bake for 7 minutes until the crust begins to brown. 5 In a large bowl, beat the remaining 4 eggs with the herbes de Provence, nutmeg, salt, and pepper. 6 After the crust has baked, lower the oven temperature to 375°F. 7 Layer the broccoli, mushrooms, remaining 1 cup cheddar cheese, and scallions onto the crust. 8 Pour the egg mixture over the vegetables and cheese. Bake for 35 to 40 minutes until set and the top is golden.

2 cups cooked brown rice
1/4 cup cheddar cheese (finely grated)
1 egg
4 eggs
1 cup milk
2 cups broccoli (cut into bite sized pieces and blanched)
1 cup sharp cheddar cheese (grated)
4 green onions (sliced)
1 pinch nutmeg (optional)
salt and pepper to taste

Steps:

  • Mix the rice, cheese and egg in a bowl.
  • Press the rice mixture into a pie plate, about 1/4 inch thick.
  • Bake in a preheated 450F/230C oven until the edges and bottom just start turning golden brown, about 5-7 minutes.
  • Mix the eggs, milk, broccoli, cheese and green onions in a bowl and season with salt and pepper.
  • Pour the egg mixture into the pie crust.
  • Bake in a preheated 375F/190C oven until golden brown and set in the center, about 30-35 minutes.

  • 3. Beat the egg very well. If you want to add herbs do it now.

A classic quiche is not exactly a weeknight-friendly meal, so we use a shortcut to create a cheesy crust using cooked rice as a base. Filled with cheddar and broccoli, this dish makes healthy leftovers for breakfast, lunch or dinner.

6 oz Broccoli florets, chopped
1 clove Garlic, chopped
3 oz Cheese, sharp cheddar, grated
6 Eggs
1/4 cup + 1/4 cup Sour cream
1/2 tsp Salt

~2 cups Leftover rice (from Wed)
1 oz Cheese, sharp cheddar, grated
1/4 tsp Salt

1/4 cup Pecan halves, chopped

3 Tbsp Oil, cooking

Steps:

  • Heat oven to 400 F / 204 C degrees.
  • Spray a pie dish with cooking spray (if making more or less than 4 servings, these will bake more evenly as mini quiches in a muffin pan; make 2 mini quiches per person). Whisk eggs (just the portion for the crust) and combine with rice, cheese (just the portion for the crust), salt and pepper. Gently press into bottom and sides of the pie dish. Bake until rice begins to turn golden brown, ~8 minutes (if making mini quiches, skip this initial baking step).
  • In a mixing bowl, combine eggs, first portion of sour cream (reserve half for serving), salt and pepper. Beat with a whisk until smooth.
  • Top crust with cheese and then broccoli. Pour egg mixture over top.
  • Bake until eggs are cooked through, ~25 minutes for a full-size quiche and ~12 minutes for mini quiches.
  • While quiche is baking, make vinaigrette by whisking together vinegar, mustard and oil. Season to taste with salt and pepper. Toss vinaigrette with greens, pecans and cranberries.
  • Slice and serve quiche with sour cream on top. Enjoy with salad on the side.

1/3 cup milk
10 ounces egg substitute

  • Combine crust ingredients. Mix well. Press over sides and bottom of a 9" pie pan. Microwave on high till crust is set, about 2 minutes.
  • In a 2-quart casserole dish, combine veggies and margarine. Microwave on high for 4-5 minutes or till veggies are tender-crisp.
  • In a small bowl mix all other ingredients. Add this to the veggie mixture. Return to microwave and heat on medium for 4-6 minutes. Stir often, remove when mix starts to set around the edges of the bowl.

This recipe came from Cooking Light magazine, we aren't usually quiche fans but this was awsum! A tip: I like to put leftover cooked rice in the freezer, this way I always have precooked rice when I need it and I don't waste the leftovers. 2 cups cooked brown rice
14 ounces cooked chopped broccoli
4 eggs
8 ounces grated cheddar cheese (Swiss cheese is a great substitution, especially for low sodium diets)
2/3 cup whole milk
1 (4 ounce) can mushroom stems and pieces, drained

Steps:

  • Preheat oven to 375 degrees.
  • Generously grease a 9" deep dish pie plate.
  • Combine the rice, 1/2 the cheese, and 1 egg and press into bottom of pie plate.
  • Beat remaining eggs; add salt and pepper to taste, (cooled slightly) broccoli, mushrooms, and milk. Pour over rice mixture in pie dish.

2 cups half-and-half
2 large eggs
2 large egg yolks
1/2 teaspoon kosher salt
Freshly ground black pepper
Freshly grated nutmeg
Pinch cayenne or paprika
2 to 3 cups prepared vegetables, such as braised leeks, broccoli, sauteed onions, mushrooms, spinach, peppers, tomatoes
4 ounces, or about 1 cup grated or crumbled cheese, such as Cheddar, goat cheese, Gruyere, Parmesan, fontina, provolone, mozzarella, Gouda, solo or combined

Steps:

  • Preheat oven to 350 degrees F. For the pan: Brush pan with the soft butter and sprinkle the grated Parmesan evenly on top. Or for a Quick Crust, pulse bread into crumbs in a food processor. Heat butter or oil in a large skillet over medium heat; add bread crumbs and stir until evenly toasted, about 5 minutes. Evenly spread crumbs in a 9-inch glass or ceramic pie pan. Place pan on a baking sheet.

1/2 g (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion Cream Cheese Spread
2/3 g milk
1 cup KRAFT Shredded Cheddar Cheese
1/2 g OSCAR MAYER Deli Fresh Honey Ham, chopped

Steps:

  • Heat oven to 350°F.
  • Mix rice and 1 lightly beaten egg; press onto bottom and up side of 9-inch deep-dish pie plate sprayed with cooking spray to form crust.
  • Whisk remaining eggs and cream cheese until blended. Add milk; mix well. Stir in cheese and ham; pour into crust.
  • Bake 40 min. or until center is set and top is lightly browned. Let stand 5 min. before serving.
