RHUBARB CHILI
This chili was a fun experiment that my kids gave 5 stars! Rhubarb is very popular in desserts and should make an appearance in a main dish occasionally. Serve with your favorite chili toppings, or eat on its own.

Steps:
- Heat olive oil in a large pot over medium heat. Add rhubarb, onion, red bell pepper, and salt; cook and stir until tender, about 5 minutes. Add ground turkey and garlic and cook until turkey starts to brown, about 5 minutes.
- Stir chili powder, cocoa powder, white sugar, cumin, cinnamon, allspice, and cayenne pepper into the pot; cook and stir for 3 minutes. Add blacks beans, diced tomatoes, and corn; mix well to combine. Bring chili to a boil, reduce heat and simmer, covered, until thickened and flavors are combined, about 30 minutes. Season with salt and black pepper.

RHUBARB MIMOSA

Steps:
- Combine the rhubarb, sugar and 2 cups water in a medium saucepan. Bring to a boil over medium-high heat and cook, stirring occasionally, until the rhubarb is slightly broken down, about 10 minutes.
- Remove from the heat and add the mint; let sit 1 minute, then strain. The mixture should be syrupy; if it's too watery, return to the saucepan and continue cooking until slightly reduced. Cover and refrigerate until cool.
- Divide the rhubarb syrup among 6 champagne glasses and top with the prosecco.
RHUBARB CAKE
I got this great recipe from my mother-in-law who's been making it for years! It doesn't have a strong rhubarb taste. It's sweet and moist. I hope you enjoy making it as much as I do. I always try to use fresh rhubarb, never frozen and then thawed because it doesn't work well.

Steps:
- First, mix milk with vinegar and set aside.
- Next, blend brown sugar, butter and egg.
- Add and stir baking soda into the milk/vinegar mixture.
- Pour milk mixture into the brown sugar, butter and egg mix and blend.
- Next, add flour and vanilla and mix well.
- Then add the Rhubarb chunks.
- Pour batter into well-greased 9x13 pan.
- Mix up the topping ingredients and sprinkle on top of the cake batter.
- Bake at 325 degrees for 50-60 minutes. The cake should be set in the center. Enjoy! This is a very moist Rhubarb Cake recipe.
RHUBARB CHICKPEA CHUCK
This is a family favorite. My aunt found it in a local newspaper about 30 years ago--it won first prize in a rhubarb recipe contest. It was submitted by a Mrs Marcella Strand. The meat will be very tender in a slightly sour sauce. Very good over mashed potatoes or with French bread.

Steps:
- Cut steak into serving pieces.
- Melt butter in dutch oven or roaster on top of stove& brown steak on both sides.
- Remove steak.
- Combine remaining ingredients in pan, heat& stir to dissolve buillion cube.
- Add steaks, cover& cook slowly for about 3 hours in 350 F oven or until meat is tender.
- Turn meat occasionally during cooking.
- Serve with mashed potatoes or slices of rye or French bread.
- I usually make this in the crockpot.
- I brown the steak first then cook on low for 8 to 8 1/2 hours on Low.
