This chili was a fun experiment that my kids gave 5 stars! Rhubarb is very popular in desserts and should make an appearance in a main dish occasionally. Serve with your favorite chili toppings, or eat on its own.

2 tablespoons extra-virgin olive oil
3 cups chopped fresh rhubarb (1/2-inch pieces)
1 onion, chopped
1 large red bell pepper, chopped
1 teaspoon sea salt
1 ½ pounds ground turkey
3 cloves garlic, minced
2 tablespoons chili powder
2 tablespoons unsweetened cocoa powder
1 tablespoon white sugar
1 ½ teaspoons ground cumin
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
⅛ teaspoon ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
2 (14.5 ounce) cans diced tomatoes
1 cup frozen white corn
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add rhubarb, onion, red bell pepper, and salt; cook and stir until tender, about 5 minutes. Add ground turkey and garlic and cook until turkey starts to brown, about 5 minutes.
  • Stir chili powder, cocoa powder, white sugar, cumin, cinnamon, allspice, and cayenne pepper into the pot; cook and stir for 3 minutes. Add blacks beans, diced tomatoes, and corn; mix well to combine. Bring chili to a boil, reduce heat and simmer, covered, until thickened and flavors are combined, about 30 minutes. Season with salt and black pepper.

Number Of Ingredients 4

4 stalks rhubarb, cut into 1/2-inch pieces (about 2 cups)
1 cup sugar
1 sprig mint
1 750-ml bottle prosecco, chilled

Steps:

  • Combine the rhubarb, sugar and 2 cups water in a medium saucepan. Bring to a boil over medium-high heat and cook, stirring occasionally, until the rhubarb is slightly broken down, about 10 minutes.
  • Remove from the heat and add the mint; let sit 1 minute, then strain. The mixture should be syrupy; if it's too watery, return to the saucepan and continue cooking until slightly reduced. Cover and refrigerate until cool.
  • Divide the rhubarb syrup among 6 champagne glasses and top with the prosecco.

I got this great recipe from my mother-in-law who's been making it for years! It doesn't have a strong rhubarb taste. It's sweet and moist. I hope you enjoy making it as much as I do. I always try to use fresh rhubarb, never frozen and then thawed because it doesn't work well.

1 cup(s) milk
1 tablespoon(s) vinegar
1 1/2 cup(s) brown sugar
1/2 cup(s) butter
1 - egg
1 teaspoon(s) baking soda
2 cup(s) flour
1 teaspoon(s) vanilla
2 cup(s) raw rhubarb (cut into chunks)
TOPPING
1/3 cup(s) sugar
1/2 teaspoon(s) cinnamon

Steps:

  • First, mix milk with vinegar and set aside.
  • Next, blend brown sugar, butter and egg.
  • Add and stir baking soda into the milk/vinegar mixture.
  • Pour milk mixture into the brown sugar, butter and egg mix and blend.
  • Next, add flour and vanilla and mix well.
  • Then add the Rhubarb chunks.
  • Pour batter into well-greased 9x13 pan.
  • Mix up the topping ingredients and sprinkle on top of the cake batter.
  • Bake at 325 degrees for 50-60 minutes. The cake should be set in the center. Enjoy! This is a very moist Rhubarb Cake recipe.

This is a family favorite. My aunt found it in a local newspaper about 30 years ago--it won first prize in a rhubarb recipe contest. It was submitted by a Mrs Marcella Strand. The meat will be very tender in a slightly sour sauce. Very good over mashed potatoes or with French bread.

3 -3 1/2 lbs boneless beef chuck steaks (one inch thick)
2 tablespoons butter
1 (398 ml) can garbanzo beans (chick peas)
1 (284 ml) can condensed tomato soup
2 cups chopped rhubarb
1/4 cup chopped onion
1 -2 garlic clove, minced
1 beef bouillon cube
2 tablespoons sugar
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon paprika

Steps:

  • Cut steak into serving pieces.
  • Melt butter in dutch oven or roaster on top of stove& brown steak on both sides.
  • Remove steak.
  • Combine remaining ingredients in pan, heat& stir to dissolve buillion cube.
  • Add steaks, cover& cook slowly for about 3 hours in 350 F oven or until meat is tender.
  • Turn meat occasionally during cooking.
  • Serve with mashed potatoes or slices of rye or French bread.
  • I usually make this in the crockpot.
  • I brown the steak first then cook on low for 8 to 8 1/2 hours on Low.
