A simple red wine sauce with brown sugar, garlic, paprika, salt, and pepper makes this dish simply yummy! Braised chicken breasts, brazenly good taste.

1 tablespoon olive oil
1 tablespoon minced garlic
3 pounds skinless, boneless chicken breast halves
1 tablespoon paprika
1 cup brown sugar
1 cup red wine
salt and pepper to taste

Steps:

  • Heat oil in a large skillet over medium high heat. Cook garlic in oil until tender. Place chicken in the skillet, and cook about 10 minutes on each side, until no longer pink and juices run clear.
  • Drain oil from skillet. Sprinkle chicken with paprika and 1 cup brown sugar. Pour red wine around chicken. Cover, and simmer about 15 to 20 minutes; lightly baste chicken with wine sauce while cooking. Season to taste with salt and pepper.

I don't remember where I got this recipe. But was looking for something to do with some red wine I had left over and found this.A simple red wine sauce with brown sugar, garlic, paprika, salt, and pepper makes this dish simply yummy!

1 tablespoon olive oil
1 tablespoon minced garlic clove

1/2 cup chopped onion
3 garlic cloves, minced
3 tablespoons chopped red peppers
2 tablespoons flour
2 cups beef broth
1 cup red wine
1 tablespoon sugar (to taste)
1 bay leaf
1 teaspoon dried thyme leaves
2 teaspoons parsley
3/4 teaspoon rosemary
salt and pepper (to taste)

Steps:

  • Heat butter in a large saucepan over medium heat and add onion, garlic, and peppers.
  • Saute for 3 minutes and add flour until incorporated.
  • Add next 7 ingredients and bring to a boil.
  • Once thickened, reduce heat to low and simmer for 10 to 15 minutes.
  • If mixture becomes too thick add additional broth.
  • Serve hot.

Pan seared chicken breasts with a red wine reduction sauce is one of those dishes that will have your friends and family applauding. It's amazing what a difference a simple sauce can make. Although it tastes like it came from a little corner bistro, it's extremely quick and simple. Original recipe: http://thegraystable.blogspot.com/2008/03/chicken-with-red-wine-reduction.html I did not use flour. Instead I substituted a Tom Douglas's Rub with Love chicken rub and Emeril's Chicken Rub along with my own Italian style bread crumbs. It came out amazing, just what I wanted.

4 boneless skinless chicken breasts
salt and black pepper
flour (for dredging)
3 tablespoons unsalted butter
1 tablespoon olive oil
1/4 cup chicken stock
1/4 cup red wine
1 teaspoon Dijon mustard

Steps:

  • Put a good handful of flour in a bowl, pie plate, or deep dinner plate, and keep it near the stove. Mix the sauce ingredients together and keep handy also.
  • Heat 2/3 of the butter and the olive oil in a large skillet (12") over medium heat. Test the oil/butter heat by flicking a little of the flour into it. If it sizzles and turns brown pretty quickly, it's ready to cook the chicken breasts. Dredge one of the chicken breasts in the flour, coating both sides well. Increase the heat of the pan to medium high when you place the first breast in the pan, dredge the next one and place in the pan, and so forth until all are in the pan. Cook for 3 or 4 minutes, then flip them in the same order as you placed them in the pan, and cook for 3 or 4 more minutes.
  • When done, move the chicken breasts to a plate and keep them warm in the oven. Turn heat to high, add the chicken stock, red wine, mustard mixture to the pan and boil. Be sure and stir it well, all the time scraping up the bits of chicken, flour mix, etc. from the bottom of the pan. Tilt the pan to one side, and mix in the remaining Tablespoon of butter. Spoon the sauce over the chicken breats and serve immediately.

1 small onion, roughly chopped
1 garlic clove, crushed
6 ounces chicken breasts, diced
2 ounces bacon, diced
2 ounces mushrooms, sliced
10 ounces tomato and basil pasta sauce
2 tablespoons red wine
6 ounces penne
1 ounce flat leaf parsley, finely chopped
parmesan cheese, grated

Steps:

  • Heat the oil in a pan and lightly fry the onion and garlic for 1 minute.
  • Add the chicken and bacon and cook for a further 2-3 minutes until sealed.
  • Add the mushrooms and stir in the pasta sauce and wine.
  • Cover and simmer for 10 minutes.
  • Meanwhile, cook the pasta in lightly salted boiling water following instructions on the pack.
  • Drain the pasta and spoon into a dish.
  • Top with the chicken pasta sauce, sprinkle with parsley and serve with parmesan cheese.

This recipe came from an experiment of mine. I was trying to think of new ways to cook chicken in a healthy way, using as little fat as possible. I noticed the different types of vinegar in my kitchen and decided to try red wine vinegar. The result was wonderful! However for those who don't like the strong taste of vinegar you can use less, or use a stronger tasting spaghetti sauce.

2 fresh chicken breasts or 2 frozen chicken breasts, thawed
1 teaspoon olive oil
1/2 cup red wine vinegar
1 (26 ounce) can spaghetti sauce (any kind will do but I prefer one with garlic)
4 cups pasta (enough for 4 people)

Steps:

  • Fill a large sauce pan with water on high heat.
  • Allow to boil and add pasta.
  • Cook until al dente and rinse with hot water.
  • Set aside.
  • Heat a non-stick frying pan with oil on med heat.
  • Place chicken breast in pan with 1/3 of vinegar.
  • Cook chicken turning over until chicken is cooked through.
  • Allow chicken to lightly simmer in vinegar by pouring vinegar over top of chicken while cooking.
  • When chicken is cooked through remove carefully from pan and cut into strips, returning to pan on lowest setting to keep warm.
  • (Its alright to allow the chicken to slightly brown, but do not allow to dry out). Empty can of spaghetti sauce into sauce pan.
  • Over medium heat stir until heated through.
  • (Add any chopped vegetables to make a chunkier sauce- such as chopped tomatoes, green pepper, onion, zucchini, broccoli, carrots, etc.) Add chicken to sauce before serving.
  • (Alternatively add sauce to pasta and sprinkle pieces of chicken over top).
