Homemade Red White and Blueberry Popsicles (or Bomb Pops) with coconut milk, berries, and a touch of honey. A healthy dessert for the Fourth of July!

Number Of Ingredients 8

1 cup frozen strawberries
1/2 cup water
1 teaspoon honey
1/2 cup coconut milk
1 teaspoon honey
1 cup frozen blueberries
1/2 cup water
1 teaspoon honey

Steps:

  • In a vitamix , blend strawberries, water, and honey.
  • Scoop 1 tablespoon of mixture into each popsicle mold.
  • Freeze popsicles for 40 minutes.
  • Blend coconut milk and honey.
  • Remove popsicles from freezer; scoop 1 tablespoon of coconut mixture into each mold, then insert popsicle sticks.
  • Freeze popsicles for 40 minutes.
  • Blend blueberries, water, and honey.
  • Remove popsicles from freezer and scoop 2 tablespoons of blueberry mixture into each popsicle mold.
  • Freeze popsicles for 1 hour.
  • Serve.

This came in a recent Momsense magazine. Since blueberry season just started here in Virginia, it was the perfect find for me today. It makes wonderfully tasty and healthy pops...eight 5-ounce pops to be exact. Another win in the battle to get rid of HFCS in this house.

1 pint fresh blueberries
1 cup vanilla yogurt
1 cup milk
honey or maple syrup, to taste

Steps:

  • Blend blueberries, yogurt, milk, and sugar until smooth.
  • Pour mixture into eight 5-ounce paper cups.
  • Place foil over the top of each cup.
  • Pierce the center of the foil and insert a wooden craft stick as the handle.
  • Freeze up to six hours.
  • Before serving, dip cups in warm water for a few seconds.
  • Remove paper and foil.
  • Send children outside to drip and make a mess. Stand at window and wave at them while you eat yours.

Got 30 minutes? Then you can make these quick patrioticly-hued, red, white, and blue pops, which are a perfect dessert for the Fourth of July. You can also make these a non-holiday cool treat using other berries or fruit in other colors.

2 cups halved hulled strawberries
6 tablespoons sugar, divided
5 tablespoons lime juice (from 3 limes), divided
1/2 cup full-fat plain yogurt
3 tablespoons heavy cream
2 cups blueberries

Steps:

  • In a blender, combine strawberries, 2 tablespoons sugar, and 1 1/2 tablespoons lime juice. Puree, scraping down sides as needed. Pour through a fine-mesh sieve into a bowl, pressing on solids; discard solids. Divide puree among six 4-ounce or eight 3-ounce ice-pop molds. Freeze until firm, about 30 minutes.
  • Combine yogurt, cream, and 2 tablespoons each sugar and lime juice. Remove molds from freezer and top with yogurt mixture; insert ice-pop sticks. Freeze until firm, about 30 minutes.
  • In clean blender, puree blueberries, remaining 2 tablespoons sugar, and remaining 1 1/2 tablespoons lime juice. Pour through clean sieve into a bowl, pressing on solids; discard solids. Remove molds from freezer and top with blueberry puree. Freeze until solid, 6 hours more (or up to 1 week). Just before serving, briefly run molds under hot water to release pops.

This recipe is from Splenda.com. It is very easy to make and delicious. A great summertime treat for fresh berries and the presentation is so elegant. This would be a great tart for the 4th of July. The recipe calls for a premade crust. I used Flaky Pie Crust Recipe #20984 by Teresa M.

1 single pie crust (Premade or make your own.)
1/2 cup Splenda granular
2 tablespoons cornstarch
1 pinch salt
1 cup reduced-fat milk
2 large eggs, lightly beaten
4 ounces neufchatel cheese, softened
1 teaspoon vanilla
1 teaspoon unflavored gelatin
1/2 cup water
1 1/2 tablespoons Splenda granular
1 1/2 tablespoons fresh lemon juice
1 pint fresh strawberries
1/2-3/4 cup fresh blueberries

Steps:

  • For the crust, preheat oven to 425 degrees, fit the crust into a 9-inch tart pan.
  • Trim the edges to top of tart pan, line with foil and fill with pie weights or dried beans.
  • Bake 10 minutes; remove the weights and foil, continue baking an additional 5 minutes or until crust is golden.
  • Remove from oven and cool on a wire rack.
  • For the filling, combine the Splenda, cornstarch, salt, milk and eggs in a heavy saucepan; wisk until the mixture is smooth.
  • Over medium heat, bring to a boil while stirring constantly; reduce heat to low and cook for 1 minute or until mixture thickens.
  • Beat the Neufchatel cheese until light and fluffy and gradually add the hot custard mixture to beaten cheese, beating until well blended.
  • Stir in the vanilla and spoon filling into cooled tart shell.
  • Lightly press plastic wrap on pie surface; allow to cool completely.
  • While the filling is cooling, sprinkle the gelatin over cold water in a small saucepan; stir and let stand 1 minute.
  • Stir in the Splenda and lemon juice; bring to a boil over medium heat, stirring until gelatin dissolves.
  • Allow the mixture to cool to room temperature.
  • Cut the strawberries in half and arrange in 2 rows from the outside of tart in, spoon the blueberries in the center.
  • Lightly spoon the cooled glazed over the berries, chill for a minimum of 1 hour before serving.

This was found in Family Fun magazine July 2007 issue. I just used regular popsicle molds, but their suggestion for the cones would make them look like more authentic Bomb Pops.

3 cups vanilla yogurt
red food coloring
white food coloring
blue food coloring
wax paper
6 sugar ice cream cones
6 wooden popsicle sticks

Steps:

  • To make a half dozen pops, tint 1/2 cup of the yogurt with red food coloring and 1 1/2 cups with blue food coloring. Leave the rest plain.
  • Make waxed paper cone liners by folding six 12-inch square sheets into triangles, wrapping each around a sugar cone, and using tape to hold the shape. Then place the paper cones inside the sugar cones.
  • Fill each cone with 1 tablespoon red yogurt, followed by 2 tablespoons white yogurt, then 3 tablespoons blue yogurt. Insert a Popsicle stick and freeze the pops until firm, about 4 hours, using the cone box with six circles cut out to keep them upright.
