These Red, White and Blue Swirl Cupcakes are perfect for celebrating July 4th or Memorial Day. They are festive and taste amazingly delicious.

1 box of french vanilla cake mix
3 eggs
1/2 C (1 stick) of softened unsalted sweet cream butter
1 C whole milk
1TBSP pure vanilla bean paste
Red and Sky Blue gel food coloring
cupcake liners
cupcake pan
FROSTING INGREDIENTS
3 C unsalted sweet cream butter, softened
5 C powder sugar
2 tsp vanilla
3-5 TBSP heavy whipping cream
Red and blue gel food coloring
3 C patriotic sprinkles
3 bowl
Medium star tip and pastry bag
Large cup to put the piping bag in
Medium ice cream scooper
1 package of red white and blue glitter star cupcake toppers

Steps:

  • In a medium bowl, combine the cake mix, butter, milk, and vanilla bean
  • paste and mix until combined
  • Divide the batter into 3 bowls
  • In one bowl, mix in a few drops of red food coloring
  • In the second bowl mix in a few drops of blue food coloring
  • Scoop 1 TBSP of each color into the cupcake liners
  • Repeat step 1 more time till cupcake liners are ¾ full
  • Bake in the oven for about 21 minutes
  • Pull out and place on the side to cool
  • Using a standing mixer, combine all ingredients except the food
  • coloring into the bowl and mix on medium speed
  • If your frosting starts looking like powdery rocks, add another
  • tablespoon of heavy whipping cream
  • Mix until you see creamy stiff peaks
  • Scoop ¼ C of frosting into each of the 3 bowls
  • Add the red food dye into one bowl
  • Add the blue food dye into the second bowl
  • Leave the third bowl white
  • Fit the star tip into the piping bag and place the bag inside the cup, pulling the bag over the edge of the cup
  • Using a spoon, scoop some of the red icing and put it on 1/3 part of the piping bag
  • Repeat with the blue and white frosting
  • Twist the top of the piping bag and squeeze the frosting down and set aside
  • Using the ice cream scooper, scoop some frosting and place onto the top of the cupcake
  • Pour sprinkles into a bowl
  • Dip the top of the frosting into the sprinkles
  • Using the piping bag, pipe a small dollop of frosting on top
  • Place a star pick into the center of the frosting

3 Tbsp. dry JELL-O Berry Blue Flavor Gelatin (about half of 3-oz. pkg.)
1/4 tsp. blue gel food coloring
3 Tbsp. dry JELL-O Cherry Flavor Gelatin (about half of 3-oz. pkg.)
1 tsp. red gel food coloring
1 pkg. (3.4 oz.) JELL-O Cheesecake Flavor Instant Pudding
1 cup cold milk
1/4 cup powdered sugar
1-1/2 cups thawed COOL WHIP Whipped Topping
4 cups strawberries, sliced
1 cup blueberries

Steps:

  • Heat oven to 350ºF.
  • Prepare cake batter as directed on package; pour evenly into 3 bowls. Add dry blue gelatin mix and blue food coloring to batter in one bowl; mix well. Repeat with batter in second bowl with dry red gelatin mix and red food coloring.
  • Spoon blue batter into 24 paper-lined muffin cups; top with plain batter, then red batter.
  • Bake as directed on package for cupcakes. Cool cupcakes in pans 10 min. Remove to wire racks; cool completely.
  • Beat pudding mix, milk and sugar in medium bowl with whisk 2 min. Stir in COOL WHIP; spread onto cupcakes. Top with fruit just before serving.

Steps:

  • Prepare cake mix batter according to package directions for cupcakes., In a small bowl, combine 1-1/3 cups batter and blue food coloring. In another bowl, combine 1-1/3 cups batter and red food coloring. Leave remaining batter plain., Fill paper-lined muffin cups with 2 tablespoons red batter, 2 tablespoons plain batter and 2 tablespoons blue batter. Water, vegetable oil and egg whites called for on cake mix box
3/4 cup seedless red raspberry jam
3 containers (12 oz each) Betty Crocker™ whipped fluffy white frosting
1 teaspoon intense red paste food color
1/4 teaspoon royal blue paste food color
Betty Crocker™ Decorating Decors red, white and blue stars
Coarse white sparkling sugar, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Place red, white or blue paper baking cup in each of 24 regular size muffin cups.
  • Make cake mix as directed on box for cupcakes, using water, oil and egg whites. Divide batter evenly among muffin cups. Add 1 1/2 teaspoons raspberry jam to each cup; cut through batter with toothpick for swirled effect. Bake 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove cupcakes from pans to cooling racks. Cool completely.
  • Tint 1 container frosting with red food color; tint second container with blue food color. Leave third container white. Spoon each color of frosting into separate decorating bag fitted with large round tip. Pipe frosting as desired onto cupcakes. Sprinkle with stars and sparkling sugar.
