Red Velvet Cupcakes With Cream Cheese Frosting image

This recipe was adapted from "What Hawaii Likes to Eat" and the frosting is adapted from a recipe by Teri Wahl. My family used to own a bakery, and these were the cupcakes we sold. There will be A LOT of frosting. Some may want to halve the recipe. We actually used a whole ice-cream scoop of frosting on top of the cupcake. This is the actual recipe for the bakery, so it makes 48 cupcakes.... it's easy to scale down to 12 but kinda hard just to do 6.

4 cups unsalted butter
2 tablespoons real vanilla extract
5 lbs cream cheese (I recommend Philadelphia brand)
4 lbs powdered sugar, sifted
4 cups unsalted butter
6 cups sugar
8 large eggs
1/2 cup oil
10 cups cake flour
10 tablespoons cocoa powder
4 teaspoons baking soda
1 teaspoon salt
4 cups buttermilk
1/2 cup red food coloring
4 tablespoons white vinegar or 4 tablespoons apple cider vinegar

Steps:

  • NOTE: Before starting to make these cupcakes, it helps if all the ingredients are at room temperature. Also, if you don't have a stand mixer, just use a hand mixer. I don't recommend mixing this by hand.
  • Cream cheese frosting:
  • In a large mixing bowl, mix together butter, cream cheese and vanilla.
  • Slowly add powdered sugar. Mix until smooth.
  • Refrigerate until it will hold its shape.
  • Red Velvet Cupcakes:.
  • Preheat oven to 350 degrees.
  • Line cupcake pan(s) with liners.
  • In a stand mixer, using the paddle attachment, mix the butter and sugar until well creamed together, about 5-10 minutes.
  • Add eggs, one at a time, until well incorporated. Add oil.
  • Sift together flour, cocoa powder, baking soda and salt.
  • Mix together vinegar and red food coloring.
  • Slowly add flour mixture, red food coloring mixture and buttermilk mixture, alternating between all three and ending on the buttermilk mixture. DO NOT OVER MIX!
  • Scoop dough into lined cupcake pans. Or fill until about 2/3s full.
  • Bake at 350 for 20 minutes or until a toothpick inserted in the middle of cupcake comes out clean.
  • As soon as cupcakes come out of the oven, put one cupcake in the freezer.
  • Allow cupcakes to cool (about 1 hour) and either using a star-tip filled pastry bag or an ice cream scooper, frost cupcakes with cream cheese frosting.
  • Take the frozen cupcake and grate or food process until you get fine crumbs. Sprinkle over cream cheese frosting as a garnish.
  • ***NOTE: If you can wait, these taste even better after being refrigerated overnight!

Delicous Dulce De Leche Buttercream image

OMG this buttercream is UH-mazing! It reminds me of eating dulce ice cream. The cinnamon bring out the flavor perfectly. The consistency is a stiff enough to pipe and crust beautifully but you add more cream to loosen it up. I use store bought dulce de leche because I'm too chicken to make my own. If you love dulce like I do this buttercream may not make it to the cake :)

1 (12 fluid ounce) can nestle dulce de leche or 1 1/2 cups home made dulce de leche
1 cup unsalted butter, softened
5 cups powdered sugar
2 teaspoons madagascar vanilla extract
2 tablespoons heavy whipping cream
1/4 teaspoon cinnamon

Steps:

  • Using your stand mixer cream the butter.
  • Add dulce and mix until blended.
  • Add cream, vanilla and cinnamon and continue mixing.
  • Add sugar one cup at a time until desired consistency is achieved.

Look for the reddish blush and taste a more mellow flavor when you use Dutch-process cocoa instead of plain cocoa. There will be no difference in texture. I got this recipe from a newspaper.

1/2 cup cocoa or 1/2 cup dutch process cocoa
1 cup boiling water
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup sugar
2 large eggs
1 teaspoon vanilla
3 cups confectioners' sugar, sifted
1/2 cup cocoa, sifted
1/3 cup unsalted butter
1/2 teaspoon vanilla
salt, pinch
1/3 cup cold strong coffee, about

Steps:

  • For cake, preheat oven to 350 degrees F.
  • Spritz cupcake pans with nonstick baking spray or line with cupcake papers.
  • Place cocoa in a small bowl.
  • Add water, slowly stirring, until well blended and smooth.
  • Set aside until lukewarm.
  • In a small bowl, mix flour, baking soda and salt.
  • In medium bowl, cream butter and sugar with an electric mixer until fluffy.
  • Beat in eggs, one at a time.
  • Add the cooled chocolate mixture all at once, add vanilla and stir well.
  • Add the flour mixture all at once and stir with a wooden spoon until smooth and patches of white disappear.
  • Do not overmix.
  • Using a measuring cup, dip out the batter and place in the cupcake pans; the cupcake pans should be about 3/4 full.
  • Bake for 15 minutes or until a cake tester or toothpick comes clean when poked into the cakes.
  • When cooled, frost with mocha frosting (recipe below).
  • Makes about 18 2 1/2 inch cupcakes.
  • For frosting, remove lumps from both sugar and cocoa by placing the measured ingredients into a sieve set over a bowl; push and rub with the back of a spoon or rubber spatula.
  • Using an electric mixer, cream the butter until smooth.
  • Add the vanilla and salt.
  • Add the sugar all at once and mix until almost blended.
  • Beat in as much of the coffee as needed to make a smooth, spreadable frosting.
  • Makes 1 3/4 cups or enough to frost 18 cupcakes generously.
  • Tip: If the cupcakes are going into a lunchbox or picnic basket, cut them in half, sandwich the frosting in the middle and wrap in wax paper or plastic wrap.
