1 medium cauliflower
1 red pepper
4 -10 garlic cloves, depending how much you like it
2 teaspoons seasoning salt
1 tablespoon dried thyme
fresh black pepper (1 generous grinding)
2 tablespoons olive oil

Steps:

  • Line a cookie sheet with Aluminum foil.
  • Set the oven at 450.
  • Cut Cauliflower into bite sized pieces.
  • Cut garlic into chunks (don't mince it or it will burn).
  • Cut red pepper into 1" squares.
  • Put all the vegetables on cookie sheet.
  • Sprinkle with spices, drizzle with oil. Use your hands to make sure all is coated lightly with oil.
  • Bake for 20 min turn once at halftime.

4 to 6 tablespoons lemon juice, to taste
4 tablespoons extra-virgin olive oil
3 cups drained cooked chickpeas
1 roasted red bell pepper, skinned, seeded, and coarsely chopped (about 1/2 cup)
3/4 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
1/2 cup tahini
2 tablespoons water
1/4 teaspoon ground cumin
1/8 teaspoon ground black pepper
1 tablespoon chopped parsley leaves
1/4 teaspoon sweet paprika
Pita Chips, for serving, recipe follows
1/2 cup extra-virgin olive oil
1 tablespoon minced garlic
1 teaspoon Essence, recipe follows
4 pita breads, each split in 1/2
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In the bowl of a food processor, place the chickpeas and red bell pepper. On a cutting board, mash the garlic cloves with 1/4 teaspoon of salt to a smooth paste with the side of a knife, then add this to the processor along with the crushed red pepper, tahini, water, 4 tablespoons of the lemon juice, 2 tablespoons of the olive oil, cumin, and pepper and process until smooth, stopping to scrape down the sides as needed. Taste and adjust the seasoning by adding salt and additional lemon juice, if necessary, to taste. Transfer to a wide shallow bowl for serving and use the back of a serving spoon to form a well in the center of the hummus. Drizzle with the remaining olive oil and sprinkle the top with the parsley, and paprika. Serve at room temperature, with pita chips for dipping.
  • Preheat the oven to 300 degrees F.
  • Combine the olive oil, garlic, and Essence in a small bowl and whisk to mix. Brush the mixture evenly over the rough (inside portion) of each pita bread half. Stack the pita breads and cut into quarters. Arrange the pita pieces evenly on a baking sheet and bake until golden brown and crispy, about 20 minutes. Remove from the oven and let cool before serving.

2 cups cooked cauliflower rice
4 ounces roasted red peppers, drained and chopped
3 tablespoons lemon juice
3 tablespoons tahini
1 clove garlic, roughly chopped
½ teaspoon cayenne pepper
½ teaspoon cumin
½ teaspoon sea salt
2 green plantains
2 tablespoons avocado oil, or as needed
¼ teaspoon cayenne pepper
¼ teaspoon smoked paprika
sea salt to taste

Steps:

  • Combine cooked cauliflower rice, roasted red peppers, lemon juice, tahini, garlic, cayenne, cumin, and sea salt in the bowl of a food processor. Pulse until mixture is an even color but still has texture, about 1 minute. Scrape down the sides once or twice during processing.
  • Preheat the oven to 400 degrees F (200 degrees C). Line 2 baking sheets with aluminum foil and brush with avocado oil.
  • Use a mandoline to carefully slice plantains into chips as thinly as possible. Place chips on the prepared baking sheets in a single layer.
  • Lightly brush each chip with avocado oil and sprinkle with cayenne pepper, smoked paprika, and sea salt.
  • Bake in the preheated oven on the convection setting until chips are browned and crisp, 10 to 12 minutes. If your oven does not have a convection setting, chips will need to cook longer, so watch carefully to avoid over-browning. Remove from baking sheet and drain on a paper-towel lined plate.
  • Serve plantain chips with roasted red pepper-cauliflower hummus.

Two 15-ounce cans chickpeas, drained and rinsed
1/2 cup roasted red peppers (jarred in water or oil both work)
3 tablespoons tahini
1 clove garlic, chopped
3 to 4 tablespoons lemon juice
Kosher salt
1/4 cup olive oil
Pita chips, celery and carrot sticks and halved radishes, for serving

  • In a food processor, combine the chickpeas, roasted red peppers, tahini, garlic, lemon juice and 1 teaspoon salt. Pulse a few times to chop up the chickpeas. 1 head of cauliflower (cut into smaller florets)
1/2 of a red pepper (sliced)
1/2 of a large eggplant (sliced ( if your eggplant is small, use all of it))
4 Tbs tahini
5 Tbs olive oil ((divided- 4 Tbs for the hummus, 1 Tbs to roast the veggies))
4 Tbs lemon juice
1 tsp salt
1 tsp garlic powder
1/4 tsp black pepper
1/2 tsp cumin
paprika for garnish
olive oil for garnish

Steps:

  • Preheat the oven to 400 degrees.
  • Cover a cookie sheet in aluminum foil and pour 1 Tbs olive oil on top.
  • Put the eggplant, red peppers and cauliflower florets on the pan and mix into the olive oil. Flip the veggies around and make sure they are nicely coated in the oil.
  • Cook for 40 minutes. Make sure to flip the pan half way through.
  • Let the veggies cool.
  • Then put the roasted vegetables, tahini, 4 Tbs olive oil, lemon juice, salt, garlic powder, pepper and cumin into a blender and mix.
  • Blend the ingredients until they turn into a hummus texture. Scrape the sides of the blender with a spatula as needed. This all should take about 5 minutes, depending on the setting of your blender.
  • Once the hummus is done, garnish it with some paprika and olive oil, and enjoy!

2 (15 ounce) cans garbanzo beans, drained & rinsed
2 tablespoons extra virgin olive oil

1 red bell pepper, roasted

3 canned jalapeno slices
1 tablespoon jalapeno juice
3/8 cup lemon juice
1/8 cup water
1/2 teaspoon ground black pepper
1 1/2 teaspoons cayenne pepper
1/2 teaspoon ground cumin
3/4 teaspoon dried oregano
1 teaspoon crushed red pepper flakes

Steps:

  • Roast Red Pepper (I broil mine in the oven for about 20 minutes) and then seal in a large gallon sized zipper bag for an additional 15 minutes. Remove skin & seeds.
  • Meanwhile, in a small bowl, mix together black pepper, cayenne pepper, cumin, oregano and red pepper flakes.
  • Blend garbanzo beans, olive oil, tahini, jalapenos, garlic and all liquids in a food processor or high powered blender.
  • Add remaining ingredients, including the roasted red pepper and bowl of dry seasonings.
  • Blend until smooth and desired consistency.
  • Cover and refrigerate overnight to allow the flavors to meld.
  • Stir well before serving.
  • Serve with sliced red bell peppers, cauliflower, cucumbers, crackers and/or pita chips! Enjoy!
