Time 4h15m

Yield 8 servings

Number Of Ingredients 15

2 tablespoons vegetable oil
1 cup chopped onions
1/2 cup chopped bell peppers
1/2 cup chopped celery
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1 teaspoon dried thyme
2 bay leaves
1 pound boiled ham cut, into 1/2-inch cubes
6 ounces smoked sausage, cut crosswise into 1/4-inch slices (1 cup)
1 pound dried red beans, rinsed and sorted through, soaked overnight and drained
3 tablespoons chopped garlic
8 to 10 cups water
Steamed rice

Steps:

  • Heat the oil in a large saucepan over medium-high heat. Saute the onions, bell peppers, celery, salt, cayenne, black pepper and thyme for about 5 minutes. Add the bay leaves, ham and sausage and saute for 5 to 6 minutes. Add the beans, garlic, and enough water to cover the contents in the pot. Bring to a boil, reduce the heat to medium, and simmer uncovered, stirring occasionally for about 2 hours. Add more water if the mixture becomes dry and thick. Use a wooden spoon to mash about half of the mixture against the side pf the pot. Continue to cook, stirring occasionally, for about 1 1/2 hours, or until the mixture is creamy and the beans are soft. Add more water if it becomes too thick. The mixture should be soupy but not watery. Remove the bay leaves and serve with steamed white rice.

WILLIE'S NEW ORLEANS RED BEANS & RICE

Willie's New Orleans Red Beans & Rice image

I got this from a young bachelor who used to make this one day and eat on it for several days. I just had to try it. DH & I loved it and it has become a staple at my house. You can lower the heat by using smoked sausage instead of andouille.

Yield 4-6 serving(s)

Number Of Ingredients 8

1 lb dried red beans, that have soaked over night in 7 cups of water
1 green pepper, chopped

3 garlic cloves, chopped
1/2 lb andouille sausage, sliced
3 tablespoons creole seasoning
hot cooked rice

Steps:

  • Place all but rice into a 4 qt slow cooker.
  • Cook, covered at HIGH 7 hours or until beans are tender.

NEW ORLEANS RED BEANS & RICE

New Orleans Red Beans & Rice image

This is one of the best red beans & rice recipes I have ever had. It freezes well & is soul satisfying with a chunk of crispy cornbread & so chopped turnip greens on the side. From The Times-Picayune :"C.B. writes, "I had a great recipe for red beans and rice that was submitted by a reader. .¤.¤. He added all the ingredients, including the water, and put it in the refrigerator overnight. Then he cooked it the next day without draining the water. But my TP clipping has gone AWOL. I've searched your archives to no avail." When he gave this recipe to the newspaper in 2003, Jimmy Fahrenholtz said he had spent 25 years perfecting it."

Categories     One Dish Meal

Time 5h20m

Yield 25-35 serving(s)

Number Of Ingredients 17

2 1/2 lbs red beans, dried
2 onions, chopped (big uns)
4 celery ribs, chopped
6 bay leaves
24 drops Tabasco sauce (other hot sauce OK)
1 tablespoon italian seasoning
1 teaspoon italian seasoning
1 tablespoon creole seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon Worcestershire sauce
1 teaspoon Worcestershire sauce
2 teaspoons soy sauce
2 teaspoons Kitchen Bouquet
20 cups water
2 -3 lbs ham, cut up
2 -3 lbs sausage, regular (not hot, not mildly hot)

Steps:

  • In a very large mixing bowl (or a 12-quart non-reactive pot, or two 6- to 8-quart pots), combine all ingredients except ham and sausage. Cover and refrigerate for 24 hours.
  • When ready to cook, place all in a pot with the ham and sausage. Bring to a boil, then lower heat, cover, and strongly simmer (preferably without skimming), for 1 hour; stir as needed to keep beans from sticking.
  • Reduce heat and slowly simmer, covered, between 2 and 4 hours, or until mixture is very thick and beans are tender. During the slow-simmering process, stir frequently, especially toward end of cooking time, adding more water to pot only if dish seems too dry.
  • About 1 hour before done, periodically mash some of the beans with a potato masher, scraping pan bottom clean after each mashing; try to mash about 40 percent of the beans.
  • Serve immediately over rice or, preferably, let beans cool and refrigerate overnight. Reheat for serving.

AUTHENTIC NEW ORLEANS RED BEANS AND RICE

Authentic New Orleans Red Beans and Rice image

Just like mom makes. I recommend cooking the day before you want to eat it. It is a time-consuming recipe and the taste gets even better after 24 hours in the refrigerator. For extra spice, add a splash of hot sauce.

EMERIL'S NEW ORLEANS-STYLE RED BEANS AND RICE

Emeril's New Orleans-Style Red Beans and Rice image

"Oh yeah, this is it!" - are the words my husband declared when he tried this recipe for red beans and rice. He was craving New Orleans-style red beans and rice and I had never made it before- so this is the recipe I searched for and tried and it was delicious!! The kids thought it was great too. I only made a few small changes to Emeril's, like adding more sausage than the recipe called for and letting a smoked ham hock cook with the beans for the first two hours..other than that everything is the same. This is not a quick meal, but great for a lazy day at home.

NEW ORLEANS RED BEANS AND RICE

New Orleans Red Beans and Rice image

I found this recipe in "The New Orleans CookBook" by Rima & Richard Collin. It was an incredible hit the first night with family and friends, and it gets even better the next day. I was unable to find pickled pork and used salt pork instead. Delete the salt from the recipe if you make this substitution. I highly recommend pan-baked corn bread on the side with this one (see recipe #87750).

Provided by Rev. Roy

Categories     Rice

Time 3h40m

Yield 8-12 serving(s)

Number Of Ingredients 18

2 lbs dried red kidney beans, soaked overnight in cold water
2 cups chopped onions
1/2 cup thinly sliced shallots or 1/2 cup scallion top
1/2 cup chopped green pepper
1 1/3 tablespoons finely minced garlic
2 tablespoons finely minced fresh parsley
1 lb seasoning baked ham, cut into 1/2 inch cubes
1 lb pickled pork, cut into large chunks
1 large ham bone, with some meat on it 4 to 5 inches in length
1 tablespoon salt
1/2 teaspoon fresh ground black pepper
1/8 teaspoon cayenne
1/8 teaspoon crushed red pepper pod
2 whole bay leaves, broken into quarters
1/2 teaspoon dried thyme
1/8 teaspoon dried basil
2 quarts cold water, approximately
steamed rice or boiled rice

Steps:

  • Drain soaked beans in a colander and place them with all other ingredients except rice into a heavy 8-10 quart pot, adding just enough cold water to cover.
  • Bring to boil over high heat, then lower heat and simmer uncovered for 2 1/2 to 3 hours or until beans are tender and a thick, natural gravy has formed.
  • Add 1 cup of water toward end of cooking if it is looking too dry for your tastes.
  • Stir about every half hour just once or twice around the pot.
  • When beans are cooked turn off heat.
  • To serve, ladle about 1 1/2 cups of beans, meat and gravy over a serving of rice.

NEW ORLEANS STYLE RED BEANS & RICE

New Orleans Style Red Beans & Rice image

Over the years, (I would like to think that) I have mastered this New Orleans Favorite. After watching my mom cook red beans & rice for many years, I now cook them for my husband, his family, my co-workers, and friends. I apologize, up front, for the absence of certain measurements, but as you know, when cooking, sometimes we just eyeball it and then perform a taste test later. NOTE: I cook white beans the same way.

Provided by CookingInNewOrleans

Categories     Beans

Time 3h30m

Yield 6 serving(s)

Number Of Ingredients 13

1 lb kidney bean (I only use Camelia, however, I know that it is hard to find outside of New Orleans)
1 medium onion (chopped)
4 -5 garlic cloves (minced)
2 tablespoons margarine
seasoning salt (to taste, I use McCormick Season-All)
salt (optional)
pepper (to taste)
parsley flakes (approximately 1-2 tbsp)
8 bay leaves
1 lb smoked sausage, cut into 1 inch pieces (I prefer Cavanaugh or Hillshire Farms)
1 lb ham, cubes
water
1/2 cup margarine (I use Imperial)

Steps:

  • Rinse beans (optional: soak overnight or for several hours prior to cooking, in order to avoid possible gas effects that sometimes result when eating beans).
  • After rinsing, place the beans in the stock pot and fill 3/4 full of water. (The water will reduce as the beans cook). Bring to a boil.
  • After the water comes to a boil, saute chopped onions and garlic in approximately 2 tablespoon of margarine, then add it to the beans. Lower heat to med-high and cook for approximately one hour.
  • Add remaining seasoning, including seasoning salt, (optional) salt, pepper, parsley flakes, and bay leaves. Cook for another hour on med-high. Throughout cooking, add boiling water (and additional seasoning) to the pot, if the liquid reduces too much. Stir occasionally.
  • Next -- this is the "magical step" -- add 1 stick of butter and cook for another hour on med-high, stirring occasionally. Watch the heat and adjust accordingly to avoid scorching your beans.
  • Heat the ham and smoke sausage pieces in the microwave and add to the pot of beans. I like to heat the meat, so that my beans will continue cooking at its current temperature.
  • Continue to cook on medium to medium-low, as the beans thicken. Stir occasionally. NOTE: I stay pretty close to my pot when cooking beans, so I can make sure they don't begin to stick.
  • Serve over rice -- perhaps, add a piece of cornbread and ENJOY!
