Szechuan Chicken Lettuce Wraps with Spicy Mayo (Cactus Club Copycat) image

Spice it up and make copycat Szechuan chicken lettuce wraps with spicy mayo from the comfort of your own home with this easy to follow recipe. Plus, it is healthier than the original!

2 chicken breasts, cut into small 1 or 2-inch strips
1 tablespoon sesame oil
1 + 1/4 cups panko breadcrumbs
1 tablespoon soy sauce
1 tablespoon rice vinegar (black)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 egg
1 tablespoon mayonnaise
1/4 cup all-purpose flour
1 cup fried wontons* or chow mein noodles (Farkay brand)
1/4 cup green onions or scallions, sliced
1/2 cup fresh cilantro, chopped
1/4 cup peanuts
1/2 cup sweet chili sauce
2 teaspoons white and black sesame seeds
lime wedges
1 head iceberg lettuce, cut in half through the stem
1/4 cup mayonnaise
1 tablespoon Sriracha hot sauce, or more to taste
1 teaspoon freshly squeezed lime juice

Steps:

  • Preheat oven to 400 degrees F. Line a cooking pan with foil and spray or brush with cooking oil.
  • In a medium skillet, heat sesame oil over medium heat. Add panko breadcrumbs and cook for 2-3 minutes while stirring continuously until the breadcrumbs start to brown. Be careful not to burn them, you only want them to slightly turn a golden colour. Remove from heat and mix in soy sauce, rice wine vinegar, salt and pepper. Toss to combine and set aside.
  • In a small bowl, beat the egg and mayonnaise together. Pour mixture into a shallow dish and set aside. Place flour into another shallow dish and set aside.
  • Fully coat each chicken strip with flour, then with egg, and lastly with the panko breadcrumb mixture.
  • Place the coated chicken strips onto your cooking tray and bake for 20-25 minutes, until the chicken is golden brown and no longer pink inside.
  • Place chicken strips into a large bowl and add chow mein noodles, green onions, cilantro, peanuts, and sweet chili sauce. Toss to coat.
  • Transfer chicken mixture into serving dish and sprinkle with sesame seeds. Add lime wedges.
  • In a small bowl, mix mayonnaise, hot sauce, and lime juice together.
  • Serve spicy mayo on the side or drizzle on top of chicken mixture.

1 large egg white
1 tablespoon cornstarch
1 tablespoon Chinese rice wine or dry sherry
1 1/2 pounds skinless, boneless chicken breasts, diced
2 tablespoons oyster sauce
1 tablespoon hoisin sauce
1 tablespoon low-sodium soy sauce
1 tablespoon Chinese rice wine or dry sherry
1 teaspoon toasted sesame oil
2 teaspoons cornstarch
2 bundles cellophane noodles
Peanut oil, for frying
4 tablespoons peanut oil
3 cloves garlic, minced
1 teaspoon minced peeled ginger
1 jalapeno pepper, seeded and minced
4 scallions; 2 minced, 2 cut into 1-inch pieces
Kosher salt
1/4 teaspoon sugar
1/2 pound shiitake mushrooms, stemmed and diced
3/4 cup diced water chestnuts
Small lettuce leaves, for serving
Soy sauce, chili paste and/or hot mustard, for serving

Steps:

  • Prepare the chicken: Whisk the egg white, cornstarch and rice wine in a bowl. Add the chicken and toss to coat. Cover and refrigerate at least 30 minutes. Make the stir-fry sauce: Whisk 1/3 cup water, the oyster, hoisin and soy sauces, the rice wine and sesame oil in a bowl, then whisk in the cornstarch until dissolved.
  • Fry the noodles: Pull the noodles apart into sections. Heat 3/4 inch peanut oil in a medium saucepan until a deep-fry thermometer registers 380 degrees F. Working in batches, press the noodles into the oil with a spatula until they puff, 5 to 10 seconds. Drain on paper towels.
  • Make the stir-fry: Heat 2 tablespoons peanut oil in a large skillet over medium-high heat. Add the chicken and cook, stirring, 2 to 3 minutes. Remove with a slotted spoon to a plate. Add the remaining 2 tablespoons peanut oil to the skillet; when almost smoking, stir in the garlic, ginger, jalapeno and minced scallions, then add 1/2 teaspoon salt and the sugar and stir-fry 30 seconds. Add the mushrooms, water chestnuts and scallion pieces and stir-fry 2 minutes. Add the stir-fry sauce and chicken and cook 1 minute. 1/4 cup peanuts
1 tbsp olive oil
2 chicken breasts (cut into bite-sized pieces)
3 cloves garlic (minced)
1/2 onion (chopped)
1/2 red pepper (chopped)
250 g water chestnuts (sliced matchstick-style)
2 cups mushrooms (sliced matchstick-style)
2 tbsp soy sauce
1/2 tsp brown sugar
5 tbsp hoisin sauce
1 tbsp chili paste (such as Sambal Oelek)
2 green onions (thinly sliced)
lettuce for wrapping (such as Butter, Boston or Bibb)
steam fried crispy Asian noodles

Steps:

  • Heat a large skillet to med-high heat. Add peanuts and stir occasionally until roasty. Remove from pan and set aside.
  • Heat 1 tbsp oil in same skillet over med heat. Add garlic and sauté until softened. Add chicken, stir fry until no longer pink.
  • Add onion, pepper, chestnuts and mushrooms. Sauté for 1 min.
  • Meanwhile, dissolve the brown sugar in the soy sauce. Add to the vegetables in the pan. Continue to stir fry for about 2 mins.
  • Add the hoisin sauce and chili paste.
  • Stir in green onions and remove from heat.
  • To assemble: Place noodles on the lettuce, then the stir fried meat and veggies, and top with peanuts.

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced

1 tablespoon rice wine vinegar
2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

I came up with this recipe trying to replicate lettuce wraps offered at Joey Tomato's. So far, I've determined, there are a number of elements that make the perfect lettuce wrap. A balance between savory taste and crunch - which is given by the combination of soy, hoisin and chiles accented by the addition of crispy noodle. I am sure this recipe will continue to evolve as I experiment with other flavors.

1 head iceberg lettuce
130 g egg noodles, Chinese style (or chow mein noodles)
2 tablespoons vegetable oil
2 chicken breasts, chopped into bite sized pieces
1 teaspoon garlic, minced
1/2 yellow onion, finely chopped
1/4 yellow pepper, finely chopped
1/4 red pepper, finely chopped
250 g sliced water chestnuts, slivered
2 cups shiitake mushrooms, slivered, matchstick (or crimini)
2 tablespoons soy sauce
1/2 teaspoon brown sugar
5 tablespoons hoisin sauce, use more if desired
1 tablespoon chili sauce, adjust to taste
2 scallions, slivered
1 teaspoon coriander or 1 teaspoon cilantro
1/4 cup peanuts, kettle cooked is best (crushed or whole)

Steps:

  • Unwrap lettuce into "cups" and wash thoroughly.
  • Heat vegetable oil in a wok, on medium high heat, and after a minute, add noodles. You will want to separate them with your fingers as you add so that the noodles are not clumpy. Cook for 5 to 10 minutes depending on the level of crispiness desired.
  • Prepare (chop) your chicken and vegetables as you wait.
  • Once the noodles are done, remove and set aside.
  • If desired, pour 1 tsp of oil in the same wok before you saute the garlic. Do this for about 30 seconds. Garlic can burn quickly so do not leave it too long.
  • Add chicken, stir fry until no longer pink.
  • Add onion, peppers, chestnuts, and mushrooms. Fry for about a minute.
  • While waiting for the vegetables to saute, combine soy sauce and sugar. Mix with a spoon until the sugar is dissolved.
  • Add the soy sauce mixture to the pan. Fry for about 2 minutes.
  • Add the hoisin sauce and chili paste.
  • Add the scallions, coriander and peanuts.
  • Serve over the noodles that were set aside. To assemble, spoon chicken and noodle mixture into lettuce cup. Wrap and enjoy :).
  • If desired, shrimp can be substituted for chicken. Note on hoisin sauce: because hoisin is a prominent flavour in this recipe, different types of sauces may alter the taste. Try to find a simple hoisin sauce by looking at the ingredients. I tend to stay away from additional vinegars or spices, but ultimately the choice is up to you.

3 tablespoons lime juice (from about 4 limes)
1 tablespoon fish sauce
1 tablespoon plus 1 teaspoon soy sauce
2 teaspoons light brown sugar
1/3 cup fresh cilantro leaves, roughly chopped, plus more for serving
3 scallions, thinly sliced
1 small red jalapeno or Fresno chile, thinly sliced
1/2 cup low-sodium chicken broth
1 pound ground pork or chicken
1 tablespoon grated ginger
2 cloves garlic, minced
1 large head Bibb or romaine lettuce, separated into 15 large leaves
Chopped roasted salted peanuts, for serving
Shredded carrots, for serving

Steps:

  • Whisk the lime juice, fish sauce, 1 tablespoon of the soy sauce and brown sugar in a large bowl until the sugar dissolves. Add the cilantro, scallions and chiles; set aside.
  • Heat the chicken stock in a large skillet over medium heat until steaming but just below a simmer. Add the pork and the remaining teaspoon soy sauce, and cook, breaking into pieces with a spoon (not too small), until the meat is just cooked through and no longer pink, about 6 minutes. Add the ginger and garlic, and remove from the heat. Combine the chicken mixture with the lime mixture until well coated. Let sit for at least 15 minutes while the flavors combine.
  • To assemble, put 1 to 2 tablespoons of the chicken filling in the center of each lettuce leaf. Top with chopped peanuts, shredded carrots and chopped cilantro. Strain the remaining liquid from the filling, and serve on the side.

1 tablespoon freshly grated ginger
2 teaspoons brown sugar
¼ cup chicken stock
¼ cup rice wine vinegar
4 cloves garlic, minced
1 tablespoon ketchup
1 tablespoon soy sauce
2 teaspoons sesame oil
2 teaspoons brown sugar
½ teaspoon red pepper flakes
½ teaspoon dry mustard
2 tablespoons vegetable oil

Steps:

  • Stir chicken, water chestnuts, mushrooms, yellow onion, 1/3 cup green onion, 1 tablespoon soy sauce, ginger, and 2 teaspoons brown sugar together in a bowl. Pat mixture down, cover the bowl with plastic wrap, and refrigerate until ready to use.
