RASPBERRY MINT POKE CAKE
This cake is a re-make for my White Chocolate Raspberry Ribbon Cake which I had submitted to Duncan Hines. I omitted the white chocolate and added the mint to the frosting instead of the cake. Let me know what you think.

Steps:
- 1. Bake the cake as directed using 2-8" or 2-9" cake pans. Let the cake cool completely in the pans.
- 2. While the cake is cooling prepare the Jello with 1/2 cup hot water, making sure the Jello is completely melted before adding the cold water. Stir completely until clear and set aside to cool.
- 3. When the cake layers are cool, using a fork, poke holes all over the cake and make some of them deep. Pour the jello evenly all over the two cake layers and place the pans into the refrigerator to chill for at least 2 hours.
- 4. Weigh out the confectioners sugar and sift into a large bowl; set aside. Measure out 8oz of shortening and set into a large mixing bowl fitted with a paddle. Add in the meringue powder and beat on low speed until combined. Add in the vanilla then drizzle in the heavy cream, once combined turn the mixer up to medium and let it beat for about 2 minutes. Slowly add in the confectioners sugar; a cup at a time to prevent splashing; scrape down the sides of the bowl as well. When all of the sugar is incorporated turn the mixer on high for about one minute to smooth out the lumps. Add in the mint extract at this point.
- 5. Carefully remove the cake layers from the pans and assemble the cake. Garnish with fresh raspberries and mint. Place the cake back into the refrigerator until ready to serve or serve right away. Enjoy!
RASPBERRY POKE CAKE
This is another version of "poke-cake" recipes. We like to make this in summer when the raspberry supply is plentiful. Note: Cooking time includes the 1-hour cooling time and 2 hours in the refrigerator before serving.

- Heat oven to 350 degrees. Grease bottom only of 13x9-inch pan with shortening or cooking spray. Make cake mix as directed on box, using water, oil and egg whites. Pour into pan.
- Bake 28-33 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
- Pierce cake every 1/2 inch with fork. In small bowl, stir gelatin and boiling water until smooth; stir in cold water. Pour over cake. Run knife around side of pan to loosen cake. Refrigerate 2 hours. Spread whipped topping over top of cake; garnish with raspberries. Store covered in refrigerator.
- *You can also make this a strawberry poke cake by substituting strawberry gelatin for the raspberry, and garnishing with fresh strawberries*.

SEVENTIES RASPBERRY MINT "JELLY" CAKE
You have to start by admitting to yourself that you love the way tangy Jell-O mixed with tart fresh fruit, red wine notes and whipped cream is an elevated throwback to when you were a kid. The red wine adds a tart note and the cranberry sauce adds bitterness and tons of pectin, the natural thickener that comes from cranberry itself. - Reduce the red wine: Combine the wine and sugar in a medium pot over medium heat and reduce until there are 2 cups total liquid, 30 to 40 minutes.
- Make the gelatin: In a large bowl, combine the gelatin with 5 1/2 cups boiling water, then stir in the still warm reduced red wine. Stir until dissolved. Add the cranberry sauce; stir until melted.
- Create the first layer: Layer 1/2 pint raspberries, top-side down, in each crevice of a 10- to 15-cup Bundt mold. Imagine you are looking at them and building this dessert upside down (because you are) and will see the opposite side when the dessert is unmolded. Gently pour enough of the cranberry mixture to cover the first layer of fruit, about half. Place the mold on a sheet pan and chill in the refrigerator until mostly set, about 2 hours.
- Create the second layer: On top of the set up gelatin, gently arrange another half pint of raspberries all through the center of the mold. Put mint leaves wherever there are gaps. Pour the remaining gelatin carefully on top. Refrigerate for another 2 hours or up to overnight.
- To serve: Dip the mold very briefly in a large bowl of warm water to loosen the gelatin from the sides of the mold. Place a serving plate or cake stand on top of the Bundt mold and invert onto the plate. Unmold the cake. Top with mint leaves and arrange the last half pint raspberries around the edges. Serve with the whipped cream.

THIN MINT POKE CAKE RECIPE
Chocolate cake smothered with sweetened condensed milk and hot fudge, then topped with a creamy mint frosting and Andes Mints.

- Heat oven to 350 degrees. Grease bottom of a 9 x 13 inch pan.
- Prepare cake mix according to package directions (Betty Crocker calls for the water, oil, and eggs as listed above).
- Bake for 30 to 35 minutes or until done.
- Using a fork or spoon handle, poke holes over the entire cake after taking it from the oven.
- Pour sweetened condensed milk over the cake, letting it soak into the holes.
- Heat up hot fudge in the microwave, then drizzle and spread over the top of the cake.
- To make the frosting, beat together butter, milk, powdered sugar, peppermint extract, and green food coloring until smooth.
- Spread over the cooled cake.
- Sprinkle on chopped Andes Mints and refrigerate for at least an hour before serving.

- After the cake has baked, remove from the oven and allow to cool for 30 minutes. Using the handle end of a wooden spoon or a meat fork, poke cake every inch or so with the handle of wooden spoon or tines of meat fork halfway into the cake. There is no set number of holes, but you want plenty of places to fill. Mix the raspberry gelatin with 2 cups of hot water until dissolved. Pour the Jello evenly over the cake, trying to fill the holes as much as you can.
- In a small bowl, microwave the raspberry preserves until easy to spread, about 30 seconds. Pour the preserves over the top of the cake and spread evenly. Top with Cool Whip. Sprinkle the shredded coconut over the top. Refrigerate for at least 4 hours before serving.
