SHIRLEY'S PERFECT RARE ROAST BEEF
My mom showed me how to make the perfect roast beef, and I mean PERFECT! I love my roast beef rare to med-rare, and this is how I do it. IMPORTANT: Take your roast out of the fridge, and let it set to get it to room temperature before baking! If you like really rare bake for 15 mins. at 500. If you like your roast beef cooked med-rare, put in for 18 mins. at 500. If you like it well done, then just burn the darn thing LOL. What's nice about this roast is, if someone likes it done a little more, please keep in mind that the end pieces will be done a little more. ***(The roast in the series of photos that I took was a 2.75 lb. bottom of the round roast. I baked it at 500 for 15 mins., then turned the oven off and left it in the oven for 1 hour for a rare roast.) The cooking time is 5 minutes per pound but I couldn't reflect that in the cooking time in the TIME section for the recipe, at the bottom so I just put in 15-30 mins, depending on size of the roast you use (3-6 lb)

- Preheat oven to 500 degrees. Wait for a few minutes before you put your roast in, so it gets as hot as possible.
- Put the roast in a shallow pan. (I use a cookie sheet).
- Cut onion into thin rings, and put all over the top and sides of the roast using toothpicks if necessary. I sit a few slices on the bottom of my roast too.
- Sprinkle roast generously with garlic powder, or to your liking. DO NOT SALT roast, or you will dry it out.
- Put roast in the oven on the middle rack.
- Bake at 500 degrees for 5 minutes per pound, then shut off oven, and let sit in the oven for 1 hour. DO NOT under any circumstances open the oven door! VERY IMPORTANT!
- After you turn off the oven and your roast has baked for l hour, take it out of the oven, and let sit for 15 minutes, to allow juices to distribute in the roast.
- I use my electric knife to cut my roast, and place on a serving dish.
- Don't forget to make the gravy!
ALWAYS RARE ROAST BEEF

- Preheat oven to 500 degrees F. Season roast as desired. Cook roast for 25 minutes at 500 degrees F. Remove and cool for 20 minutes. Reduce oven temperature and continue to bake as indicated below: Small to medium roast (up to 6 Lb.). Reduce heat to 300 degrees F and cook for another 17 minutes per pound. Large roast (6 Lb. or more). Reduce heat to 250 degrees F and cook for another 17 minutes per pound.

BEST ROAST BEEF

- Preheat oven to 450 degrees F (230 degrees C), and heat a large thick-bottomed roasting tray on the stovetop.
- Rub the beef generously with salt, then add a little olive oil to the tray and lightly color the meat for a couple of minutes on all sides.
- Lay the onions and bulbs of garlic in the tray with the beef on top of them, then cook in the pre-heated oven for a total of 1 1/2 hours.
- While the beef is roasting, parboil your potatoes in salted boiling water for around 10 minutes and drain in a colander. Toss about to chuff them up, this will make them really crispy.
- After 30 minutes, take the tray out and toss in your potatoes and rosemary. With a garlic press or grater, squeeze or grate the cloves of garlic and ginger over everything in the tray.
- Shake the tray and whack it back in the oven for the final hour. Remove the potatoes to a dish to keep warm, place the beef on a plate, covered with foil, to rest, and get your greens and Yorkshire puddings on.
- Remove most of the fat from your roasting tray and you should be left with caramelized onions and sticky beef goodness.
- Add 1 teaspoon of flour to the tray and mash everything together. Heat the tray on the stovetop and when hot, add the red wine. Simmer for 5 to 10 minutes, stirring every couple of minutes, until your gravy is really tasty and coats back of a spoon. Add any juice from the beef and feel free to add some water or stock to thin the gravy if you like.
- Pour through a coarse sieve and push it through with a spoon, pushing it through with a spoon, and serve in a warmed gravy jug. Serve with Yorkshire puddings.
- Preheat oven to 450 degrees F.
- Mix the batter ingredients together. Let rest for 10 minutes
- Preheat a Yorkshire pudding tray or muffin tin with 1/2-inch (1 centimeter) of oil in each section. After the 10 minutes divide the batter into the tray. Cook for around 15 to 20 minutes until crisp and puffy, don't open the oven door before then or they won't rise.
SUNDAY ROAST BEEF AND GRAVY

- Preheat oven to 400 degrees F.
- Using a heavy hand, season rib-eye roast with salt and pepper on all sides. Heat olive oil in a large Dutch oven or a roasting pan. Place beef in hot pan and sear until deep golden brown on all sides. Transfer the pan to the oven and roast for about 15 minutes per pound for medium-rare, making an approximate hour of cooking time. Remove the pan from oven and transfer the beef to a cutting board. Allow meat to rest for at least 15 minutes, tented with foil, before carving.
- Gravy:
- Pour off excess fat from the Dutch oven (reserve for Thyme for Yorkshire Pudding, if desired) and place on the stovetop over medium heat. Add shallots and cook until soft and brown, about 4 to 6 minutes. Deglaze the pot with 1/2 cup of the wine, scraping up browned bits from the bottom. Add remaining wine, bring to a boil and reduce by half. Add stock and simmer until reduced again by about half. Pass the gravy through a fine mesh sieve and return to the pan. Bring back to a boil, then lower the heat and simmer until desired gravy consistency is reached. Taste for seasoning and adjust, if necessary. Carve beef against the grain, into thin slices, and serve with gravy.
RARE BEEF WITH MUSTARD YORKSHIRES

- Heat oven to 220C/fan 200C/gas 7. Using a large pestle and mortar, grind the garlic, thyme, peppercorns, mustard, anchovies and olive oil to a paste. Rub the mixture all over the beef and put in a large roasting tin. Roast for 25 mins, then turn down the oven to 160C/fan 140C/gas 3. Remove the pan from the oven, add the potatoes and toss in the fat, adding 4 tbsp sunflower oil. Return to the oven for another 90 mins for rare; 2 hrs for medium rare.
- Meanwhile, make the Yorkshires. Make the milk up to 225ml/8fl oz with water. Beat the eggs, egg white, mustard and milk together, then gradually add the flour and ¼ tsp salt - the batter should be the consistency of thin double cream. Pour into a jug. Take the meat out of the oven, cover and leave to rest, then turn the oven up to 220C/fan 200C/gas 7.
- Put 1 tbsp goose fat or oil in each of 8 large Yorkshire pudding tins and heat for 15 mins in the oven, with the potatoes on a lower shelf. Pour the batter into the tins, then cook for 15-20 mins, without opening the oven, until risen and golden. Serve with horseradish, gravy and your favourite veg.

FRENCH ROASTED BEEF
Note to readers: This method of cooking a cheap cut of beef is not difficult. Whether you want to try it depends entirely on your take on food safety. The roast needs to sit at room temperature until it reaches room temperature. Then it is seared and slow-roasted at a very low temperature for several hours. I have found this technique works beautifully because any bacteria, which normally do not penetrate deeply into the meat, are killed by the searing. Don't use this technique if this bothers you, please. Time does not include overnight resting time in refrigerator. Keeping the internal temperature of the roast below 122F allows the enzymes in the beef to break down connective tissue and tenderize the meat. This enzyme action stops at around 122F, though. Preheating the roasting pan and rack will help keep the external temperature of the seared meat steady.

- Sprinkle salt over roast. Wrap tightly and refrigerate for 12 hours. Remove roast from refrigerator, unwrap, place on a wire rack in a shallow pan, cover and let sit until it reaches room temperature. Discard wrap.
- Preheat oven to 225 degrees F.
- Prepare another shallow pan with a wire rack in it. Place in oven to heat.
- Pat the roast dry, rub 1 T oil evenly over the meat. Pepper roast.
- In a heavy pan, cast iron is best, place remaining T of oil. Heat almost to smoke.
- With kitchen tongs, place the roast into hot pan. Sear on each side for 3-4 minutes each.
- Remove pan and roast from heat.
- Place roast on warmed rack in preheated oven.
- Use a probe thermometer to monitor temperature.
- You want to try to keep the internal temperature of the roast below 122 degrees. Adjust oven temperature as needed, or open door briefly, to keep that temperature down.
- For a medium rare roast, cook to 115, remove from oven. Turn oven off. (A 5 pound roast will take around 2 hours in my oven to reach 115 degrees.) Leave roast in oven until thermometer reaches 130 F for medium rare. This will take 30 to 50 minutes longer.
- If your roast is not coming up to temperature, turn the oven back on to 225 for 5 minutes, turn it off and finish.
- When roast is at 130 F, transfer to cutting board and let rest 15 minutes.
- Slice and serve.

- Preheat the oven to 475°. Generously coat the roast with half of the chopped herb mixture and season with salt and pepper.
- In a large ovenproof skillet, heat 1 tablespoon olive oil over moderately high heat. Add the roast and lightly brown it on all sides, about 3 minutes. Add the remaining 1/2 cup extra-virgin olive oil and a pinch of salt and blend thoroughly.
- Thinly slice the roast and drizzle each portion with 1/2 tablespoon basil oil. Sprinkle with the remaining 1/4 cup chopped herbs and serve.
