1/2 cup purple potatoes, cut into 1-inch dice
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 cup small (1-inch) broccoli florets
One 12-inch parbaked prepared pizza crust
1 cup ricotta cheese
3/4 cup shredded mozzarella
2 tablespoons grated Parmesan
14 pepperoni slices
1/3 orange bell pepper, cut into 1/2-inch dice
1/2 cup thinly sliced yellow squash

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the potatoes with 1 tablespoon of the oil, sprinkle with salt and pepper, and then spread out on one half of a baking sheet. Roast for 10 minutes. Meanwhile, toss the broccoli with the remaining 1 tablespoon oil and sprinkle with salt and pepper. Remove the baking sheet from the oven and spread out the broccoli in an even layer on the other half of the baking sheet. Return to the oven and roast until the potatoes are cooked through and the broccoli is just tender, another 5 minutes. Let cool slightly. Reduce the oven temperature to 375 degrees F.
  • Slice off the bottom third of the pizza crust to form a dome shape. Then, with a large biscuit cutter or pint glass, cut out the center of the dome, leaving a rainbow arc shape. Transfer the arc to a baking sheet. Cut 5 half-moon shapes from the scrap pieces of crust.
  • In a medium bowl, stir together the ricotta, mozzarella and Parmesan, and season with a pinch of salt and pepper. Spread the cheese mixture over the rainbow crust and the half-moons. Starting from the outside edge of the rainbow, fan out the pepperoni slices in a single line. Fan the diced bell pepper in an even line beneath the pepperoni. Then add lines of the squash, roasted broccoli and roasted potatoes.
  • Bake the pizza for 5 minutes, then add the half-moons to the bottom of each side of the rainbow to form clouds. Return to the oven and bake until the cheese and crusts are hot, about 10 minutes more. Serve immediately.

4 tablespoons olive oil
2 onions, thinly sliced
2 teaspoons dried oregano
2 cloves garlic, minced
2 medium red bell peppers, finely diced
2 medium yellow bell peppers, finely diced
2 pounds loose breakfast sausage
All-purpose flour, for dusting
Two 17.3-ounce packages frozen puff pastry, thawed
1 large egg (see Cook's Note)
4 cups grated Monterey Jack cheese
48 pepperoni slices
18 slices mozzarella

Steps:

  • Line 2 baking sheets with parchment. Heat 3 tablespoons of the olive oil in a large cast-iron skillet over medium-high heat; add the onions and cook until softened and slightly browned, about 20 minutes. Stir in the oregano, garlic and red and yellow peppers and cook for another 5 minutes. Set aside to cool for 20 minutes.
  • Heat the remaining 1 tablespoon olive oil in another large cast-iron skillet over medium-high heat. Add the sausage and cook, using the back of a wooden spoon to break up the sausage meat into small bits, until browned, 10 to 15 minutes. Set aside to cool for 20 minutes.
  • On a lightly floured surface, roll out each puff pastry sheet to about 13 inches long and 10 inches wide. Place one of the puff pastry pieces on each lined baking sheet; set aside the other two. Whisk the egg in a small bowl with 1 tablespoon water.
  • Sprinkle 2 cups of the Monterey Jack cheese over one of the puff pastry sheets on a baking sheet, leaving a 1/2-inch border around the edges of the pastry. Continue layering with half the caramelized onions and peppers, sausage and pepperoni; finish with half the mozzarella slices. Brush the border of the puff pastry with the egg wash, lay one of the remaining puff pastry pieces over top and use a fork to crimp the edges. Using a sharp paring knife, cut three 1 1/2-inch vents in the top. Put the pie into the fridge to chill for 30 minutes before cooking. Repeat with the other puff pastry pieces and layering ingredients.
  • Preheat the oven to 425 degrees F.
  • Brush one of the pies with the egg wash. Bake on the bottom rack until the pastry is nicely browned, about 20 minutes.
  • Wrap the second pie in plastic wrap on the baking sheet, then in aluminum foil; freeze. When ready to bake, preheat the oven to 425 degrees F. Unwrap the pie and brush it with egg wash. Bake from frozen on the bottom rack until the pastry is nicely browned, about 30 minutes.

2 plain pizza bases
6 tbsp passata
400g mixed red and yellow tomatoes , sliced
75g sprouting broccoli , stems finely sliced
8 green olives , pitted and halved (optional)
150g mozzarella cherries (bocconcini)
2 tbsp fresh pesto
handful fresh basil leaves, to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Put each pizza base on a baking sheet and spread each with half of the passata. Arrange the tomatoes on the top in rings or wedges of colour and add the broccoli and the olives, if using. Squish the mozzarella cherries (bocconcini) a little before dotting them over the pizzas, then drizzle 1 tbsp pesto over each.
  • Bake for 15-20 mins or until the top is bubbling and just starting to brown a little. Scatter over the basil leaves before serving.

450g butternut squash , peeled, sliced and cut into small chunks
2 tbsp olive or rapeseed oil
1 large onion , sliced
550g small waxy potatoes , peeled and sliced
2 x 375g blocks all-butter puff pastry
flour , for dusting
1 x 320g ready-rolled sheet all-butter puff pastry
2 tbsp breadcrumbs
300g pack cooked beetroot , sliced
450g jar roasted red peppers , drained
200g block feta cheese
150g frozen peas
small bunch each parsley and mint, chopped
10 eggs
2 tbsp sesame seeds

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the squash in 1 tbsp oil and some seasoning and roast for 20 mins until soft. Meanwhile, fry the onion in the remaining oil for 10-15 mins over a low heat until golden and boil the potatoes for 8 mins until soft. Drain the potatoes and leave the veg to cool.
  • Reduce oven to 180C/160C fan/gas 4. Line a 20cm x 30cm baking tin with a long double thickness strip of parchment (this will help you to lift out the pie once cooked). Squeeze the two blocks of pastry together, then roll out on a floured surface - the pastry should be about the thickness of a £1 coin. Use the pastry to line the tin, leaving any excess pastry hanging over the edges.
  • Sprinkle the breadcrumbs over the base of the pastry. Layer in the beetroot slices, peppers, squash, onions, feta, potatoes, peas and herbs (in that order for a nice rainbow effect), seasoning well between each layer. Beat the eggs and pour slowly over the filling until most of it has sunk through the layers, saving a little to glaze the top. Brush some egg over the overhanging pastry then lay the rolled pastry sheet on top. Press the pastry sheets together, then use some kitchen scissors to trim the excess pastry, leaving about 2cm. Roll the edges in to seal, then press them firmly with a fork. Brush with egg, sprinkle with seeds, then use the fork prongs to mark out 12 portions. Bake for 1 hr 20 mins until the pastry is golden and crisp. Leave to cool completely before slicing, or chill for up to two days before serving.

Keto Cauliflower Crust for 1 pizza crust
1/4 cup cherry tomatoes
1/2 small carrot, peeled and thinly sliced into rounds
1 inch diced yellow bell pepper (about 1/6th of a yellow pepper)
1/4 small red onion, thinly sliced
2 teaspoons extra-virgin olive oil
1 teaspoon kosher salt
3 tablespoons no-sugar-added tomato sauce
1/3 cup shredded shredded low-moisture full fat mozzarella cheese
1 teaspoon dried oregano, to garnish
crushed red pepper flakes, to taste
1 tablespoon chopped parsley

Steps:

  • Preheat oven to 450 degrees F.
  • Place the tomatoes, sliced carrot, bell pepper and red onion on a sheet tray in four separate rows. Drizzle the oil over the vegetables and season with salt. Roast the vegetables in the oven for 10-15 minutes, or until softened and just beginning to brown. Set aside to cool.
  • Spread the tomato sauce over the cauliflower pizza crust and top with the shredded mozzarella. Evenly spread the onions over the pizza followed by the carrot, peppers, and then tomatoes. Season with dried oregano and crushed red pepper and put the pizza back in the oven and bake 6-8 minutes or until the cheese is melted.

Soft, warm dough topped with a quick homemade pizza sauce, lots of melted cheese, and a rainbow of veggies - what more could you want? The personal size makes them perfect for a fun snack, or easy meal, and you can even freeze the extras to enjoy later :).

1 tablespoon olive oil
2 garlic cloves, minced
1 tablespoon italian seasoning
1/2 tablespoon dried oregano leaves
1/4 teaspoon red pepper flakes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/4 teaspoon salt
6 leaves fresh basil, coarsely chopped
1 teaspoon honey (optional)
4 -5 roma tomatoes
1 red bell pepper
1 orange bell pepper
1 sweet potato
1 yellow bell pepper
1 green bell pepper
1 zucchini
5 -6 purple potatoes
1 red onion
1/2 tablespoon olive oil
16 ounces ready to bake pizza dough
1/2 tablespoon olive oil
1 1/2 cups shredded mozzarella cheese
8 slices mozzarella cheese
1 sheet nori

Steps:

  • You will need to gather a few tools before you begin: Number cookies cutters (stainless steel works best), cloud fondant or cookie cutters, olive oil spray, pizza stone or baking sheet, and all purpose flour.
  • Heat a saucepan over medium low heat, and add the olive oil and garlic. Cook for 1 minute. Add the dried spices, tomato sauce, tomato paste, and salt, and bring to a simmer. Cook, stirring occasionally, for 10 minutes. Remove from the heat and stir in the fresh basil. Taste, and add honey if you would like the sauce a bit sweeter. Transfer to a heatproof container and place in the refrigerator until ready to use.
  • Preheat the oven to 400°F. Remove the pizza dough from the refrigerator 30 minutes before baking to bring it to room temperature. .
  • Use the number cookie cutters to cut either 3.14 out of the different colored veggies, or the Pi sequence. I ordered my numbers so that each row of veggies would be a different color, but you can also alternate the colors to your liking. A helpful tip is to use a towel to press down on the cookie cutters (it cushions your fingers for comfort). Feel free to swap out any of my veggies for one you prefer.
  • To roast the potatoes, transfer the sweet potato and purple potato cutouts to a parchment lined baking sheet, toss with 1/2 tablespoon olive oil, and spread the numbers out. Bake for 7 minutes. Allow to cool while preparing the crust.
  • Raise the oven temp to 425°F, and move your oven racks so you can bake on the lowest rack. Prep your pizza stone or baking sheet by dusting it lightly with flour (you may need to also grease a baking pan or use parchment paper to prevent sticking). .
  • Divide the pizza dough into 8 equal sections and roll each into a ball (dusting your hands and the dough, with flour, as needed). Stretch the dough out with your hands and roll into a circle using a rolling pin until they are about 1/4 inch thick. Brush the top of each pizza with olive oil, and par bake for 5 minutes on the lowest rack in the oven.
  • Spread 1 tablespoon of sauce onto the top of each pizza, and sprinkle with 3 tablespoons mozzarella cheese. Bake, on the lowest oven rack for 7 minutes.
  • Arrange the number veggies on top of the pizza, and return to the over for 3-5 minutes more, or until the cheese is bubbling and the crust is beginning to darken slightly.
  • While the pizza is cooling just enough to eat, you can make the cute clouds to add to the top. Use your cloud cutters to press the designs out of mozzarella slices (cut out little arms too if you would like with a sharp knife). I did 1-3 clouds per pizza, slightly overlapping a few of them.
  • Use either the nori to cut the eyes and smile out for each cloud. To make it easier, you can draw the designs onto parchment paper, and cut them out to use as a template for the nori. Repeat this process to cut the Pi symbol out of the nori as well (making a template here is much easier as you can also size the shape to fit your pizzas and clouds). *A helpful tip is to fold the nori sheet a few times before cutting to save you time and make sure the eyes match.
  • Place the faces onto the clouds (a toothpick dipped into a little water helps with this), give them each a Pi symbol to hold, place the clouds on top of your pizzas, and now you're ready to celebrate Pi Day!
