Home Fries - From America's Test Kitchen

Provided by The Rachael Ray Staff

Number Of Ingredients 11

3 1/2 pounds russet potatoes
peeled and cut into ¾-inch dice
1/2 teaspoon baking soda
3 tablespoons unsalted butter
cut into 12 pieces
Kosher salt and pepper
Pinch cayenne pepper
3 tablespoons vegetable oil
2 onions
cut into 1/2-inch dice
3 tablespoons minced fresh chives

Steps:

  • Don't skip the baking soda in this recipe
  • It's critical for home fries with just the right crisp texture
  • Adjust oven rack to lowest position, place rimmed baking sheet on rack, and heat oven to 500°F
  • Bring 10 cups water to a boil in a Dutch oven over high heat
  • Add potatoes and baking soda
  • Return to boil and cook for 1 minute
  • Drain potatoes
  • Return potatoes to Dutch oven and place over low heat
  • Cook, shaking pot occasionally, until any surface moisture has evaporated, about 2 minutes
  • Remove from heat
  • Add butter, 1 1/2 teaspoons salt and cayenne; mix with rubber spatula until potatoes are coated with thick, starchy paste, about 30 seconds
  • Remove baking sheet from oven and drizzle with 2 tablespoons oil
  • Transfer potatoes to baking sheet and spread into even layer
  • Roast for 15 minutes
  • While potatoes roast, combine onions, remaining 1 tablespoon oil, and 1/2 teaspoon salt in bowl
  • Remove baking sheet from oven
  • Using thin, sharp metal spatula, scrape and turn potatoes
  • Clear about 8 by 5-inch space in center of baking sheet and add onion mixture
  • Roast for 15 minutes
  • Scrape and turn again, mixing onions into potatoes
  • Continue to roast until potatoes are well browned and onions are softened and beginning to brown, 5 to 10 minutes
  • Stir in chives and season with salt and pepper to taste
  • Serve immediately

RACHEL'S SUPER EASY & FAST HOME FRIES

Rachel's Super Easy & Fast Home Fries image

Time-consuming home fries on my watch? Never! I had leftover potato "meat" from making potato skins so I made home fries with them, from 8 small potatoes without skins so that probably equals about 4 regular potatoes and 6 small ones. If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes. NOTE: The amounts shown aren't an exact science, more to give you an idea and show that home fries can be made quickly :)

1 teaspoon seasoning salt (this is an estimate, see directions)

Steps:

  • In a large skillet or frying pan, melt the butter and add a couple shakes of Season-All, mix well.
  • Add the potatoes and move them around with a spatula until they are coated with enough of the seasoned butter. Add more Season-All if it looks like there's not enough.
  • On medium-high heat, let the potatoes sit for about 4-5 minutes or until one side is browned and crispy.
  • Turn the potatoes over and let them cook 4-5 minutes on this side too, add more Season-All if need be.

Time 50m

Yield 6 side dish servings

Number Of Ingredients 8

4 russet potatoes (about 2 pounds), peeled and cut into a 3/4-inch pieces
Kosher salt
5 slices bacon (about 4 1/2 ounces)
3 tablespoons vegetable oil, like soy, peanut, or corn
1 medium yellow onion, thinly sliced
Freshly ground black pepper
1 tablespoon chopped fresh parsley leaves, optional
Pinch cayenne pepper, optional

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
  • Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
  • Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. Time 45m

Yield 2

Number Of Ingredients 9

3 large russet potatoes, peeled and quartered
2 tablespoons olive oil
1 tablespoon butter
Salt and freshly ground black pepper to taste
¼ teaspoon paprika
cayenne pepper to taste
1 pinch garlic powder
1 pinch onion powder
1 tablespoon Chopped fresh chives

Steps:

  • Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
  • Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
  • As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.
