2 eggs
4 tablespoons melted butter
1 1/2 cups milk
1 cup frozen corn kernels
Extra-virgin olive oil or, vegetable oil, for drizzling
2 tablespoons extra-virgin or vegetable oil, 2 turns of the pan
1 pound ground beef
1 small onion, finely chopped
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons cayenne sauce
Salt
2 1/2 cups (10-ounce sack from dairy aisle) shredded Cheddar or jack cheese
1/2 red bell pepper, chopped
1 small can, 2 1/4 ounces sliced chillies or jalapenos, drained

Mild to medium taco sauce to pass at table, 1 cup

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together 2 packages muffin mix with 2 eggs, 4 tablespoons melted butter (melt in microwave 30 seconds), 1 1/2 cups milk and frozen corn kernels. A BURGER FOR RACHAEL

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 21

4 large Idaho potatoes, scrubbed
1/3 to 1/2 cup extra-virgin olive oil, divided
4 to 5 sprigs fresh rosemary, finely chopped
Salt and freshly ground black pepper
2 teaspoons crushed red pepper flakes, divided
4 to 5 cloves garlic
1/2 pound ground sirloin
1/2 pound ground pork
1 tablespoon grill seasoning
2 teaspoons fennel seed
2 teaspoons Worcestershire sauce
2 vine-ripe tomatoes
1/2 red onion
3 tablespoons capers
2 teaspoons anchovy paste
Handful fresh flat-leaf parsley
1 teaspoon lemon zest
3/4 cup pitted black or green olives
4 slices sharp provolone or thinly sliced smoked mozzarella
4 crusty rolls, such as sesame kaiser rolls, split
10 to 12 basil leaves, torn or shredded

Steps:

  • Preheat oven to 500 degrees F.
  • Cut 10 wedges from each potato and place on a baking sheet. Drizzle a couple tablespoons of oil over the potatoes to coat them lightly, then season with rosemary, salt and pepper, to taste, and 1 teaspoon crushed red pepper flakes. Crack a couple of garlic cloves and add to the potatoes. Roast 25 minutes, turning once. Remove from the oven, set aside and keep warm.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Place ground meats in a bowl and add 2 to 3 cloves of grated garlic, grill seasoning, fennel seed, 1 teaspoon crushed red pepper flakes and Worcestershire sauce. Mix the ingredients well and form into 4 patties. Make patties thinner in the center, since burgers tend to bulge as they cook. Cook burgers 5 to 6 minutes on each side.
  • While burgers cook, slice the tomatoes and onion.
  • In a food processor, combine capers, parsley, anchovy paste, lemon zest and olives. Turn processor on and drizzle in 3 to 4 tablespoons oil until a thick paste forms.
  • Place the cheese on top of the burgers and allow to melt.
  • Toast buns and place burgers on the bottoms. Top with tomato, onions and basil. Slather the bun tops with some olive tapenade and cover the burgers with bun tops. Serve with oven fries.

RACHAEL RAY'S MEATZA PIZZA BURGERS

Rachael Ray's Meatza Pizza Burgers image

These burgers will satisfy two cravings at once: a craving for Italian food and a burger craving. Perfect. I found them in Rachael Ray's book "30-Minute Meals," and I haven't tried them yet, so tell me how they are!

Time 17m

Yield 4 serving(s)

Number Of Ingredients 10

3/4 lb extra lean ground beef
2 tablespoons tomato paste
1/4 lb chopped chorizo sausage or 1/4 lb pepperoni
chopped fresh oregano, to taste
2 garlic cloves, minced
black pepper, to taste
4 slices provolone cheese
romaine lettuce
1 firm tomatoes, sliced
4 rolls (try to find round, crusty, sesame-seeded ones)

Steps:

  • Combine ground beef, tomato paste, chorizo or pepperoni, oregano, garlic, and pepper. Form into 4 patties.
  • Now it's time to cook the burgers. Ray's directions are for grilling: cook burgers for 5 minutes on each side over medium-high gas heat or charcoal. But I bet you can just pan fry them or pop them on an indoor grill.
  • In the last minute, melt a slice of provolone on each burger. Serve with romaine lettuce and slice tomato on crusty rolls.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 32m

Yield 4 servings

Number Of Ingredients 14

1 pizza dough, store bought or from your favorite pizza shop
A palm full all-purpose flour or cornmeal
Extra-virgin olive oil, for drizzling, plus 2 tablespoons - 2 turns of the pan
2 tablespoons finely chopped rosemary leaves, a couple of sprigs
Coarse salt
1 1/2 pounds ground sirloin
1 medium onion, finely chopped
4 to 6 cloves garlic, finely chopped
Black pepper
1 (6-ounce) can tomato paste
1/2 cup grated Parmigiano-Reggiano
A handful flat-leaf parsley, chopped
1 teaspoon dried oregano
3/4 pound fresh mozzarella or brick mozzarella, your choice, sliced or grated

Steps:

  • Preheat oven to 425 degrees F.
  • On a round pizza stone or pan or on a rectangular baking sheet, using flour or cornmeal to dust the dough, spread out the dough to form your crust. If you are using a baking sheet, drizzle pan with extra-virgin olive oil then set crust in place. Poke the pizza dough in several areas with the tines of a fork. Drizzle the dough with extra-virgin olive oil then season it with finely chopped rosemary and a little salt. Place in oven 10 minutes.
  • Heat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, then the meat. Brown and crumble meat a couple of minutes, then add onions and garlic. Season the meat with salt and pepper then work in the tomato paste using the back of a wooden spoon to combine. Stir in the cheese, parsley and oregano.
  • Remove pizza crust from oven and top with meat. Arrange cheese over the pizza, working to edges. Return the pizza to the oven and bake until cheese is golden, another 10 to 12 minutes.

This incorporates vegetables and it has a fantastic and unique flavor. My toddler loves these and she is getting a hidden source of veggies! I found this in the Taste of Home magazine in the August/September 2008 issue.

PIZZA BURGERS

Pizza Burgers image

These are a good hearty burger, kind of like a pizza sloppy joe. Delicious and easy to do! I usually cut back a little on the garlic salt, you can do what you like. You can make these ahead, and just pop them in the oven when ready.
