A Middle Eastern salad drizzled with lemon tahini dressing.

3 tomatoes
1 cucumber (optional)
½ tablespoon parsley (chopped)
2 tablespoons tahini paste
2 tablespoon lemon juice
2 teaspoons water (cold)
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • In a bowl, mix all the ingredients together. The tahini mixture will become watery, then it will shrink, and then again it will become a bit loose while you mix. If your tahini dressing is too thick, add a little bit of cold water and mix again. Adjust ingredients to your liking.
  • Chop the tomatoes and the cucumber into cubes. Add the tahini dressing and mix the salad.
  • Sprinkle with chopped parsley and serve.

2 pickle-size Persian cucumbers, diced
1 large tomato, diced
3 radishes, diced
1 green onion, sliced
10 mint leaves, sliced

Salt, to taste

Steps:

  • Combine the cucumber, tomato, and radish in a bowl with the green onion, mint, and parsley. In a small bowl, stir together the garlic, tahini, lemon juice, and olive oil until smooth; season to taste with salt.

1 Tbsp rice vinegar*
1 tsp toasted or untoasted sesame oil ((if oil-free, sub water - flavor will be affected))
2 tsp maple syrup ((plus more to taste))
2-3 Tbsp water ((plus more to taste))
1 pinch sea salt ((optional))
3-4 cups chopped green kale ((massage with a dash of sesame oil for softer texture))
1 cup grated / ribboned carrot
1/4 cup thinly sliced green onion
1/2 cup thinly sliced red cabbage
1/2 cup roasted salted cashews (or peanuts), roughly chopped

Steps:

  • To a medium mixing bowl add tahini, fresh ginger, garlic, miso paste, coconut aminos, rice vinegar, sesame oil, and maple syrup and whisk to combine.
  • Add water until a creamy, pourable sauce is achieved. Taste and adjust flavor as needed, adding more vinegar for tanginess, maple syrup for sweetness, miso for strong miso flavor, garlic or ginger for zing, or salt or coconut aminos for saltiness.
  • Store leftovers in the refrigerator up to 5-7 days. Freezer friendly up to 1 month, though best when fresh.

2 tbsp cold-pressed rapeseed oil
320g sweet potatoes , cut into cubes
2 large carrots , cut into thin sticks (320g)
2 large courgettes , (375g) cut into chunks
2 medium red onions , halved and sliced
1 tsp cumin seeds
2 tbsp finely chopped ginger
2 tbsp pumpkin seeds
2 x 390g cans green lentils , drained
2 tsp vegetable bouillon powder
1 lemon , zested
good handful of mint , roughly chopped
handful of parsley , roughly chopped
2.5-3 tbsp tahini
1 garlic clove , finely grated
2 x 120g pot bio yogurt
a little smoked paprika , to serve

Steps:

  • Heat the oil in a large non-stick wok. Add the sweet potato and fry for 5 mins, stirring frequently until it starts to soften. If it starts to brown too quickly, put a lid on the pan. Add the carrot, courgette, onion, cumin and ginger, then cook over a high heat, stirring frequently, until the veg is tender and a little charred. Stir in the seeds towards the end so they cook for a couple of mins. Remove from the heat and add the lentils, bouillon powder, lemon zest, mint and parsley.
  • Meanwhile, stir the tahini with the garlic, yogurt and 1 tbsp water to make a dressing. Spoon the lentil salad into bowls and top with the dressing and paprika, if using. If you're following our Healthy Diet Plan, save two portions stored in containers and chill until ready to eat.

1 large sweet potato
2 medium beets (root only)
1 Tbsp olive oil
Salt + pepper, to taste
1 large bunch curly kale ((roughly 5-6 cups, packed))
1/2 cup pecans
1/4 cup raisins
1/2 cup tahini
1 lemon, juice only
1 tsp smoked paprika
1 tsp cumin
1 tsp garlic powder
1 Tbsp maple syrup
Salt + pepper, to taste
Water, to desired consistency ((I used 4 Tbsp))

Steps:

  • Preheat oven to 400F. Line a large baking sheet with parchment paper.
  • Peel the sweet potato and beets. Chop both vegetables into approximately 1/2-inch cubes.
  • Place cubed sweet potatoes and beets on the baking sheet. Toss in olive oil, salt + pepper. Spread in an even single layer (with some space between veggies) and roast in the oven for 30 mins.
  • Meanwhile, prep kale: remove from hard stems, wash/dry in a salad spinner, then chop or tear into smaller pieces.
  • Add all dressing ingredients to a small-medium sized bowl. Gradually add 1 Tbsp of water at a time until desired consistency is reached. For reference, I used 4 Tbsps of water here! Season to taste and set aside.
  • Place pecans on a small baking sheet, then place in the oven for 6 minutes (you can do this in the last 6 mins of roasting the veggies!) They should be toasty, but not burnt (keep an eye on them).
  • Remove everything from the oven. Add kale to a large mixing bowl and top with roasted sweet potatoes, beets, toasted pecans, and raisins. Pour tahini dressing overtop and toss until well-combined.
  • Feel free to serve immediately, or allow the dressing to sit and soften the kale for about 10 mins. Enjoy!
