QUICK SPINACH AND FRUIT SALAD

Steps:

• 1. Wash and dry spinach. Divide evenly into two salad bowls.
• 2. Arrange sliced apples, pears, strawberries and blueberries on top of spinach.
• 3. in a small bowl, mix commercial poppyseed dressing with apple cider vinegar. Drizzle some over each serving .
• 4. Sprinkle feta and chopped pecans on top to serve.

FRUITY SPINACH SALAD

Steps:

• 1. Place salad ingredients in attractive bowl.
• 2. Make dressing by mixing remaining ingredients together.
• 3. Toss spinach with dressing and serve immediately.

FRUIT AND SPINACH SALAD

Steps:

• Wash and drain spinach.
• Cut each endive lengthwise into quarters.
• With knife or peeler, peel kiwis and cut into 1/2 inch thick slices.
• Remove rind from cantaloupe and cut into large chunks.
• Arrange spinach, endive, kiwis, and cantaloupe in 4 large individual salad bowls.
• In 2-quart saucepan over medium-high heat, in hot olive oil cook onion, salt, pepper until onion is golden and tender, stirring occasionally.
• Remove saucepan from heat and stir in orange juice and white wine vinegar.
• Crumble feta cheese, cut Swiss cheese into 1/2 inch pieces.
• To serve: spoon warm orange dressing over spinach salad in bowls.
• Sprinkle with feta and swiss cheeses.

SPINACH AND FRUIT SALAD

Steps:

• steam the corn and cilantro for a 4 minutes on high in the microwave.
• add salt to the corn and cilantro mix.
• mix together with the spinach and lettuce.
• add lemon juice according to taste (not much is required).
• eat with a nice piece of toasted bread.

QUICK SPINACH SALAD WITH SPROUTS

Steps:

• Cubed skim-milk mozzarella cheese can be used instead of crumbled Feta cheese.
• Rice vinegar, cider vinegar or balsamic vinegar can be used instead of lemon juice.
• Trim, wash and dry spinach.
• Tear into bite-sized pieces to make about 10 cups, lightly packed.
• Place in salad bowl.
• Add alfalfa sprouts, cheese and sunflower seeds.
• In small measuring cup, bowl or jar with screw top, combine oil, lemon juice, water, garlic, mustard, salt and pepper.
• MIx well.

FRUIT AND SPINACH SALAD

Steps:

• Drain fruit cocktail, reserving 1 tablespoon of the liquid.
• In a large bowl, combine fruit cocktail, spinach and raisins.
• Toss gently to mix.
• For dressing, combine reserved liquid and mayonnaise.
• Cover and chill spinach mixture and dressing separately for a least one hour.
• Before serving, add dressing to the spinach mixture.
• Toss gently to coat.
