Quick + Easy Instant Pot Pot Roast image

Make pot roast fit for an elegant dinner party for a weeknight meal. This healthy dish is ready in about an hour.

2 1/2 lbs beef chuck roast
1 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 garlic clove, roughly chopped
1 teaspoon Worcestershire sauce
2 teaspoons dried thyme
1 tablespoon tomato paste
1 cup beef broth
1 lb small potato
3/4 lb carrot, peeled and roughly chopped
1/4 cup chopped fresh parsley

Steps:

  • Set Instant Pot to sauté mode, add beef and sear for 2 to 3 minutes per side.
  • Season with salt and pepper, then add garlic, Worcestershire sauce, thyme, tomato paste and beef broth.
  • Top beef with potatoes and carrots.
  • Cover and lock the lid in place. Place the vent to the sealing position and set to manual on high pressure for 40 minutes. When the cook time is done, allow the pressure to naturally release for 15 minutes.
  • Release remaining pressure and remove the lid. Using a slotted spoon, transfer carrots and potatoes to a serving dish. Transfer pot roast to same dish and garnish with parsley.
  • If a gravy is desired, set the pot to saute mode and bring cooking liquid to a simmer. Mix a tablespoon of cornstarch with 3 tablespoons of cooking liquid. Add the cornstarch mixture back to the simmering liquid; cook and stir until thickened. Spoon some of the gravy over the pot roast before serving.

4 pounds boneless chuck roast
2 cups water
1 (1 ounce) package dry onion and mushroom soup mix
1 tablespoon Worcestershire sauce
3 potatoes, peeled and chopped
2 stalks celery, chopped
2 carrots, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Score roast on top and sides, and place in a medium sized oven bag. Combine water, soup mix, and Worcestershire sauce; pour over roast. Arrange vegetables around meat. Place oven bag on a roasting pan.
  • Place roast in oven, and immediately reduce heat to 300 degrees F (150 degrees C). Bake for 1 1/2 hours for medium well done, or adjust time for desired doneness.

1 beef bottom round roast or rump roast (2-1/2 lb.)
1 bottle (8 oz.) KRAFT Classic CATALINA Dressing, divided
1/4 cup water
1/4 tsp. black pepper
1-1/2 lb. new potatoes (about 5), peeled, quartered
1 large onion, cut into 8 wedges
1 pkg. (16 oz.) baby carrots
2 stalks celery, cut into 2-inch pieces
1/2 cup pimento-stuffed green olives

Steps:

  • Heat oven to 325°F.
  • Brown meat in 1/4 cup dressing in ovenproof Dutch oven on medium-low heat. Add remaining ingredients; cover.
  • Bake 2 to 2-1/2 hours or until meat is tender.
  • Remove meat and vegetables from pan, reserving juices in pan. Cut meat across the grain into thin slices. Serve meat and vegetables topped with pan drippings.

3 -4 lbs pot roast
1 (8 ounce) bottle Catalina dressing
3/4 cup water
8 small onions
8 small potatoes
1 cup stuffed green olive
2 tablespoons flour

Steps:

  • Brown meat in 1/4 c dressing.
  • Add remaining dressing and 1/2 c water.
  • Cover.
  • Simmer 2 hours and 15 minutes.
  • Add onions, potatoes and olives.
  • Continue simmering 45 minutes, until meat and vegetables are tender.
  • Remove meat and vegetables to warm, serving platter.
  • Gradually add remaining 1/4 c water to flour.
  • Stir until well blended.
  • Gradually add flour mixture to hot liquid in pan.
  • Cook, stirring constantly until mixture boils and thickens.
  • Simmer 3 minutes, stirring constantly.
  • Serve with meat and vegetables.

17 ounces fully cooked beef roast, undrained
10 ounces ro-tel diced tomatoes and green chilies, undrained
7 ounces olives, drained
15 1/4 ounces del monte Mexican-style corn

Steps:

  • Cook rice according to package directions.
  • Place Beef roast, tomatoes, and olives in large saute pan.
  • Cover and cook and stir for 10 minutes or until thoroughly heated and flavors are blended.

4 lbs beef roast
2 ounces salt pork, skinned and chopped
1 teaspoon capers, chopped
1 teaspoon oregano
1 teaspoon vinegar
2 green peppers, cleaned and chopped
1 1/2 lbs potatoes, peeled and diced
3 tablespoons tomato puree
3 chilies
2 onions, chopped
3 tablespoons olive oil
2 ounces lard
6 cups water
1 tablespoon salt
1 tomatoes

Steps:

  • Make a deep cut with a sharp knife across the meat.
  • Combine salt pork, capers, oregano and vinegar with half the peppers, chilies and onions.
  • Add 1 T oil.
  • Pound into a smooth mixture and stuff this mixture into the cut in the roast.
  • Melt lard in large saucepan and brown meat on all sides over high heat for 10 minutes.
  • Add water, salt and remaining peppers, chilies and onions.
  • Bring to a boil and simmer over moderate heat for 2 to 2 and 1/4 hours.
  • Add potatoes, tomato and tomato puree, mixed with the rest of the olive oil.
  • Stir into pot.
  • Bring back into boil and cook, uncovered, for 30 minutes or until potatoes are soft and the sauce thickens.

2 1/2 lbs lean pot roast
1 tablespoon Old Bay Seasoning
7 red potatoes, cut in large wedges
1 onion, extra large dice
1 lb fresh baby carrots
4 garlic cloves, peeled and sliced
14 ounces beef broth
1 cup tomato sauce
1 1/2 tablespoons balsamic vinegar
1 tablespoon soy sauce
2 tablespoons sugar
1/2 teaspoon sea salt
1/3 teaspoon pepper

Steps:

  • Preheat the oven to 300 degrees.
  • Heat olive oil in a medium skillet.
  • Rub the roast with the tbs of old bay seasoning on all sides.
  • Sear the roast on all sides for about 10-12 minutes in the olive oil.
  • Place the roast in a large baking pan or dish while leaving the juices in the skillet.
  • Add the potatoes, onion, baby carrots, garlic to the roast in baking dish.
  • Sprinkle salt and pepper over the meat and veggies.
  • In the same skillet the meat was seared in, CAREFULLY heat the remaining ingredients (beef broth, tomato sauce, vinegar, soy sauce, and sugar) with the oil.
  • **When you initially put last the ingredients in the skillet, the oil may splatter so do it very slowly.**.
  • Pour the thin sauce mixture over the meat and veggies in the baking dish and cover.
  • Bake for around 2 1/2-3 hours, checking on the meat about half way through.

3 onions , thinly sliced
2 tsp paprika
zest and juice 1 lemon
good handful parsley , roughly chopped
150ml stock
1 tbsp olive oil

Steps:

  • Heat oven to 190C/170C fan/gas 5. Put all the ingredients into a large, wide ovenproof dish. Mix everything together with your hands and season.
  • Bake for 45 mins, stirring the onions after 20 mins, until the chicken is golden and the onions tender. Serve with rice.
