Easy weeknight desert can be cooked while eating dinner. You can double the fruit, but it may take more time to cook. Also good to add cinnamon &/or nutmeg to the batter, depending on your taste.

1 cup flour
1 cup sugar
1 teaspoon baking powder
1/2 cup milk
1/2 cup butter (1 stick)
1 (12 ounce) package frozen mixed berries (or other frozen fruit such as peaches)

Steps:

  • In medium baking dish, melt butter. Add frozen fruit.
  • Mix together remaining ingredients and pour over fruit. Do not stir.
  • Bake at 375*F for 30-45 minutes until cake is done.

I found this recipe in the Betty Crocker "Good and Easy" cookbook and it's become a family favorite. The almond and cherry combination is wonderful. It's such a fast recipe, using ingredients that are easily kept on hand. UPDATE 2/16/09: Thanks to several reviews pointing out that the recipe needs to be served a la mode, I am modifying the original recipe to the way I've been making it myself for years now. I've always had ice cream in step 8 as a serving option (have now added it to the ingredient list) & I've always used a full teaspoon of almond extract in the mix because we prefer the stronger flavor. 1 (21 ounce) can cherry pie filling
1/2 teaspoon almond extract (I use 1 teaspoon)
1 cup Bisquick baking mix
1 tablespoon sugar
1/4 cup milk
1 tablespoon butter, softened
sugar
vanilla ice cream, optional for serving (or whipped cream)

Steps:

  • Mix pie filling & almond extract in ungreased 8x8x2" square baking dish.
  • Place in COLD oven.
  • Heat oven to 400 degrees.
  • Mix Bisquick, 1 Tbl sugar, milk & butter with fork until a soft dough forms.
  • Drop SIX spoonfuls onto warm filling. It's not meant to be a top crust, just 6 individual biscuits with filling showing inbetween.
  • Sprinkle with additional sugar.
  • Bake 18-20 minutes or until topping is lightly browned.
  • Serve with vanilla ice cream.

1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (28 ounce) can sliced peaches
1 teaspoon almond extract
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place butter in a 9x9-inch baking pan; melt in the preheating oven.
  • Mix flour, sugar, and milk together in bowl until smooth. Open peaches and add almond extract to the peaches and juice.
  • Pour peaches over melted butter in the 9x9-inch pan; spoon batter atop peaches without mixing. Sprinkle with cinnamon.
  • Bake in the preheated oven until bubbling and top is lightly browned, about 45 to 60 minutes.

  • If using fresh peaches, peel and slice add 1/4 cup white sugar (depending on sweetness) set aside.

5 to 6 cups frozen sliced peaches, any brand, 1 large sack
1 package complete biscuit mix (recommended: Jiffy brand)
1/2 cup water
1/2 cup granulated sugar, plus 2 tablespoons, divided
2 teaspoons ground cinnamon, divided
1/4 teaspoon ground nutmeg, eyeball it
1/2 teaspoon ground allspice
1/8 teaspoon black pepper, a couple of pinches
Pinch salt
2 (1-ounce) boxes or 1/3 cup golden raisins, a couple of handfuls
1/4 cup, (2-ounce) package, sliced almonds

Steps:

  • Preheat oven to 425 degrees F.
  • Place frozen peaches in an 8 by 8 glass baking dish, defrost in microwave for 3 minutes on high. While the peaches are defrosting, make the cobbler topping. In a bowl, combine the biscuit mix with a 1/2 cup of water, stir until thoroughly combined but do not overwork. In another bowl combine 1/2 cup of the granulated sugar, 1 teaspoon cinnamon, nutmeg, allspice, pepper, a pinch of salt and raisins. Remove peaches from the microwave and combine with the sugar mixture in baking dish. Top the seasoned peaches with biscuit mix, use your fingers to press out until even. Top the biscuit mix with almonds. Mix remaining cinnamon and sugar together and sprinkle over the biscuits. Bake until cobbler top is firm and lightly golden and peaches are bubbly and hot, about 20 to 25 minutes.
  • Serve warm as is or with ice cream and whipped cream if you have some on hand.

Quick, easy, and just plain good. The pie crust is perfect contrast to the sweet berry filling. This recipe came from the website of Atty Donald Burger of Houston, Tx. and I adapted it only slightly. He sure knows how to cook!!!!! I've used Splenda with great results instead of the sugar and also have made it with blueberries. If fresh berries are not in season, substitute a 16 0z bag frozen. If you like more berries, add as much as the bowls will hold. UhHuh!

3/4 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1/4 cup all-purpose flour

1 refrigerated pie crust, room temperature

Steps:

  • Rinse fresh berries. In a seperate bowl, combine the sugar, cornstarch, salt, flour and cinnamon. Mix thoroughly. Combine the dry ingredients with the berries, coating the berries well.
  • Use one of four single serving cobbler bowls, (2 1/2 inches by 3 3/4 inches in diameter Corningware) or as I do, a deep dish glass pie pan. Spray lightly with cooking oil spray.
  • Pour the Blackberries, coated with above mix into cobbler bowls or pie plate. Place the pie crust on top and cut two holes in crust.
  • I like to brush the crust with milk or 1/2 and 1/2 and sprinkle with sugar.
  • Place bowls or pie plate on cookie sheet and place in oven for 30 minutes at 425 or 45 minutes at 375. Top with ice cream or whipped cream and enjoy with coffee. You're gonna like it!
