Lean ground turkey has significantly less saturated fat than beef. It tastes rich and earthy when simmered with chipotle chili powder. Carrots and peas brighten the filling, while yogurt, stirred into the mashed potatoes and parsnips, adds calcium.

1 large onion, finely chopped (about 1 1/2 cups)

2 garlic cloves, minced
2 pounds lean ground turkey
Coarse salt and freshly ground pepper
1 tablespoon fresh thyme
3/4 teaspoon chipotle or regular chili powder
2 tablespoons plus 1 1/2 teaspoons cornstarch
6 ounces frozen peas (about 1 1/2 cups)
1 1/2 pounds russet potatoes, peeled and cut into 1-inch pieces
3 parsnips (6 ounces), peeled and cut into 1/2-inch pieces
1 cup plain fat-free yogurt
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 425 degrees. Make the topping: Place potatoes and parsnips in a medium saucepan, cover with water by 2 inches, and bring to a simmer. Cook until fork tender, about 20 minutes. Drain, reserving 2 cups cooking liquid. Pass potatoes and parsnips through a ricer. Stir in yogurt and 3/4 teaspoon salt. Season with pepper.
  • Make the filling: Heat oil in a medium skillet over medium heat. Cook onion, celery, carrots, and garlic, stirring, until tender, 10 to 12 minutes.
  • Add turkey; cook, breaking up any large pieces, for 5 minutes. Stir in 1 1/2 teaspoons salt, the thyme, and chili powder; season with pepper. Whisk together cornstarch and reserved 2 cups cooking liquid; add to turkey. Boil for 1 minute. Stir in peas. Transfer to a 2-quart round or oval baking dish; top with potatoes. Bake until bubbling and top is browned, 35 minutes.

3 large potatoes, peeled
2 tablespoons butter, room temperature
¼ cup warm milk
1 tablespoon olive oil
1 onion, chopped
1 pound ground turkey
1 large carrot, shredded
1 (4.5 ounce) can sliced mushrooms
1 tablespoon chopped fresh parsley
¼ teaspoon dried thyme
1 clove garlic, minced
1 teaspoon chicken bouillon powder
1 tablespoon all-purpose flour

Steps:

  • Boil potatoes until tender, 15 to 20 minutes. While potatoes are cooking, gather other ingredients.
  • Mash potatoes with butter and milk. Season with salt and pepper to taste. Set aside.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a skillet over medium heat; stir in onion. Saute onion until it has softened and turned translucent, about 5 minutes. Stir in ground turkey, carrot, mushrooms, parsley, thyme, garlic, and chicken bouillon. Cook and stir until meat is broken up and cooked through. Add salt and pepper to taste. Stir in flour and cook for 1 minute more.
  • Transfer meat mixture to a deep dish pie pan or casserole dish. Spread mashed potatoes over meat, and swirl with a fork.

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the vegetable oil in a large cast-iron skillet over medium-high heat until very hot. Add the onions and cook until just starting to soften, about 4 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the ground turkey and then sprinkle in the salt, paprika and garlic powder. I use onion powder and garlic powder because I don't like the texture of cooked onions and garlic in my food. However, I'm sure the real thing would be good for those who prefer. I use the pre-made mashed potatoes that are usually found near the packaged meats for added ease.

1/2 teaspoon garlic powder
1 teaspoon onion powder
1 lb ground turkey
1 (15 ounce) can corn, drained
1 (14 ounce) can quartered artichoke hearts, drained and rinsed
1 (14 1/2 ounce) can turkey gravy
2 cups instant mashed potatoes
1/2 cup shredded cheddar cheese

Steps:

  • Cook the ground turkey, onion powder and garlic powder in the olive oil until done. While the turkey is cooking, prepare the mashed potatoes according to the directions.
  • Lightly spray an 8 x 8 dish. Pour the cooked turkey into the dish.

A dear friend from London gave me this recipe and a bit of good English advice: The key to great shepherd's pie is the ketchup. So taste the turkey mixture before adding it to the baking dish and add another spoonful or two of ketchup if desired. The chili powder gives good flavor but no heat, so don't let it scare you.

Vegetable oil or cooking spray, for the baking dish
2 pounds russet potatoes, peeled and cut into small cubes
Kosher salt
1/2 cup buttermilk
Ground black pepper
2 pounds ground turkey or beef
1 large yellow onion, finely chopped
2 medium carrots, cut into 1/2-inch pieces
2 celery ribs, cut into 1/2-inch pieces
1 garlic clove, minced
1 14 1/2-ounce can whole tomatoes with juice, chopped
1/4 cup ketchup
1 tablespoon chili powder
1/2 cup grated Cheddar cheese (about 2 ounces)

Steps:

  • Preheat the oven to 350°F. Lightly brush or spray a 9 × 13-inch baking dish with vegetable oil. Set aside.
  • Place the potatoes in a large saucepan with enough lightly salted water to cover by 1 inch. Bring to a boil over medium-high heat and simmer until the potatoes are tender when pierced with a sharp knife, about 15 minutes. Drain and return the potatoes to the saucepan.
