This homemade pumpkin spice creamer is jam-packed with warming fall spices and contains easy ingredients you probably have on hand. It puts a little something special in every cup of joe!

1/3 cup pure pumpkin puree (canned pumpkin puree) (not pumpkin pie filling)
2 teaspoons pumpkin pie spice
2 cups coffee cream (18% milk fat) (or your favourite non-dairy coffee creamer)
4 tablespoons maple syrup (or to taste)
1.5 teaspoons pure vanilla extract

Steps:

  • In a bowl, whisk together the pumpkin puree with pumpkin spice. Set aside.
  • Add coffee cream to a heavy-bottomed saucepan and whisk in the pumpkin puree mixture, maple syrup and pure vanilla extract until well combined. Place the saucepan over medium heat.
  • Heat and warm through for 8 to 10 minutes, whisking every so often, until it starts to bubble around the edges.
  • Allow to cool slightly. Pour into a storage jar, cover and store in the fridge. Shake before using. The creamer should last as long as the best-by date of your non-dairy or dairy. Enjoy!

¼ cup pumpkin puree
2 tsp pumpkin pie spice
4 tbsp packed light brown sugar
1 cup milk
1 cup heavy cream (or half-and-half)

Steps:

  • Put the pumpkin pie spice in a small saucepan and let them toast on medium heat for 1 minute. Don't leave them unattended, and remove them from heat immediately if they start to burn.
  • After 1 minute, add the pumpkin puree and brown sugar. Whisk the ingredients together until they are well-mixed-heat for about 30 seconds.
  • After 30 seconds, remove from heat and add the milk and cream. You can substitute the heavy cream for half-and-half if you want to make a low-fat creamer. Whisk vigorously until the mixture has a smooth texture.
  • Pour the mixture into a heat-proof container. We prefer to use glass since it's easy to clean and won't hold any flavors or scents.
  • Let the mixture sit until room temperature, cover with a lid, and put it in the refrigerator.
  • This makes enough creamer for about 5-6 coffee drinks and will keep for up to 5 days.

Steps:

  • Whisk 4 ounces cream, maple syrup, pumpkin puree, pumpkin pie spice, and vanilla extract together in a microwave-safe bowl. Heat pumpkin mixture in the microwave in 30-second intervals, stirring between intervals, until heated through and completely blended, 1 to 3 minutes.
  • Pour sweetened condensed milk, remaining 10 ounces cream, and pumpkin mixture into a container, cover the container with a lid, and shake until completely mixed. Store in the refrigerator.

4 ounces cream cheese, at room temperature
1 (15-ounce) can pumpkin puree
1/3 cup heavy whipping cream
1/2 cup light brown sugar
1 teaspoon pumpkin pie spice
3 large eggs
1 (9-inch) frozen pie crust shell, removed from foil tin and placed in glass pie pan
1 cup heavy whipping cream
3 tablespoons brown sugar
1/2 teaspoon pumpkin pie spice

Steps:

  • Preheat the oven to 375 degrees F and arrange a rack in the bottom third of the oven.
  • In a medium bowl, combine the cream cheese, pumpkin puree, cream, brown sugar and pumpkin pie spice. Using electric hand mixer, add the eggs, 1 at a time incorporating completely between each addition.
  • Pour the filling into the pie shell and bake on a sheet tray until the filling is mostly set and the crust has browned, about 50 to 60 minutes. The center will still look slightly loose. Remove from the oven and cool to room temperature.
  • For Whipped Cream:
  • In a chilled bowl, beat the heavy cream with a hand mixer until beginning to thicken. Add the brown sugar and pumpkin pie spice and continue to beat until soft peaks form. Spread the whipped cream over the pie and serve immediately or hold in the refrigerator for up to 2 hours before serving. .
