Easy pulled chicken sandwiches topped with a sweet and tangy cabbage slaw. This healthy slow cooker pulled chicken sandwich recipe is is perfect for BBQ's, potlucks, or a delicious weeknight dinner all year round! Try the healthy BBQ pulled chicken on a bun, in lettuce wraps, on salads and more.

For the chicken:
1 ½ pound boneless skinless chicken thighs
½ cup ketchup
1/2 cup low sugar bbq sauce (I love Stubb's Spicy BBQ sauce)
¼ cup water or chicken broth
½ tablespoon Worcestershire sauce
½ tablespoon apple cider vinegar
1 teaspoon yellow mustard
1/2 teaspoon cumin
⅛ teaspoon cayenne pepper
For the slaw:
1/2 cup shredded carrots
1/2 cup shredded red cabbage
1/4 cup chopped cilantro
1 tablespoon apple cider vinegar
1/2 tablespoon toasted sesame oil
1 teaspoon pure maple syrup
Freshly ground salt and pepper
For serving:
4 whole grain or gluten free seedy hamburger buns

Steps:

  • Add ketchup, bbq sauce, water, worcestershire, apple cider vinegar, yellow mustard, cumin and cayenne pepper to the slow cooker and stir to combine.
  • Place chicken thighs on top and flip over to coat the chicken thighs with the sauce. Cook on low for 6 to 7 hours or on high for 3 hours.
  • Once done, shred chicken and place back in the slow cooker and stir with the sauce. Serve immediately or turn slow cooker to the warm setting and serve later.
  • Make the slaw while the chicken is cooking: In a medium bowl combine carrots, cabbage, cilantro, apple cider vinegar, maple syrup, sesame oil and salt and pepper. Set aside to marinate until you are ready to serve.
  • Once ready to serve, use a slotted spoon to add chicken to bun, top with slaw and remaining bun. You can also serve these with sliced cheese if you prefer. Serves 4.

1 pint apple cider or apple juice
1/2 cup ketchup
2 tablespoons plus 1 teaspoon cider vinegar
1 tablespoon light brown sugar, packed
1/2 teaspoon granulated garlic
1/4 teaspoon dry mustard
1/8 teaspoon ground cinnamon
RUB:
2 teaspoons paprika
1 teaspoon granulated garlic
1/2 teaspoon kosher salt
1/4 teaspoon chipotle chile powder
2 tablespoons extra-virgin olive oil
4 (10 to 12-ounces each) whole chicken legs, skin removed
SLAW:
4 cups coleslaw blend
1/3 cup mayonnaise
2 tablespoons apple cider or apple juice
2 tablespoons cider vinegar
1 teaspoon granulated sugar
1/4 teaspoon freshly ground black pepper
6 hamburger buns, split
Bread-and-butter pickle chips (optional)

Steps:

  • In a medium saucepan over medium-high heat, bring the apple cider to a boil and boil until it has reduced to 3/4 cup, 10 to 12 minutes. Stir in the remaining sauce ingredients and return to a simmer. Reduce the heat to medium and continue simmering the sauce until it is slightly thickened, 8 to 10 minutes, stirring occasionally. Remove the saucepan from the heat and set aside. In a small bowl combine the rub ingredients. Stir in the oil to make a wet rub. Brush the chicken legs evenly on both sides with the wet rub. Allow the chicken legs to stand at room temperature for 20 minutes before grilling. Prepare the grill for direct and indirect cooking over medium heat (350°F to 450°F). Meanwhile, in a medium bowl combine the slaw ingredients and mix well. Set aside. Brush the cooking grates clean. Grill the chicken legs over indirect medium heat, with the lid closed as much as possible, until the juices run clear and the meat is no longer pink at the bone, 50 minutes to 1 hour, turning once. Remove the chicken legs from the grill, transfer to a rimmed baking sheet, and let rest until cool enough to handle, about 10 minutes. Toast the buns, cut side down, over direct medium heat, with the lid closed, for about 1 minute. Using two forks or your fingers, pull the chicken apart into shreds. Add the chicken to the saucepan with the sauce and heat over medium heat until hot, 2 to 3 minutes. Pile the chicken on the buns and top with coleslaw. Serve with bread-and-butter pickle chips, if desired.

2 skin-on, bone-in chicken thighs
2 bay leaves
1 small carrot, coarsely chopped
1 small onion, quartered
1/2 orange, sliced
Salt
1 cup organic ketchup
2 tablespoons Dijon mustard
2 tablespoons dark brown sugar
2 tablespoons maple syrup
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 teaspoon coarsely ground pepper
2 shots of bourbon
2 large cloves garlic, finely chopped
Juice of 1/2 orange
1/3 cup vegetable oil or olive oil
3 tablespoons cider vinegar
1 tablespoon superfine sugar
About 1 1/2 teaspoons sea salt or kosher salt
Juice of 1 lemon
1/2 red onion, grated
Salt and freshly ground pepper
1/2 pound cabbage (red, green or a mix), shredded
1 large green apple, peeled and coarsely grated
Brioche rolls, split
Bread-and-butter pickles, for topping

Steps:

  • For the chicken: Place the chicken breasts and thighs in a pot with the bay leaves, carrot, onion, orange and some salt. Cover with water, then cover the pot and bring to a boil. Reduce the heat and cook at a low rolling boil for 20 minutes. Remove the chicken to a cutting board. Strain the poaching liquid, then return to the pot and boil for a few minutes to reduce it slightly. Remove the skin and bones from the chicken and shred the meat.
  • For the BBQ sauce: Meanwhile, combine the ketchup, mustard, brown sugar, maple syrup, vinegar, Worcestershire sauce, pepper, bourbon, garlic and orange juice in a small pot. Simmer over medium-low heat, stirring occasionally, about 20 minutes.
  • For the slaw: Whisk together the oil, vinegar, sugar, salt, lemon juice and onions. Season with salt and some pepper. Add the cabbage and apples and toss to combine.
  • Add 1 cup poaching liquid to the BBQ sauce, then add the chicken, stirring and shredding it with 2 forks. Pile the chicken on the rolls and top with pickles and slaw.

1/4 cup your favorite hot sauce or wing sauce, such as Tabasco Buffalo
2 tablespoons ranch dressing mix, from packet, such as Hidden Valley
1 rotisserie chicken, skin removed, meat pulled
One 2-pound green cabbage, thinly sliced
2 to 3 shredded carrots (about 1 cup)
2 ears corn, kernels removed, quickly sauteed in a pan
1 bunch green onions, white and light green parts only, thinly sliced
1/4 cup finely chopped chives
1 small red bell pepper, seeded and small diced
1/3 cup red wine vinegar
2 tablespoons honey
2 tablespoons whole-grain Dijon mustard
Zest and juice of 1 lime
Pinch crushed red pepper flakes
1/2 teaspoon hot sauce, such as Tabasco
Kosher salt and freshly ground black pepper

Steps:

  • For the chicken: Mix together the mayonnaise, sour cream, hot sauce and ranch dressing mix in a large bowl. Add the shredded chicken and toss to coat.
  • For the slaw: In a large mixing bowl, combine the cabbage, carrots, corn, green onions, chives and red pepper. In a small mixing bowl, whisk together the vinegar, honey, Dijon, lime zest and juice, red pepper flakes, hot sauce and some salt and pepper. Slowly add the olive oil, whisking until emulsified. Add half of the dressing to the slaw and toss well¿refrigerate and reserve the remaining dressing for another use.
  • To each slider bun, add a heaping portion of the pulled chicken and top with a scoop of the slaw.

1/4 red onion, thinly sliced
Kosher salt
1/4 head of savoy cabbage, cored, thinly sliced
3 tablespoons white wine vinegar
4 tablespoons (or more) olive oil, divided
Freshly ground black pepper
4 skinless, boneless chicken thighs
1/4 cup cornstarch
2 large eggs
2 tablespoons Dijon mustard
1 teaspoon cayenne pepper
2 cups panko (Japanese breadcrumbs)
1/3 cup mayonnaise
8 slices white Pullman bread, toasted

Steps:

  • Toss red onion and a pinch of salt in a small bowl to coat; let sit 5 minutes to allow onion to soften slightly. Rinse under running water, then shake off excess water. Place onion in a medium bowl and add cabbage, vinegar, and 2 tablespoons oil. Toss to combine and season slaw with salt and pepper.
  • Pound chicken thighs with a meat mallet or a rolling pin between 2 pieces of plastic wrap to 1/4" thick. Place cornstarch in a shallow bowl. Whisk eggs, mustard, and cayenne in another shallow bowl.
  • Place panko in a third shallow bowl. Working with 2 thighs at a time, season chicken with salt and pepper. Dredge in cornstarch, shaking off excess. Dip in egg mixture, letting excess drip back into bowl, then coat in panko, shaking off excess.
  • Heat remaining 2 tablespoons oil in a large skillet over medium-high. Working in batches and adding more oil to skillet between batches if needed, cook chicken thighs until golden brown and cooked through, about 2 minutes per side. Transfer to paper towels to drain.
  • Spread mayo over one side of bread slices and build sandwiches with cutlets and slaw.

  • Slaw can be made 1 day ahead. Cover and chill.
