PRESSURE COOKER CRANBERRY-TURKEY MEATBALLS

Steps:
- Mix first 5 ingredients just until blended; roll into 50 (1-inch) meatballs.
- Combine remaining ingredients in electric pressure cooker sprayed with cooking spray.
- Place half the meatballs in single layer on bottom of pressure cooker; top with second layer of meatballs. Close and lock lid.
- Cook 8 min. using MANUAL/HIGH PRESSURE COOK setting. When timer goes off, press CANCEL, then use Quick Pressure Release to release steam. Remove lid. Gently stir meatballs to evenly coat meatballs with sauce.

CRANBERRY TURKEY MEATBALLS

- Place a rack in the center of your oven and preheat the oven to 425 degrees F. Place an ovenproof baking rack on top of a large, rimmed baking sheet, then lightly coat with cooking spray. Set aside.
- In a large mixing bowl, combine the turkey, breadcrumbs, olive oil, egg, apple, sage, garlic powder, onion powder, salt, and pepper. With your hands or two forks, lightly mix to combine, being careful not to compact the meat.
- Roll the mixture into 1 1/2 to 2-inch balls, using a small scoop to help portion as desired.
- Arrange the meatballs on top of the prepared baking rack. Bake in the oven for 12-14 minutes, just until cooked through.
- Meanwhile, prepare the sauce. In a saucepan large enough to hold the meatballs, combine the cranberries, applesauce, maple syrup, orange zest, and orange juice. Heat over medium to warm through.
- Add the cooked meatballs to the sauce, then spoon the sauce over gently to coat. Transfer to a serving platter to enjoy immediately or place in a slow cooker set to the lowest heat to keep warm. Garnish with fresh parsley as desired and serve.

- In medium bowl, mix all ingredients except cranberry sauce and water. Shape mixture into about 45 (1-inch) balls.
- Heat 10-inch nonstick skillet over medium heat. Add meatballs; cover and cook 8 to 10 minutes, turning occasionally, until thermometer inserted in center of meatballs reads 165°F.
- Gently stir in cranberry sauce and water. Reduce heat to medium-low; cook 3 to 4 minutes, stirring frequently, until cranberry sauce is melted and smooth.

- In mixing bowl mix ground turkey, dressing, parsley, salt & pepper, and egg . Form into golf ball size meatballs. Refrigerate for at least 30 minutes.

- Make Turkey Meatballs: In a large mixing bowl, place all the dry ingredients and mix in the wet ingredients. Use your hands to thoroughly mix the ground turkey mixture. Roll and form the meatballs. It yields 14 – 16 meatballs depending on the meatballs’ size.
- Test Seasoning: Cook a small piece of turkey meatball mixture in a medium-high heat skillet and taste-test the seasoning. Add more kosher salt to the meatball mixture if it’s under-seasoned.
- Brown Turkey Meatballs: Brown meatballs over medium-high heat in a skillet with 1 tbsp of olive oil. About 45 seconds - 1 minute per side until brown (See Notes).
- Deglaze Skillet: Set aside the meatballs. Pour 100ml unsalted chicken stock. Scrub all the brown bits off the bottom of the skillet with a wooden spoon. Set aside and keep the brown bits (they are very flavorful).
