I found this recipe on the back of a can of sweet potatoes. Everyone seemed to really like them... even those who don't usually like Yams.

1 (29 ounce) can cut sweet potatoes in light syrup, drained
1/3 cup chopped pecans
1/3 cup coconut
1/3 cup firmly packed brown sugar
3 tablespoons flour
3 tablespoons margarine or 3 tablespoons butter, melted

Steps:

  • Heat oven to 350 degrees.
  • Place drained yams in an ungreased 1/2 quart casserole or baking dish.
  • In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams.
  • Bake at 350 for 35 to 40 minutes or until bubbly.

4 cups mashed sweet potatoes
½ cup white sugar
2 tablespoons vanilla extract
4 eggs, beaten
½ pint heavy cream
¼ pound butter
1 cup packed brown sugar
½ cup all-purpose flour
1 ¼ cups chopped pecans

Steps:

  • Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
  • Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
  • Bake for 30 minutes in the preheated oven.

I make these every Thanksgiving. So far,it's the best yam casserole I've ever tasted.

Number Of Ingredients 15

two cans (2 lbs, 8 oz. each) yams, drained, or 4 pounds cooked, peeled and sliced fresh yams or sweet potatoes
2/3 cup orange juice
1 tbsp. grated orange rind
5 tbsp. brandy
2 t. salt
freshly ground pepper to taste
1 t. ground ginger
4 tbsp. butter or margarine, melted (1/2 stick)
1/3 cup light or golden brown sugar, packed
3 egg yolks
PRALINE TOPPING:
2/3 cup light or golden brown sugar, packed
1/4 lb. (1 stick) butter or margarine, melted
1 cup chopped pecans, about 4 oz
1 t. ground cinnamon

Steps:

  • 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. Thanks to the Shefters, my family, friends and classes have been loving it ever since. The yams are fluffy and creamy, and the praline topping is sweet, nutty, crunchy, and beautifully glazed. If you want more of this delectable casserole, double the recipe but make it in two separate casseroles so that the proportions of the filling to the topping remains correct.   • Combine yams, sugar, salt, eggs, vanilla, rum (if using), and milk. Whip until smooth. Fold in raisins if using. Spoon mixture into a greased 2 quart casserole.
  • Combine brown sugar, pecans, flour and butter. Sprinkle over yam mixture.
  • Bake 25-30 minutes or until thoroughly heated through.

0.5 (10 ounce) bag miniature marshmallows

  • Preheat oven to 350. Drain yams.

  • Mix togehter brown sugar, flour, and butter. Sprinkle on top of yams.
  • Top with marshmellows.

I cut this recipe out of the Denver Rocky Mountain News Food Section 30-some years ago. I've made it every Thanksgiving and Christmas since. It's quick and simple to prepare (right on the stove), and a nice addition to a big dinner.

6 tablespoons brown sugar
1/2 cup heavy cream
2 tablespoons butter or 2 tablespoons oleo
1/2 cup pecans, chopped
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 (15 ounce) can yams (Bruce's brand)

Steps:

  • Heat yams, in their liquid, till hot.
  • Keep hot on low heat while you mix up Praline sauce.
  • Mix together the brown sugar, heavy cream, butter/oleo, pecans, salt, cinnamon, and nutmeg in a saucepan.
  • Stir over medium heat till mixture comes to a gentle boil.
  • Keep hot on low burner while you drain liquid off yams.
  • Place yams in serving bowl.
  • Pour hot Praline sauce over yams.
  • Serve and enjoy!

1/2 cup coconut
1/2 cup butter, melted
1/2 cup flour

  • Mix the brown sugar, butter, and flour together until smooth.
  • Slowly add the yam juice, continuing to blend.
  • Add the coconut and chopped pecans.
  • Mix.
