2 quarts water
2 tablespoons kosher salt
1/4 cup brown sugar
2 garlic cloves, smashed with the side of a large knife
4 sprigs fresh thyme
6 chicken legs and thighs, still connected, bone in, skin on, about 10 ounces each
1 slice bacon
1 bunch fresh thyme
Extra-virgin olive oil
1/2 onion, chopped
2 garlic cloves, chopped
2 cups ketchup
1/4 cup brown sugar
1/4 cup molasses
2 tablespoons red or white wine vinegar
1 tablespoon dry mustard
1 teaspoon ground cumin
1 teaspoon paprika or smoked paprika if available
Freshly ground black pepper

Steps:

  • For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (if you've only got 15 minutes, that's fine) to allow the salt and seasonings to penetrate the chicken.
  • Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme and cook slowly 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly without coloring for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving along side the chicken at the table. The rest of the barbecue sauce will be used for basing the legs.
  • Preheat oven 375 degrees F.
  • Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry on paper towels. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce.

1-1/2 cups chili sauce
1/2 cup red wine vinegar
4-1/2 teaspoons prepared horseradish
2 garlic cloves, minced
6 bone-in chicken breast halves (9 ounces each)

Steps:

  • In a small bowl, combine the chili sauce, vinegar, horseradish and garlic. Pour 1 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 1 hour. Cover and refrigerate remaining marinade., Prepare grill for indirect heat, using a drip pan. Lightly oil the grill rack. , Place chicken skin side down over drip pan and grill, covered, over indirect medium heat for 20-25 minutes on each side or until a thermometer reads 170°, basting occasionally with reserved marinade.

These pulled chicken puffs are fantastic. Using store-bought pulled chicken and sheets of puff pastry means you can make them super fast. It's almost like a pulled chicken sloppy joe inside flaky puff pastry. These make a great meal or cut the puff pastry into smaller circles for a party appetizer. Yum!

1 Tbsp olive oil
1 box Lloyds Pulled Chicken, chopped (12 oz.)
1/3 c onion, chopped
1/3 c green bell pepper, chopped
1 jalapeno pepper, diced
3 to 4 Tbsp Carolina BBQ Sauce by Bull's Eye
2 puff pastry sheets, thawed
1 egg, beaten
2 tsp water

Steps:

  • 1. In a skillet add the oil and heat over medium-low.
  • 2. Preheat oven to 350.
  • 3. In the skillet add all ingredients except puff pastry sheets, egg, and water. Cook 10 minutes.
  • 4. Unfold pastry sheets. Using a large biscuit cutter, cut 20 circles.
  • 5. Spray a cookie sheet with cooking oil. Lay 10 circles on sheet.
  • 6. Using a tablespoon spoon chicken mixture into circles on cookie sheet. Roll the other 10 circles out with a rolling pin to flatten. Take the flattened circles and place them on top of the chicken.
  • 7. Use a fork and press around the circles to seal.
  • 8. Combine egg with the water. Brush on top of circles.
  • 9. Bake 15 to 20 minutes.
  • 10. If you have any extra chicken it will be awesome on your favorite bread. Or, you can buy extra puff pastry sheets to make more puffs.

4 skinless, boneless chicken breasts (about 8 ounces each)
3 slices bacon
2 tablespoons unsalted butter, melted
1 large buttermilk biscuit, crumbled (about 1 cup)
2/3 cup shredded sharp cheddar cheese
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
Vegetable oil, for the grill
1/4 cup barbecue sauce

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the filling: Cook the bacon in a skillet until crisp; crumble. Mix 2 tablespoons bacon drippings with the melted butter in a bowl. Combine the buttermilk biscuit, bacon, half of the drippings mixture, the cheese, chives and parsley in a separate bowl. Stir in 2 to 3 tablespoons water; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with the remaining drippings mixture. Spoon the filling over the top, leaving a 1-inch border around the edges. Roll up the chicken toward the pointy end; tie with 3 pieces of kitchen twine.
  • Brush the grill grates with vegetable oil. Grill the chicken breasts, turning, until cooked through, 18 to 20 minutes, brushing with the barbecue sauce during the last 2 minutes of cooking. Transfer to a cutting board and let rest 5 minutes, then remove the twine and slice.

The perfect partner for grilled vegetables or all kinds of potatoes, this chicken is equally delicious chopped and served cold on salads or grain or noodle bowls.

Four 6-ounce boneless, skinless chicken breasts
1 cup plain, full-fat yogurt
Zest and juice of 1 lemon
4 scallions, whites coarsely chopped and greens reserved for serving
2 cloves garlic
2 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Working with one chicken breast at a time, place the chicken between 2 pieces of plastic wrap or parchment paper. Gently pound with a meat mallet to 1/2 inch thick then transfer to a large bowl.
  • Combine the yogurt, lemon zest, lemon juice, scallion whites, garlic, olive oil, 2 teaspoons salt and a few grinds of black pepper to a food processor and process until smooth. Pour the marinade over the chicken. Turn the chicken a few times to coat then submerge in the marinade. Cover the bowl with a clean dish towel and refrigerate for at least 30 minutes but no more than 3 hours.
  • Meanwhile, heat a grill to medium.
  • Remove the chicken from the marinade to a large platter, letting any excess marinade drip back into the bowl. Season the chicken with 1/2 teaspoon salt and a few grinds of black pepper. Grill, covered, flipping once halfway through, until a digital thermometer registers 165 degrees F, 4 to 5 minutes per side. Let rest 5 minutes before serving.
  • Thinly slice the scallion greens on a bias and sprinkle over the chicken. Refrigerate in an airtight container for up to 5 days.

2 tablespoons sweet paprika
2 tablespoons garlic powder
1 tablespoon fresh ground black pepper
6 bone-in chicken breast halves, with skin
8 tablespoons unsalted butter, melted
barbecue sauce, your favorite
2 cups wood chips, soaked for 1 hour in water to cover, then drained (preferably apple)

Steps:

  • Make the rub: combine celery salt, paprika, garlic powder, and pepper in a small bowl; stir to mix (using you fingers works well).
  • Trim any sinews or excess fat off the chicken breasts and discard.
  • Rinse breasts under cold running water, then drain and blot dry with paper towels.
  • Place them in a baking dish; sprinkle with rub all over the chicken breasts on both sides, patting it onto the meat with your fingertips; let the breasts cure in the refrigerator, covered, for 30 minutes to 1 hour.
  • Set up grill for direct grilling using a two-zone fire and preheat one zone to medium and the other to low (two-zone=preheat half or two out of three burners to medium and the rest on low).
  • For gas grill-place all the wood chips in the smoker box and run the grill on high until you see smoke, then reduce heat to medium.
  • When ready to cook, brush and oil the grill grate; place the chicken breasts, skin side down, over the medium zone of the grill; grill until golden brown and cooked through, 6-8 minutes per side or until done.
  • Lightly baste the chicken breasts with the melted butter as they cook, but don't start until each breast has cooked for 3 minutes on each side.
  • Move the chicken over to the low zone of the grill if the dripping fat causes flare-ups.
  • Transfer the grilled chicken breasts to a platter and drizzle any remaining melted butter over them.
  • Serve with barbecue sauce on the side.

I made this recipe up when I didn't have enough time to run to the store. I just used leftover shredded barbeque chicken, some puff pastry, and other ingredients that I had in my kitchen. These were a hit at the party and the first appetizer to go!

1 tablespoon vegetable oil, or as needed
1 sheet frozen puff pastry, thawed
1 (4 ounce) package cream cheese, cut into 1/2-inch squares
1 cup shredded cooked chicken
¼ cup barbeque sauce
½ teaspoon red pepper flakes, or to taste
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a miniature muffin tin.
  • Cut puff pastry along the creases into 3 separate rectangles. Place onto a lightly floured surface. Roll 1 rectangle to 1/8-inch thickness using a lightly floured rolling pin. Cut pastry into 8 circles about 2 1/2 inches in diameter. Repeat with the other 2 rectangles.
  • Press pastry circles into the greased muffin cups. Place 1 square of cream cheese in the bottom of each cup.
