One Pot Chicken Tetrazzini image

Rich and comforting, this chicken tetrazzini recipe has juicy shredded chicken, beefy baby portobello mushrooms, and a creamy sauce!

1/2 cup plus 1 Tbsp butter, melted
8 oz sliced cremini (baby portobello) mushrooms
1 yellow onion, diced
4 cloves garlic, minced
1 Tbsp fresh thyme, minced ((or 1 tsp dried thyme leaves))
1/2 tsp kosher salt
1/4 tsp black pepper
1/3 cup all-purpose flour
3 cups chicken stock
1 cup heavy cream
16 oz egg noodles, cooked according to package directions
3 cups cooked, shredded chicken ((see notes below for a fresh chicken breast option))
2 cups frozen peas
1 1/2 cups shredded Parmesan cheese
1/3 cup Panko breadcrumbs

Steps:

  • Preheat oven to 350 F degrees.
  • Heat a large oven safe pot (like cast iron) over MED heat. Add 1/2 cup butter and melt. Add mushrooms and onion and cook, stirring occasionally, until tender, about 5-6 minutes. Add garlic and cook an additional minute.
  • Stir in thyme, salt, and pepper, then add flour, stirring to coat completely.
  • Add in chicken stock and heavy cream, stirring or whisking frequently to remove any flour lumps. Cook, stirring often, about 8-10 minutes, until thickened.
  • Stir in prepared egg noodles, shredded chicken, frozen peas, and Parmesan cheese.
  • In a small mixing bowl, combine remaining 1 Tbsp melted butter with panko breadcrumbs, then sprinkle over top of the dish. Season with additional black pepper if desired, then bake, uncovered, for 35-45 minutes until golden brown and bubbly.

1 pound spaghetti, broken into pieces
3 (10.75 ounce) cans condensed cream of mushroom soup
12 ounces shredded Cheddar cheese
6 cups shredded boiled chicken breast meat
1 pound sauteed mushrooms
1 (4 ounce) jar sliced pimento peppers, drained
2 cups reserved chicken broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of salted water to a boil. Add uncooked spaghetti (broken into thirds) to the pot and cook for 8 to 10 minutes or until al dente. Drain and set aside.
  • In a large saucepan, heat soup over low heat. Add shredded cheese (reserve some for topping) and stir together. Then add the cooked shredded chicken, mushrooms, pimento peppers and cooked spaghetti and stir all together. Add enough of the reserved broth to make it 'sloppy' and mix all together.
  • Pour mixture into a 9x13 inch baking dish. Sprinkle reserved shredded cheese on top and bake in the preheated oven for 25 to 35 minutes or until bubbly.

This is the number one most requested dish at my house. Even my picky pre-teen daughters love this. Legend has it that this dish is named after a nineteenth century opera singer, Luisa Tetrazzini. This dish MUST be made a day in advance.

Number Of Ingredients 13

4 boneless chicken breasts
1 teaspoon onion salt
1 1/2 teaspoons celery salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
6 tablespoons butter
1/2 teaspoon salt
2 tablespoons flour
1 cup whipping cream
2/3 cup parmesan cheese
1 tablespoon lemon juice
1/4 teaspoon paprika
1/2 lb uncooked spaghetti

Steps:

  • Cook chicken in lots of water until done. Save the stock!
  • Tear chicken into pieces and toss with onion salt and celery salt. Set aside.
  • Cook 1/2 lb of spaghetti per label directions in the reserved chicken stock. (add more water as needed).
  • Drain spaghetti and place in 9 x 13 baking dish.
  • In a skillet heat 3 tbsp butter,1 tbsp lemon juice and 1/2 tsp salt until melted. Pour this mixture over cooked spaghetti and toss lightly.
  • In same skillet slowly heat another 3 tbsp butter, 2 tbsp flour, 1/2 tsp pepper, 1/8 tsp nutmeg and 1/4 tsp paprika until smooth and thick. Remove from heat.
  • Add whipping cream to above mixture and stir.
  • Add the above to the chicken and toss.
  • Spoon chicken evenly over spaghetti.
  • Cover the chicken and spaghetti with 2/3 cup of grated Parmesan cheese.
  • Cover and refrigerate overnight.
  • Cook uncovered for 25 minutes in a 400 degree oven and enjoy!

2 tablespoons olive oil
4 boneless skinless chicken breasts
2 1/4 teaspoons salt
1 1/4 teaspoons fresh ground black pepper
1 lb white mushroom, sliced
1 large onion, finely chopped
5 garlic cloves, minced
1 tablespoon fresh thyme leave, chopped
1/2 cup dry white wine
1/3 cup all-purpose flour
4 cups whole milk, room temperature
1 cup heavy whipping cream, room temperature
1 cup chicken broth
1/8 teaspoon ground nutmeg
12 ounces linguine
3/4 cup frozen peas
1/4 cup fresh Italian parsley, chopped
1 cup parmesan cheese, grated
1/4 cup Italian seasoned breadcrumbs, dried

Steps:

  • Preheat the oven to 450°F.
  • Spread 1 tablespoon of butter over a 13 by 9 by 2-inch baking dish.
  • Melt 1 tablespoon each of butter and oil in a deep large nonstick frying pan over medium-high heat.
  • Sprinkle the chicken with 1/2 teaspoon each of salt and pepper.
  • Add the chicken to the hot pan and cook until pale golden and just cooked through, about 4 minutes per side.
  • Transfer the chicken to a plate to cool slightly.
  • Coarsely shred the chicken into bite-size pieces and into a large bowl.
  • Meanwhile, add 1 tablespoon each of butter and oil to the same pan.
  • Add the mushrooms and saute over medium-high heat until the liquid from the mushrooms evaporates and the mushrooms become pale golden, about 12 minutes.
  • Add the onion, garlic, and thyme, and saute until the onion is translucent, about 8 minutes.
  • Add the wine and simmer until it evaporates, about 2 minutes.
  • Transfer the mushroom mixture to the bowl with the chicken.
  • Melt 3 more tablespoons butter in the same pan over medium-low heat.
  • Add the flour and whisk for 2 minutes.
  • Whisk in the milk, cream, broth, nutmeg, remaining 1 3/4 teaspoons salt, and remaining 3/4 teaspoon pepper.
  • Increase the heat to high.
  • Cover and bring to a boil.
  • Simmer, uncovered, until the sauce thickens slightly, whisking often, about 10 minutes.
  • Bring a large pot of salted water to a boil.
  • Add the linguine and cook until it is tender but still firm to the bite, stirring occasionally, about 9 minutes. Drain.
  • Add the linguine, sauce, peas, and parsley to the chicken mixture.
  • Toss until the sauce coats the pasta and the mixture is well blended.
  • Transfer the pasta mixture to the prepared baking dish.
  • Stir the cheese and breadcrumbs in a small bowl to blend.
  • Sprinkle the cheese mixture over the pasta. Dot with the remaining 3 tablespoons of butter.
  • Bake, uncovered, until golden brown on top and the sauce bubbles, about 25 minutes.

My mom has made this for our family of seven as long as I can remember. It goes wonderfully with sweet potato muffins! Makes a huge batch! It would take us a week to eat all of it. Nowdays I usually make one pan, freeze one pan, and give one pan away! Preparation and cooking time does not include chicken.

1 1/2 cups mayonnaise
3 (10 1/2 ounce) cans cream of celery soup (diluted according to can)
2 cups chicken broth
1/4 cup lemon juice
1/2 cup chopped celery
1/2 cup chopped carrot
1 cup shredded cheddar cheese
1 (10 ounce) box frozen green peas
1/4 cup chopped pimiento
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon hot sauce (don't leave this out!)
1 small onion, chopped
7 cups cooked spaghetti
7 cups cooked chicken breasts
seasoned stuffing mix

Steps:

  • Mix all ingredients, except stuffing mix, in the order listed above.
  • Pour into a LARGE (or several smaller) buttered casserole.
  • Bake at 350 degrees for 45 minutes or more.
  • Halfway through baking, top with stuffing mix.
