- 1. Step 1: Chop onion (not finely).
- 2. Step 2: Melt butter in frying pan.
- 3. Step 3: Add onions saute until soft (not browned), then add garlic and continue to saute.
- 4. Step:4 Add Simply Diced Potatoes and cook as directed on package add shrimp after 8 minutes. Cook dish an additional 6-8 minutes until shrimp is cooked thoroughly.
- 5. You can also add your favorite marinara or spaghetti sauce for a different flair. Not to much that it makes it soupy but enough to coat the dish or sauté some green peppers too.

SHRIMP AND POTATO CAKES

- Lemon aioli or Thousand Island dressing, for serving
- Peel and grate the potatoes into a large bowl. Add all the other ingredients, except the flour and oil, and combine well. Cook's Note: be careful when you add the blackening spice, if you like more or less, adjust accordingly. Refrigerate for 15 minutes for the flavors to meld.
- Remove from refrigerator and slowly add the flour, mixing well.
- Heat a large skillet over medium heat and add the oil. Add tablespoons of the potato mixture to the hot oil, gently pressing down to form cakes. Cook for approximately 2 to 3 minutes on each side. Remove to paper towels to absorb the excess oil. Continue this method until all the potato mixture is used.
- Transfer to a serving platter and serve immediately while hot. Serve with lemon aioli or Thousand Island dressing on the side.

Official Contest Entry: Simply Potatoes 5Fix. This recipe provides the flavor and crunch of fried chicken without all the fat from frying. It can be seasoned simply with just salt and pepper or it can be spiced up with garlic, oregano, thyme, cayenne, or any other combination of seasonings. Grated parmesan cheese also adds a nice, salty, nutty flavor to the chicken. This recipe also works great for crusted pork chops, white, fatty fishes, and ground meats. Cook's note: I like to arrange the coated chicken on a baking rack over my baking sheet. This allows the heat to circulate all around the chicken and prevents the bottom from getting soggy.

- Preheat the oven to 400 degrees. Place the potatoes in a medium sized bowl and spray the potatoes with cooking spray until the potatoes are lightly coated with the spray. Season with salt and pepper.* Arrange the seasoned potatoes in a single layer on a sheet pan. Bake 20-30 minutes until the potatoes are just beginning to show color and becoming crispy at the edges, flipping half way through. Remove the potatoes from the oven, allow them to cool slightly, and place in a shallow dish (like a pie plate). Reduce the oven temperature to 350 degrees.
- Meanwhile, whisk the eggs in a pie plate or shallow dish.
- In a separate pie plate, add the flour and season with salt and pepper.*.
- Pound each chicken breast until it is approximately 3/4 inches thick. Lightly season the breasts with salt and pepper.* Dredge each breast in the flour and then in the egg. Finally, coat each piece with the baked potato shreds, pressing the pieces into the chicken to ensure complete coverage. Place the coated chicken breasts on a baking rack over a baking sheet. Spritz the chicken with cooking spray. Bake at 350 degrees for 20-30 minutes or until the temperature reaches 165 degrees on an instant read thermometer.

- *If additional herbs and spices are being used, they can be added to the potatoes, flour mixture, or they can be sprinkled directly on the chicken. For extra flavor, they can be added at each step.

- Preheat the oven to 400 degrees F (200 degrees C). Scrub potatoes and dry.
- Place potatoes directly on the center oven rack and bake for 1 hour. During the last 20 minutes of baking time, make the sauce.
- Combine 2 cups milk and heavy cream in a microwave-safe container and microwave on high power for 45 seconds; set aside.
- Melt butter in a large nonstick skillet over medium heat until bubbly. Stir in garlic, salt, pepper, and nutmeg and cook, stirring, about 1 minute. Stir in flour and cook, stirring continually, until the flour mixture is bubbly. Stir in hot milk and cream, and cook, stirring continually, until mixture comes to a boil, 3 to 5 minutes.
- Remove from heat and stir in Gruyere and Parmesan cheeses until melted, about 1 minute. If the sauce is too thick, stir in more milk, in 2 tablespoon increments, until sauce reaches the desired consistency.
- To assemble, cut open each potato and gently flake the flesh of each potato with a fork. Place 1/4 of cooked shrimp on top of each potato and cover with sauce. Sprinkle with chopped parsley and serve.

- Preheat oven to 400°.
- Remove potatoes from bag and place in a colander. Rinse and drain well. Using a clean dish towel, place potatoes in towel and wring dry.
- Divide potatoes among 4 ramekins. The ramekins I used were 5 1/2" rounds that were 2" deep. I got around 3/4 cup of potatoes into each ramekin.
- Heat a large skillet over medium heat then add sausage. Cook until done, about 5 minutes.
- Add flour and cook, stirring often, for 2 minutes.
- Add milk slowly, stirring until incorporated. Bring to a boil and cook for 5 minutes, stirring often, until thickened.
- Pour 3/4 cup gravy into each ramekin over the potatoes.
- Crack one egg into each ramekin, on top of the gravy and place into oven and bake for about 20 minutes, or until egg white is set and yolk is still runny.
- Note: Each oven bakes differently. Watch your eggs closely and adjust cooking time if needed.

- Preheat oven to 375°F (190°C).
- In a small bowl, combine the Cajun spice mix ingredients and stir to combine.
- In a baking dish, combine potatoes, corn, 2 garlic cloves, 1 tablespoon of oil, and ½ tablespoon of the cajun spice mix.
- Mix until the vegetables are coated evenly with the spice mix. Place butter on top.

- Preheat oven to 350° degrees. While you're waiting for your oven to heat up, get a large skillet over medium heat and add 2Tbsp of olive oil.
- Once your oil is hot, add potatoes and saute for 10 minutes Remove potatoes from skillet and set to the side. In the same skillet, add the remaining oil. Add shrimp and fresh lemon juice and saute for 6-8 mins until pink and set to the side. In the same skillet add chicken broth for 2 mins just to warm.
