SIMPLE VEGETARIAN LEEK PATTIES
Crisp on the outside with a creamy interior. The trick to a crisp exterior is to remove as much moisture from the cooked leeks as possible, so please don't skip the step after draining. Very mildly flavored. Serve with a dipping sauce of choice, if desired.

Steps:
- Halve leek lengthwise and rinse under running water. Separate the layers to remove any sand. Cut each half down the centre and thinly slice.
- Place leeks in a pot and add enough water so that leeks float but are not covered. Cover and bring to a boil. Reduce heat to a simmer and cook until tender, 25 to 30 minutes. Drain off excess water and return leeks to the pot.
- Return the pot to the stove and simmer until all excess liquid has evaporated, stirring occasionally, 4 to 5 minutes. Transfer leeks to a bowl and add egg, bread crumbs, salt, and pepper. Divide into 4 equal portions.
- Heat enough oil in a nonstick skillet to just cover the bottom. Heat on medium-high heat until oil shimmers. Use wet hands to form each portion into a 3-inch patty.
- Place the patties into the hot skillet and cook for 2 to 3 minutes per side. Remove and place on a paper towel-lined plate. Serve warm.

LEEK, CHEESE & POTATO PASTIES

Steps:
- Cook the potatoes in boiling, salted water for 5-8 mins until tender, but still holding their shape. Meanwhile, melt the butter in a large saucepan. Add the leeks and thyme and soften for 10-12 mins. Drain potatoes and add to the leeks with the mustard and plenty of seasoning. Stir in the cream and leave to cool a little.
- Heat oven to 180C/160C fan/gas 4. On a floured surface, roll out the pastry to the thickness of a £1 coin. Use a side plate or a bowl as a template to cut out 6 x 15cm circles. Mix the cheese with the leek mixture and pile a mound of the mix onto the centre of each pastry circle. Brush around edges with a little egg, then bring edges together and crimp with your fingers to seal.
- Place pasties on a baking tray lined with baking parchment, brush with the remaining egg and bake for 40-45 mins until golden brown. Serve warm or leave to cool.

EASY GREEK POTATO PATTIES WITH CREAMY FETA CHEESE SAUCE

- Wash the potatoes then place them with their skins in a pot with plenty of salted water and cook them until tender. Drain and let them cool slightly. Peel off their skin.
- Place the potatoes in a bowl and mash them with a potato masher or pass them through a potato ricer.
- To the bowl with the potatoes, add the Feta, parsley, mint, nutmeg, salt and pepper and mix well. Taste and adjust the seasoning. Add the egg and mix again. If the mixture is too loose to form patties, add some flour, a tablespoon at a time, until the mixture is solid. Cover and refrigerate for 20 minutes.
- Take the bowl out of the refrigerator and form small patties, about 2½". Place the patties on a large plate.
- In a large, non-stick skillet, heat the olive oil under medium-high heat.
- Flour both sides of the patties lightly and cook in the hot oil until golden brown. Turn and cook the second side too. If they brown too fast, lower the temperature. Add more oil to the skillet as necessary.
- Top with a few sliced green onions and serve warm with some Feta Cheese sauce on the side.
- For the Feta Cheese Sauce: Combine all ingredients in a small food processor and mix until fairly smooth. Cover and refrigerate for at least one hour before serving. The sauce can keep in the fridge for a week and can also be used to top baked potatoes or in a salad dressing.

- Peel and boil potatoes.
- Wash the leeks carefully.
- Dice the white base and part of green base. Parboil in salted water for 5 minutes; drain.
- Mash the potatoes.
- Add the leeks; blend in well.
- Add eggs, salt and pepper.
- Add cheese.
- Heat oil. When sizzling, drop leeks by tablespoonful.
- Fry till golden on each side; drain.

Steps:
- Break garlic bulb open and place in roasting pan. Roast for 20 minutes or until soft. Remove (let cool) and squeeze out garlic flesh.
- Cook sweet potatoes and carrots in large pan of boiling water for 15 minutes until soft. Drain and mash. Mix this with the garlic.
- Add the leeks, feta cheese, Tabasco, cilantro & pepper to the sweet potato mixture.
- Cover and let chill for at least 30 minutes.
- Preheat oven to 375°F Shape mixture into 8 small patties and place on baking sheet.
- Bake for 15-20 minutes until hot.
- Serve with ketchup!

This pie, with its potato crust, hails from a Serbian food magazine, says Medena at www.cafechocolada.blogspot.com/ . A lovely pic of said pie sitting pretty on a springform bottom utterly had me hooked. Now I actually hope we have cold weather until I get home so I can fully appreciate this pie. Thinking this should be very adaptable for whatever cheeses one could have on hand - nice inexpensive way to use up bits.

- First wash, and cook potatoes with their skin. Peel, and mash one immediately, and let the rest (for the filling) cool down.
- Preheat oven to 390°F
- In a bowl with mashed potato, add margarine, flour, baking powder, salt, and pepper, and knead with hands to get a smooth dough. Add half of chopped up leek, knead it in, then transfer the dough to a medium sized spring form pan, spread it around to cover pan bottom with it.
- Peel and slice the remaining potatoes, or chop them up, and place them on top of the dough, along with half of chopped up leek. Sprinkle with 1/4 t sea salt and pepper.
- Mix eggs with sour cream, add a pinch of salt, and feta cheese. Pour this over the potatoes, and place the pie in the oven. Bake for about 40 minutes, depending on the oven.
- Cool a little, then remove the spring form, and serve. Best if eaten right away, as most potato dishes.

- Preheat an oven to 450 degrees F (230 degrees C). Lightly oil a large baking dish.
- Stir the potatoes, garlic, olive oil, water, lemon juice, salt, and pepper together in a bowl until the potatoes are evenly coated; pour into the prepared baking dish.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine olive oil, balsamic vinegar, lemon juice, Greek seasoning, salt, pepper, garlic powder, oregano, and thyme in a large plastic bag or bowl. Add potatoes and shake until potatoes are coated.
- Place into a baking dish that's large enough to accommodate potatoes in a single, snug layer.
